Mom's Best Macaroni Salad

This was so yummy and simple! I've made many pasta salads, but this had the perfect blend of flavors. Adding this to my monthly recipes! Thanks for sharing it!

Four Cheese Macaroni

Pretty good, much too rich for me and my kids, though. I followed all of "Kimzee"'s recommendations, not exactly the original. I actually liked it better when I sampled it prior to baking. Thank you for sharing this.

Candy Bar Cookie Squares

I was curious how this would turn out because the batter is very thick and I had to work a little to spread it out in the 9x13 pan. But it turned out perfectly, and it's a nice quick recipe to make with the kids. It's Day 3 and the bars seem to taste better than before. Will probably make this again for the kids. Also, I just chopped up a bunch of fun-size Snickers...it's not an exact science. :) I did pre-spray the pan just because I hate scrubbing out a pan! Worked just fine.

Fluffy Pancakes

3.5 stars. Added cinnamon for some flavor. Had to dump first batch of liquids because the melted shortening reacted with the milk and eggs and I ended up with lots of waxen-like little clumps in milk. I must have had the shortening too warm and the milk cool. Remade it with 2t oil instead and worked better. Still nothing to write home about, prefer the boxed mixes.

Popcorn Cake I

Taste and appearance was fun fot 4th of July picnic, but it was gummy and fell apart. It wasn't one to slice off a piece and walk around with. Fun for kids, though. Probably wouldn't make this recipe "as is" again.

Cha Cha's White Chicken Chili

Just did not care much for this, surprised because of the high ratings. Perhaps because I had a hankering for white chicken chili after trying Ruby Tuesday's. This recipe did not come close. It was like watery bean soup with chicken and spices. My husband enjoyed it, though. He said "4 stars!". I had to put plenty of sour cream & cheese and then it was maybe 3 stars. I won't be making this again (hope hubby will forget about it so he doesn't request it, lol).

No Bake Peanut Butter Pie

Very easy. Reminded me of a Dairy Queen Reese's P.B. Cup blizzard. Kind of ice-creamy texture. I added a little more peanut butter per some reviews, it ended up being a little too rich, maybe that's why?. Added chopped p.b. cup to top for garnish. I would suggest 1 pie for 10 servings (again, this was surprisingly rich).

Applesauce Cookies II

These are very soft, cake-like and puffy. One batch lasted appx 3 hours at my house, a new record for us! These cookies are very "home-y." I needed to bake mine a few mins longer than stated. I baked them until the bottoms were medium brown and they were just perfect. Thanks for this keeper!

Mini Meatloaves

My husband really loved this, I thought it was pretty good too although I didn't care for the sauce-it was too sweet for me. I will modify this recipe next time by adding chopped onion and decreasing the brown sugar. I also just made it into 1 loaf, plopped the mixture into a lightly greased 9" bread loaf pan and baked 350 degrees for appx 1 hour (until meat thermometer in center of loaf = 160 degrees.)

Amy's Barbecue Chicken Salad

This recipe was so wonderfully delicious!!! I agree with the suggestion to decrease bbq sauce, I used appx 2 parts ranch to 1 part bbq. Also omitted cilantro and ff onions. Will definitely be making this again (and again and again...) might try crushed tortilla chips on top. I'm passing this recipe on to other people. It's so easy and yummy! Thanks!

Black Bean and Salsa Soup

This recipe is inexpensive to make and pretty quick. It tastes fine when 1 can of beans is left unpureed. I recommend only briefly blending the rest, (too much blending will make it very soupy and it ended up with a watery-gritty texture). I topped with fat-free sour cream and green onion. I would have given this 4 stars, but when I woke up the next morning, even my eyelids were puffy! There is so much sodium in this recipe!!!! Two bowls (which I had) equalled the total amount of recommended daily sodium intake. To finish up the leftovers 2 days later, I mixed 1/2 bowl reheated soup with tons of romaine lettuce. It was okay as a salad topping, and that would be the only reason I would make this recipe again.

Field Salad

Per other reviewers, I used Feta cheese, Granny Smith apples and romaine/spinach. I tossed the apples in lemon juice prior to leaving for the party this salad was to be served at. Much to my surprise, most of the salad was eaten but I didn't hear rave reviews some of the other posters did. Though we enjoyed it for a change, I won't be making this very often, it's just not an every-day sort of salad for us.

Apple Crisp II

To make a 9x13 pan, I used 5 large Granny Smith apples and doubled all other ingredients except sugars. As some reviewers stated, it was too sweet so I decreased the sugars by about 1/3rd. It still turned out waaaayyyy to sugary for us. Also, I've made apple crisp before, but never with the stovetop stirring method. I found this time-consuming (I have 3 very young kids!). I baked the whole dish for an extra 5 mins to brown the top. Still not much "crisp". Thank goodness we had vanilla ice cream, it tasted very good on top. Unsure if I'd make it again. Giving 4 stars because it was very tasty warm over ice cream.

Slow Cooker Chicken Taco Soup

Very delicious and filling! Didn't have chicken or beer so I used 1 lb browned ground beef and 1 can beef broth. Otherwise rinsed the corn & beans from cans as I don't care for the "canned" taste. Also added an extra 1/2 packet taco seasoning, garlic powder and cumin. It turned out so yummy! I made this with the recipe for "Authentic Mexican Tortillas" on this site and it was truly an enjoyable dinner to serve to my family. This is a recipe for my file! (I think we'll call it "Mexican Chili". Thank you for sharing this recipe!

Authentic Mexican Tortillas

We just finished dinner and I had to jump on the computer to review these tortillas! They were soooooo good! They don't taste anything like the cheap-o store shelf types, rather they taste a lot like the ones from the Don Pablo's restaurants. I followed the recommendations from Flashsmith's review (3T shortening, 2T butter, 1 1/2 tsp salt. Rolled into golf-sized balls prior to the hour rest). I had a little trouble with my dough initially, actually I kept needing to add more very hot water (probably another 1/3 cup) but eventually it turned out very well. This was an awesome recipe, Thank you!!!! I've never made tortillas before, and now I'll never buy the store shelf ones again.

Quick Creamy Potato Soup

5 stars, made a few changes. Substituted green onion instead of white, thyme instead of dill. Skipped bacon to make it healthier. Chicken broth instead of cream soup. Still a very very delicious, easy soup. A keeper for our family!

Whole Wheat Banana Nut Bread

OUTSTANDING! We've been phasing out white flour from our foods, and this recipe is a definite gem. After reading the reviews, I made a few changes: 1 1/4 cups mashed banana, heaping 1/3 cup all-natural applesauce instead of oil, and instead of honey I used 1/4 c Splenda + 1/4 cup white sugar. After cooling on rack for 40 mins, I wrapped the loaf in plastic wrap and it stayed incredibly moist and flavorful. Next time I'll make two loaves and freeze one. I'll be sharing this recipe with others. Thank you Peggy!
