Spicy Bean Salsa

Excellent salsa. I added 2 cans of diced tomatoes with chilis and chopped green chilis instead of Jalapenos. I also added cumin, adobo season, cayanne pepper for kick and garlic with pepper. I just made it and love the flavor, can't wait to try it after it sits over night.

Perfect Baked Potato

Easy Fettuccine Alfredo

Every evening I ask my family how many stars on this dinner, and tonight they all said 4 1/2. (Except my youngest son who said 800) So since neither is an option I will put 4. It is very good and very easy. We just added some steamed broccoli and an extra 1/2 cup of milk so it wouldn't be too think. Very Yummy!

Steak Tip Marinade

This was ok. My husband liked it better than I did. I have to say I think I missed the saltiness from the soy sauce marinades I usually use. It was an easy marinade and I may try it on chicken sometime.

Potato Croquettes

Absolutely the best potato cakes I have ever made. My family loved them. I added fried bacon instead of bacon bits and mixed cheese. The bread crumbs made all the difference. I usually have issues with my potato cakes falling apart when I made them in the past. I also made about a 2" ball with the potatoes and rolled it in the bread crumbs and flattened them slightly. The size seemed to also make a difference. I added a bit of flour to the potatoes to make them stiffer and easier to work with. They were a huge hit with both ketchup and ranch dressing. Will make them everytime we have leftover mashed potatoes.

No Bake Peanut Butter Pie

Very big hit..I crushed reese cups and also only added 1/2 cup of milk because it seemed just right. Very good taste and texture..very easy too...my hubby is happy..its his favorite!

Cola Pot Roast II

I made it as the recipe stated but added carrots and a little wostershire sauce. I put it in my crock pot and cooked all day. The gravy was nice and thick and the roast tender. My husband and I both agreed that the gravy was a little too sweet. I will try again but with a little experimenting...Very easy so I will give it an extra star for that.

Baked Ziti I

It was pretty tasty....I mixed a bit of cottage cheese in with the sour cream because I happened to have some in the fridge. I liked the taste a lot. I also added some fresh garlic with the hamburger and used a couple of kinds of sauce. I think this is a good hearty, quick and easy meal!

Chili Dog Casserole I

We really enjoyed this simple meal. I left the hot dogs buns whole. I just split them open and then put them in the oven while it was pre-heating. I sprinkled a little cheese over the buns and I then used good beef hot dogs and put a layer over the cheese. I used canned chili without beans and it was thick enough it didn't soak through to the buns. I served the onions and mustard on the side along with relish. The crunch of the onions was a perfect compliment. Will make this again. Very tasty and VERY easy!

Beer and Brown Sugar Steak Marinade

This is a great marinade for steaks. My husband always wants the "beer steaks" now. I added a bit of soy sauce and a few other spices. I used dark German beer since I am in Germany. It was excellent. I think it replaced my old favorite marinade. Thanks!

Chocolate Cavity Maker Cake

Absolutely fabulous, moist, rich and scrumptious chocolate cake. I am not a chocolate cake fan but this one is awesome. Every piece was eaten. This is also very easy. I made it exactly as it said and wouldn't change a thing. I just put a couple of chocolate roses and some chocolate covered coffee beans on the top to decorate it. Everyone raved about how pretty it was and how great it tasted. They kept asking if I made it or bought it. Thanks!

Carrot Pineapple Cake I

This was an excellent moist cake. I reduced the oil by a 1/4 cup and added a jar of carrot baby food. It was fabulous. Extremely moist. I frosted it with the whipped cream cream cheese frosting and it was perfect. My husband woke up and headed straight for the last piece for breakfast.
