Perfect Baked Potato

Potato Croquettes

Absolutely the best potato cakes I have ever made. My family loved them. I added fried bacon instead of bacon bits and mixed cheese. The bread crumbs made all the difference. I usually have issues with my potato cakes falling apart when I made them in the past. I also made about a 2" ball with the potatoes and rolled it in the bread crumbs and flattened them slightly. The size seemed to also make a difference. I added a bit of flour to the potatoes to make them stiffer and easier to work with. They were a huge hit with both ketchup and ranch dressing. Will make them everytime we have leftover mashed potatoes.

Hot Fudge Ice Cream Bar Dessert

Absolutely the best, easiest ice cream cake. I made it for my boys' birthday and it was gobbled up. I did change the layers and put the chocolate sauce on before the whipped cream. I sprinkled mini m&m's over the top to make it look festive and also drizzled some caramel sauce over the top. Excellent!!!!

Janet's Rich Banana Bread

Very good and moist bread. I added about 2 teaspoons of cinnamon and also used brown sugar instead of white. I used pecans as that is what I had. I also used 2 mashed bananas and folded in 2 sliced bananas in the batter. Got lots of requests for recipe. Will use this all the time for my banana nut bread recipe. Thanks

Spicy Bean Salsa

Excellent salsa. I added 2 cans of diced tomatoes with chilis and chopped green chilis instead of Jalapenos. I also added cumin, adobo season, cayanne pepper for kick and garlic with pepper. I just made it and love the flavor, can't wait to try it after it sits over night.

Big Soft Ginger Cookies

This is an excellent recipe if you like soft cookies. My 6 year old son helped make this and loved rolling the cookies in the sugar. We made the recipe as written and it made 2 1/2 dozen. Definitly double or triple for Christmas baking. Great cookies!

No Bake Peanut Butter Pie

Very big hit..I crushed reese cups and also only added 1/2 cup of milk because it seemed just right. Very good taste and texture..very easy too...my hubby is happy..its his favorite!

Burgundy Pork Tenderloin

My husband and I recently had a discussion about how we just aren't pork fans. But I keep looking for a great recipe to change that. And this one fits the bill. I used 1 cup of chianti and one cup of beef broth. I also rubbed the tenderloin with Montreal Steak Season. I also left out the celery and put slivers of garlic in the meat. This was so tender and juicy. I always seem to find bland, dry recipes. This I will definitly make again. Thanks so much for a quick and delicious recipe.

Bourbon Whiskey BBQ Sauce

This stuff is awesome and made me change my mind about store bought stuff...UGH. I did add a couple chipotle peppers and cooked all of it in the crock pot. I swear I could eat it by the spoon full. I am whipping up a batch for pulled pork for the Super Bowl!

No Bake Cookies III

I have never had any luck with no-bake cookies and they are my husband's favorite. The only time he got them was when my mother made them for him. He was so excited when he came home from work and found the perfect no-bake cookie waiting for him. I timed the boiling time for 2 minutes and they set up perfectly. My Favorite Soup

Total success in my house. Made this for a Christmas Eve dinner and everyone loved it. I added red wine vinegar to cut the richness and also added cayenne pepper and black pepper and taragon. Only had one can of potato soup so added cream of celery and it worked fine. My son said he "liked it better than homemade potato soup and that is really saying something mom!" Will make it again!

Garlic Prime Rib

Absolutely Perfect. I inserted cloves of garlic and then covered the whole roast with the rub. It tasted phenomenal. I took it out of the oven before the themometer said 140. It hit 140 during the resting period. It could not have been better. I used Montreal steak spice instead of plain black pepper and used sea salt. A meat themometer is a must for this to work. Yum!

Chocolate Cheesecake II

Very rich and very yummy. The topping makes it look perfect. It doesn't even matter if you get a crack in the top. Was a big hit at Thanksgiving. Will replace my old recipe! Thanks

Asian Chicken Salad

Very Good~I added a little ginger and garlic to the dressing, which I also doubled. I then added mandarin oranges and water chestnuts to the salad. I put a few red bell pepper slivers in as well. I did not add the rice noodles. I used chow mein noodles instead because it was much easier and very tasty. I seasoned the chicken breast with garlic, pepper, salt and a touch of ginger. Very good, refreshing recipe. Will definitly make again and pass it on to friends! Thanks!!

French Baguettes

Pretty darn good bread. I was impressed with how good it tasted. I need to work on my shaping technique. They weren't perfectly shaped. But it tasted pretty perfect. My family loved it with garlic butter.

Chicken Lasagna IV

Very good. Only added a small amount of Spinach to the center layer and it was perfect. I made it the night before and then baked it. Our company went back for seconds. Always a good sign. Really easy too. Thanks.

Best Bread Machine Bread

YEAAAAHHH! I made a perfect loaf of bread. It is soooo good. I am going to keep this recipe for sure. I just got my bread machine and was feeling discouraged by the results. THis recipe went agaist the rules my bread machine. (Yeast does not touch the water) Whatever, now I know why I have never been a rule follower. This is a very perfect white bread. My household has devoured it in the first 15 minutes! Gotta make another tomorrow. Once again, YEAHHH!

Jamie's Cranberry Spinach Salad

Whenever I make this it is gobbled up and someone asks for the recipe. I did reduce the sugar to about 1/3 cup and also left out the poppy seed. Very great taste. You will never miss the poppy seeds or the sugar. YUM

Restaurant-Style Buffalo Chicken Wings

I will definitly make this my new hot wing recipe. Everyone loved them. Even my kids, and they were pretty hot. My hubby said they made his lips tingle. It is the breading that makes these so good. I did not use the sauce here. I split the difference and got a bottle of Texas Pete's Buffalo Wing Sauce and Franks Buffalo Wing Sauce and then added about 4 Tablespoons of Franks Red Hot. You can definitly make these to your own preference. I made about 60 wings!
