Mom's Zucchini Bread

Reviewed: Aug. 10, 2011
This is very good, and it was made even better by the fact that I used zucchini from my own garden! :-) This bread gets better as it sits, and it tastes wonderful with a little bit of butter and/or cream cheese on top!

Freezer Caramel Drizzle Pie

Reviewed: Jun. 8, 2011
This was fabulous! Everyone raved and raved about it! The only change I made was to omit the coconut, as nobody in family likes it. I don't normally like using whipped topping, I almost always substitute heavy cream I have whipped, but this was good! Will make again!

Vanilla Bean Cheesecake

Reviewed: Jun. 8, 2011
One word: WOW!! This was excellent. Next time, however, I would not put the vanilla bean in the crust, I would just throw it into the batter with the other beans. This was my first time working with vanilla beans, and I will definitely be making this again. It did make a lot more batter than necessary, so I have a bowl of frozen, unbaked batter that I'm hoping I can use soon!

Black Bottom Cupcakes II

Reviewed: May 26, 2011
I thought these seriously lacked flavor. They were a little better after sitting overnight, but still were not spectacular.

Grilled Corn on the Cob

Reviewed: May 24, 2011
Very good stuff! I did not grill the corn in the husks. I shucked each ear, sprinkled them with garlic salt, and put each ear into a foil packet with some water. They were nice and tender after 30-40 minutes.

Rick's Special Buttercream Frosting

Reviewed: May 24, 2011
This wasn't the best buttercream I've ever made, but it was good. I used half shortening, half butter.

Nacho Potato Soup

Reviewed: Jan. 25, 2011
I used a package of frozen shredded potatoes in place of the boxed potato mix, and I just threw everything into the crockpot and put it on low for several hours. This is a really good soup for a cold day. My family loved it!

Quick Biscuits

Reviewed: Jan. 12, 2011
These are quick and easy, so I give them four stars. They turned out pretty flat, but they taste was fine. I had to add a little more cream to the mixture. I just rolled them out and cut them out with a glass.

Man Dip

Reviewed: Dec. 15, 2010
This dip isn't bad, and it's a good idea, I just cant get passed the flavor of canned chili. I think it would be really good if it was made with homemade chili rather than canned. I think I will try that next time.

Festive Shortbread Logs

Reviewed: Dec. 15, 2010
These were ok. I thought they lacked in flavor. For the effort involved, I was hoping for bigger flavor. I have another shortbread recipe that I think I will stick to.

Slow Cooker Baked Potatoes

Reviewed: Oct. 20, 2010
Awesome! Who knew you could make baked potatoes in the slow cooker? These tasted great. I washed my potatoes and let them dry. Then I sprayed my crockpot with cooking spray, rubbed my potatoes down with olive oil, pricked them with a fork, and cooked them for a few hours on low. They were soft but not mushy, and had a much better taste than "baked" potatoes from the microwave.

Pseudo Sourdough for the Bread Machine

Reviewed: Sep. 29, 2010
Although I wouldn't call this sourdough, it's still a very good white bread recipe. I loved the texture. I used all bread flour, as I did not have any barley flour, and also, as with all of my bread machine recipes, I used milk in place of water.

Slow Cooker Cocktail Smokies

Reviewed: Aug. 30, 2010
Very good! I was skeptical of the jelly, but it gave it a nice sweetness, and it was a good contrast to the BBQ sauce. As always, we used Head Country sauce, and if you're an Okie like me, that says it all. ;-)
