Jam Muffins

I really liked these. Not too sweet, great texture -- tasted like scones but a lot easier. I tried a few different jams in the first batch -- strawberry,orange marmalade,and a vanilla/lemon marmalade. The vanilla/lemon were the best.

Easy Pumpkin Muffins

I actually didn't really care for these but my husband and daughter thought they were great. Plus, I didn't want to discount the great simplicity of the recipe since I think the components that I used made it less than ideal for my taste. I used the Trader Joe's Vanilla baking mix, 2 tsp of pumpkin pie spice, and a can of sweet potato puree. The pumpkin pie spices and the strong vanilla in the cake mix competed to heavily for my taste. I'll definitely try again with different flavors.

Orange Oatmeal Muffins

Very good base recipe. I made some changes... swapped canola oil for butter, used 3/4 brown sugar and no white sugar, added 1 tsp cinnamon instead of nutmeg. Because of the cinnamon,I couldn't really taste the orange but they were delicious -- like oatmeal raisin cookies in muffin form.

Bread Pudding I

Instead of bread, I used some cranberry muffins I made that turned out kind of doughy and bland. They sure are tasty now. :)

Pear Bread I

This was great. I made the following changes: 1. Reduced the sugar to 1.5 cups 2. Used only half tbsp cinnamon and added a half tbsp ground cardamon. 3. Added 1/2 cup or so golden raisins. 4. Baked as muffins for 30 minutes (made approximately 16 muffins). I think the cardamon is really what made these muffins distinctive and delicious.

Mango Cardamom Bread Pudding

Good recipe. I was asked to bring dessert to a dinner featuring Indian food. This worked nicely. I used half cinnamon and half cardamon based on previous reviews. In the future, I would go ahead and use all cardamon, but that is a matter of personal taste.

Pasta, Peas and Prosciutto

I happened to have all the ingredients to this recipe on hand (except the celery) and it turned out quite well. I wouldn't add much salt since the prosciutto and parmesan add a lot of flavor.

Tasty Lemonade

Very good. I used Meyer lemons from a friend's yard and I think that made a difference. It was actually a little sweet for me and I added extra water. I like the subtle taste of the brown sugar but I might stick to white sugar next time.

Zucchini Bread IV

Very tasty but a tad too sweet for my taste. Next time I will reduce the sugar by 1/2 cup. I added 1 cup of raisins, which is probably why it tastes a little too sweet.

Balsamic Grape and Walnut Salad

I find it annoying when people rate a recipe that they have changed beyond recognition of the original, but I am prepared to be somewhat of a hypocrite since this recipe has not yet been reviewed. I made an altered version of this -- maintaining the grapes, walnuts, red onion, and balsamic vinaigrette. The flavors went well together and I added chopped chicken and some fresh thyme. I left out the other ingredients because I either didn't have them (radishes) or didn't think they were needed (raisins). Ended up quite tasty.

Baked Asian-Style Honey Chicken

Very good. I used chicken thighs (removed the skin). To make more of the marinade I added a little more soy sauce and a few tablespoons of canola oil. Chicken turned out very tasty and moist.

Vegan Chocolate Cake

Easy and pretty tasty, considering I typically like my baked goods with butter and eggs. I took some suggestions posted in previous reviews: 1/2 cup cocoa, switched water for black coffee, and baked 20 minutes as cupcakes. I frosted them with melted chocolate chips plus a little canola oil and a splash of coffee.

Cranberry Pistachio Biscotti

These got rave reviews from those that tried them. I dipped half in white chocolate. Also, my strategy for keeping the dough manageable is to spritz my hands with a canola or olive oil spray.
