Carrot Pineapple Cake I

This was an excellent moist cake. I reduced the oil by a 1/4 cup and added a jar of carrot baby food. It was fabulous. Extremely moist. I frosted it with the whipped cream cream cheese frosting and it was perfect. My husband woke up and headed straight for the last piece for breakfast.

Bellini Meanie Martini

What can I say. It was a perfect New Year's Eve drink. I made it with Vanilla Vodka. I also served it in Champagne flutes. It looked very elegant and tasted great. The last sip is a kicker. Pure alcohol all the way through.

Homemade Egg Noodles

Very easy recipe. I added 3 egg yolk and one whole egg. It was easy dough to work with. We really enjoyed this boiled in chicken broth with shredded chicken, fresh carrots, and a few cubed potatoes. I thickened the broth after cooking with a little corn starch. Very yummy, hearty comfort food.

Mandarin Orange Salad

I followed this recipe exactly..I had high hopes but was dissappointed. Took it to a BBQ and it was eaten by a couple of people but unlike everything else I took, I had to bring the pan back full. I decided maybe I should taste it myself to see the deal. The orange part had a decent flavor, but the crust was NOT good. It was very gritty and didn't go with the filling. I do not think I will make it again.

Potato Croquettes

Absolutely the best potato cakes I have ever made. My family loved them. I added fried bacon instead of bacon bits and mixed cheese. The bread crumbs made all the difference. I usually have issues with my potato cakes falling apart when I made them in the past. I also made about a 2" ball with the potatoes and rolled it in the bread crumbs and flattened them slightly. The size seemed to also make a difference. I added a bit of flour to the potatoes to make them stiffer and easier to work with. They were a huge hit with both ketchup and ranch dressing. Will make them everytime we have leftover mashed potatoes.

Quick and Easy Thai Style Coleslaw

Super easy. I replaced one of the tablespoons of honey with soy sauce. One of the tablespoons of sesame oil I replaced with sesame oil with chili to give it some kick. I added sesame seeds instead of peanuts and grated fresh ginger in it. I know you shouldn't rate unless you stick to the recipe, but it's a great base and is easy to tweak to your tastes. I made it to use on Korean BBQ tacos.

Asian Chicken Salad

Very Good~I added a little ginger and garlic to the dressing, which I also doubled. I then added mandarin oranges and water chestnuts to the salad. I put a few red bell pepper slivers in as well. I did not add the rice noodles. I used chow mein noodles instead because it was much easier and very tasty. I seasoned the chicken breast with garlic, pepper, salt and a touch of ginger. Very good, refreshing recipe. Will definitly make again and pass it on to friends! Thanks!!

Garlic Prime Rib

Absolutely Perfect. I inserted cloves of garlic and then covered the whole roast with the rub. It tasted phenomenal. I took it out of the oven before the themometer said 140. It hit 140 during the resting period. It could not have been better. I used Montreal steak spice instead of plain black pepper and used sea salt. A meat themometer is a must for this to work. Yum!

Carrot Cake Bars

Pretty decent taste. Very easy...my husband took them to work and the soldiers scarfed them down. I added raisins and chopped pecans to the batter. I would make again because you can't ask for easier carrot cake.

Hubby's Pizza Bread

Very good. I cut back to about 4 oz. of pepperoni. I think next time I would go ahead and put in a whole 8 oz. I do think 16 would have been way to much. It had a great flavor though. I toasted it and buttered it with garlic butter the next day. My family really liked it.

Ramen Coleslaw

I totally love this recipe and could eat it by the bowlfuls. I use a large bag of prepared tricolor slaw mix and two packages of ramen. It doubles the recipe, but I triple the dressing with the exception of only using 2 of the flavor packets. I use half olive oil and half sesame oil and rice wine vinegar. I also add a couple tablespoons of soy sauce and some ground ginger. With the soy sauce and flavor packets, you can omit the salt. This goes great with an Asian meal, or for bbq's and potlucks. I've never had any leftovers. Much lighter than mayo based slaw and has wonderful texture

Szechwan Shrimp

Very yummy recipe. I tripled the recipe and added chili paste instead of the crushed chili's and it definitely left your mouth tingly, but was perfect. Even my kids chowed down on this. I also added chunks of red and yellow bell pepper, a sweet onion and water chestnuts because they have a great texture. I added some fresh ginger in with the garlic and a splash of sesame oil. I served over jasmine rice. It was perfect and really fast. I even ate leftovers for breakfast. Nothing like nice spicy food in the morning to wake you up. I definitely recommend this recipe, its so versatile and you make it to suit your tastes.

Burgundy Pork Tenderloin

My husband and I recently had a discussion about how we just aren't pork fans. But I keep looking for a great recipe to change that. And this one fits the bill. I used 1 cup of chianti and one cup of beef broth. I also rubbed the tenderloin with Montreal Steak Season. I also left out the celery and put slivers of garlic in the meat. This was so tender and juicy. I always seem to find bland, dry recipes. This I will definitly make again. Thanks so much for a quick and delicious recipe.

Chicken Lasagna IV

Very good. Only added a small amount of Spinach to the center layer and it was perfect. I made it the night before and then baked it. Our company went back for seconds. Always a good sign. Really easy too. Thanks.

Anniversary Chicken I

Ok, I had very high expectations for this one. I used 6 slices of bacon and made it on the George foreman grill. I then put seasoned the chicken and also put them on the grill to quickly brown on both sides. This method worked great. It followed the recipe as written and it looked great and even smelled good. When we ate it though, was not too happy with the taste of the teriyaki and ranch together. My kids liked it and it wasn't the worse thing I have made. But the combination of the sauces were not good. I would make again with a change. Next time no teriyaki sauce and just use the ranch. The chicken was moist and it was easy though. So maybe it is just a matter of taste.

Asian Stir Fry Sauce

Really good! I only used one tablespoon of the cornstarch, left out the corn syrup and added a tblsp of honey instead. I added more of the red pepper flakes cause we like the burn! Will definitely make again.

Candy Bar Brownies

This wasn't too bad. You really have to make sure you don't overbake it though. It gets very dry, easily. The flavor overall was good and it was very simple to make. You could definitely change the candy bars to the flavor you like the best.
