Uncle Mac's Peanut Butter and Jelly Cookies

This recipe gets 5 stars for being simple and delicious. I halved the sugar. Also, I just rolled the dough into ping-pong sized balls and then flattened them slightly and made a thumb print for the jam. I made them for my kids, but we'll see if there are any left once they get home from school.

Lemon Zucchini Bread

Coconut Rice with Black Beans

This recipe probably is very bland when made exactly as stated,but if you think of it as a base recipe and adjust to your spice preferences, it's a great start. I added chopped garlic, tumeric for color (because I don't like grey food) and ground chilli for spice.

I made this as cupcakes - baking for 20 minutes. The recipe is good. In terms of adapting for cupcakes, the caramel sauce/frosting is very tasty but it's not a good one for cupcakes since it's very drippy.

Caramel Bread Pudding

Easy and tasty. I used bread crusts that were set aside from another brunch recipe. I prepped the recipe the night before and baked in the morning. It really rises in the oven, so be sure to give it space.

Definitely delivers on its promise of a dense, sweet bread. Kids loved it. I used all purpose flour, without any problems. Next time, I'll make it less sweet.

Excellent! I even managed to get it a pretty good consistency without using an ice cream maker. I followed instructions elsewhere to place in freezer and remove every 30 minutes to whisk back to creamy for 2 hours. Added 2 splashes of vanilla extract and 1 splash of almond extract for a tasty basic vanilla. Next is onto the flavors. Thanks for the recipe!

Chewy Coconut Cookies

Great recipe. I substituted coconut oil for half of the butter and used dessicated coconut instead of flaked. I also made them into small balls and then flattened them between palms instead of simply dropping them.

Rhubarb Pudding

Good and easy. I was uncertain about dumping the water mixture on top but it turned out great. I took the advice of others and reduced the sugar by about 1/2 cup and it was plenty sweet. I might cut back even more next time.

Cocoa Banana Bars

Tasty and relatively easy. Whenever I have bananas that are a little past their prime, I put them in the freezer and then thaw them when I have enough to bake with. Easier than mashing bananas that aren't ready for baking.

Pineapple Crisp

Excellent! I have been searching for a way to bake with fresh pineapple. All my muffins, cookies and cakes have crumbled - possibly because of the acidity? Anyways, a crisp is the perfect solution and this one is easy. I used self-rising flour instead of added baking powder and salt and I halved the butter and sugar because that suits my preferences. I think I'll experiment with adding some coconut and cashews for a truly tropical treat. Thanks for posting this recipe!

Tasty. I used green beans instead of zucchini. I also added some cheese at the end for some extra creaminess. I am sure it can be adapted hundreds of ways but a great place to start.
