High Protein Peanut Butter Balls

Reviewed: Jul. 20, 2009
Not bad and a good way to stave off a cookie/cake craving. I did skip the flax seed since I didn't have any on hand. I think it would benefit from a few additions -- maybe mini chocolate chips and/or raisins.

Fruit and Cream Phyllo Pie

This worked out great. Instead of pie filling, I used sliced strawberries lightly dusted with sugar.

The Whole Jar of Peanut Butter Cookies

Reviewed: Jun. 3, 2009
Hmmmm...I'm not sure what went wrong here. I followed the recipe exactly -- although I did use natural crunchy peanut butter. The taste was good but they were very very crumbly and not really presentable for guests. Perhaps the fillers in regular peanut butter keeps them together better?

Egg Drop Soup I

Reviewed: Jun. 2, 2009
Tasty and easy. I made a few substitutions - saute shallots, a little ginger, and garlic to start. I also added peas as someone suggested. Thanks!

Yummm.... Made with sour cream and reduced the sugar to 1/2 cup. Next time I'll add walnuts.

Salmon Chowder

Reviewed: Mar. 22, 2009
Pretty good. Next time, I'll leave out the creamed corn -- made it a tad too sweet for my taste.

Jam Muffins

Reviewed: Feb. 27, 2009
I really liked these. Not too sweet, great texture -- tasted like scones but a lot easier. I tried a few different jams in the first batch -- strawberry, orange marmalade, and a vanilla/lemon marmalade. The vanilla/lemon were the best.

Easy Pumpkin Muffins

Reviewed: Feb. 25, 2009
I actually didn't really care for these but my husband and daughter thought they were great. Plus, I didn't want to discount the great simplicity of the recipe since I think the components that I used made it less than ideal for my taste. I used the Trader Joe's Vanilla baking mix, 2 tsp of pumpkin pie spice, and a can of sweet potato puree. The pumpkin pie spices and the strong vanilla in the cake mix competed to heavily for my taste. I'll definitely try again with different flavors.

Orange Oatmeal Muffins

Reviewed: Jan. 10, 2009
Very good base recipe. I made some changes... swapped canola oil for butter, used 3/4 brown sugar and no white sugar, added 1 tsp cinnamon instead of nutmeg. Because of the cinnamon,I couldn't really taste the orange but they were delicious -- like oatmeal raisin cookies in muffin form.

Spinach Quiche

Good. I didn't think it was bland at all - in fact, maybe a little salty.

Bread Pudding I

Reviewed: Oct. 25, 2008
Instead of bread, I used some cranberry muffins I made that turned out kind of doughy and bland. They sure are tasty now. :)

Pear Bread I

Reviewed: Oct. 12, 2008
This was great. I made the following changes: 1. Reduced the sugar to 1.5 cups 2. Used only half tbsp cinnamon and added a half tbsp ground cardamon. 3. Added 1/2 cup or so golden raisins. 4. Baked as muffins for 30 minutes (made approximately 16 muffins). I think the cardamon is really what made these muffins distinctive and delicious.

Tasty and easy. I used golden raisins and cut back the baking powder to 2 tsps instead of a tbsp.

Mango Cardamom Bread Pudding

Reviewed: Sep. 6, 2008
Good recipe. I was asked to bring dessert to a dinner featuring Indian food. This worked nicely. I used half cinnamon and half cardamon based on previous reviews. In the future, I would go ahead and use all cardamon, but that is a matter of personal taste.

Pasta, Peas and Prosciutto

Reviewed: Apr. 27, 2008
I happened to have all the ingredients to this recipe on hand (except the celery) and it turned out quite well. I wouldn't add much salt since the prosciutto and parmesan add a lot of flavor.

Tasty Lemonade

Reviewed: Mar. 28, 2008
Very good. I used Meyer lemons from a friend's yard and I think that made a difference. It was actually a little sweet for me and I added extra water. I like the subtle taste of the brown sugar but I might stick to white sugar next time.
