Quinoa and Black Beans

Good dish, but I found that there were too many beans using two cans. I also found it a little cilantro-heavy, but that might be because I removed ingredients and didn't compensate re: cilantro concentration. I scaled back a bit on the veggie broth because I'm watching my sodium intake and could not find a low-sodium option at the time. I just subbed in some water and it was still very good! I will be making this again.

Beet Pierogies

A warning to all those planning to make this dish; BEETS STAIN EVERYTHING! Don't forget this while you're working. I enjoy the recipe, but I think next time I'll cut in some potato to mellow the beet flavour. I used whole wheat flour instead of all-purpose and it came out splendidly. My biggest issue was presentation; if you get beet on your fingers, you're going to stain the outside of your pretty pierogies, so be careful!

Baked Falafel

Be careul not to over-process the chickpeas! The flavours are good and adding a bit of tzatziki... divine! Also, don't over-fry or they will end up dry. Other than that, so good.

Authentic Pad Thai Noodles

Pakistani Spicy Chickpeas

I was thoroughly impressed with this recipe. Taking one of the reviews into account, I replaced the tomatoes with a full can of crushed tomatoes so I could serve it over rice. I also added a bit more lemon juice, since I love the tartness. So good.

Vegetarian Bean Curry

Very good, but could use some tweaking. Making your own curry blend would add a fantastic dimension to the meal as the quality of your spice blend will make or break the dish. I also like a spicier curry, this was very mild and I ended up jazzing it up with red pepper flakes and extra cayenne.

Channa Masala (Chickpea Curry)

Very, very good. I am a huge fan of chickpeas, so this recipe was a must-try. My only modification to this recipe was that I added about 1 tbsp. of curry powder because I used two beastly large tomatoes and found that the curry flavour was lost in the meal. also, this recipe seems to freeze very well, so it's a great make-ahead!
