Yummy Honey Chicken Kabobs

I made this for Mother's Day tonight and she commented that it is some of the best chicken I have thrown together. I did make a few slight revisions: used 4 chicken breasts but kept the measurements the same for everything else, subbed evoo for veggie oil, added an extra 3 cloves of garlic (that's standard in my fam) and didn't add in the veggies to the marinade. Poked holes in the chicken breasts, cut them into chunks, mixed into the marinade, and then let sit for 5.5 hours before grilling. Loved that the soy/honey mixture almost left a sort of glaze on the chicken. Thank you for sharing!! :)

Tangy Potato Salad

I was so excited to find a more authentic potato salad that didn't use mustard! I omitted the onions & tomatoes and only used 1 tsp of salt; the result was a very tasty dish. For the pickles I used 2 small ones that were homemade, so they were more like dilly cucumbers; tasted sooo good in this dish. The thought of using chicken stock turned me off at first, but it gave the dish a very nice flavor. I would totally recommend this recipe to anyone who loves potatoes & wants to try a different take on the potato salad!

Too Much Chocolate Cake

OMG, soooo good!!! This cake turned out heavenly & cured the chocolate craving I had been dealing with all week. For the chocolate chips I used 1 cup of regular milk chocolate chips and 1 cup mini semi sweet chips; loved the variation. Other than that, followed the recipe exactly as written. Just dusted powdered sugar over it and was pleased to find that it was a great cake without having to add frosting. I was so pleased with how super simple this recipe was & will for sure make again!

Cajun Bread Pudding

This just came out of the oven & it is soooo good! I halved the recipe, used an Italian loaf of bread that was going stale and doubled up on the cinnamon. The only other change that I made was to still bake the pudding in a 9 X 13, but for only about 23 minutes and that was plenty. Loved the texture and the taste - the sauce is what puts this over the edge. Next time I *might* omit the raisins and use more pecans, but that is just a personal preferance. Rosemary Ranch Chicken Kabobs

Made the marinade as written (except only used 1/2 the amount of salt), cut 3 large chicken breasts into strips & marinated them for 2 hours. Since it is snowing here (IN APRIL...arrrg), I lined a cookie sheet w/aluminum foil & broiled the strips for about 8 minutes on each side. LOVED the result! My extremely picky father even commented that the taste of the chicken was excellent. Thank you for a great recipe, will FOR SURE make again!

Banana Coffee Cake

This is a great coffee cake!!! I made this for an Easter brunch & it was extremely popular. I was sure to beat the cream cheese until very, very smooth so that there were no lumps & this helped produce a very light & moist cake. I added in 3 ripe bananas; the taste was sooo good and stood out well (which is what I was hoping for). Will for sure make again...

Yogurt Chicken

Very good & the chicken turned out super moist. The changes I made were minimal - used plain bread crumbs (used what I had around), opted for dried parsley (again, using what I had) & added in a bit of chili powder for some zing. My only complaint is that 16oz if yogurt was waaaayyyy too much & felt like alot of it went to waste. Thank you for sharing this recipe though; loved how simple it was and look forward to experimenting with different herbs & spices. :)

Broiled Tilapia Parmesan

I am not the biggest fish fan, but wanted to give this a try...it was excellent! Made this recipe exactly as written & my boyfriend, his friend & I commented that the flavors were great. Since I am not huge into fish I really, really cannot wait to try this with chicken. This recipe earned all 5 of it's stars for not only taste, but also ease & the fact that dinner was on the table in less than 30 minutes. :)

Cajun Style Baked Sweet Potato

SOOOOOO good! I doubled the recipe for 4 people and it came out about right. I made as directed, aside from omitting the paprika because I had none and chose to chop the taters into cubes. Loved the sweet & spicy combo - everyone at the table commented on how good they were. Thanks for sharing!! :)

Real Welsh Rarebit

I had never had rarebit before, but found it to be very tasty! For us, the use of beer (Dos Equis) is what really made it for us because of the great bite it added. Since I am not a fan of mustard, I omitted it, but other than that made the recipe exactly as specified. I scaled down the recipe to 4 servings and that was PLENTY for cover 4 english muffin halves. Oddly enough, my favorite way to use the rarebit was over my scrambled eggs that we served along with the toasted english muffins smothered in the sauce. Thanks for sharing...I will for sure be adding this one to the rotation for a simple & filling breakfast!!!

Green Grape Salad

Love this recipe! Since red grapes were on sale, I used them instead of green grapes. Originally I had intended on halving the recipe & did so with all of the ingredients except for the vanilla & cream cheese (just used one whole package of 1/3 less fat) on accident (oops). To make up for the overflow of cream cheese I made sure to add in a bit more pecans & the result came out soooo good. I have had versions of this salad before, but this is for sure my favorite. :)

Corn Dip

This dip received all 5 stars because it tasted great, was sooo easy to make, was done in 10 minutes & garnered lots of compliments at the backyard bbqI took it to. My boyfriend accidentally purchased the Southwest style corn (bless his heart, he tried), so there were black beans in it but they actually worked really well. Other than that, I made the recipe exactly as written & served it with tortilla scoops. Thanks for sharing - will be making again!

Best One Pot Cheese and Macaroni

This was a tough recipe to rate. Would I serve this to guests for dinner? Probably not. Would I totally make this for a quick lunch for myself again? YES (especially because all of the ingredients are things I usually have sitting around the house anyways)! I reduced the recipe down to 1 serving for my lunch today & it went pretty well. I upped the noodles to 3/4 cup because I didn't use elbow noodles & so had to add more water. Once the noodles were done I just poured out the majority of the excess water. I added in a tbs of butter & melted it, then added in the milk as the recipe indicates. Once the cheeses were melted & the pepper added (skipped on the mustard) I tasted the macaroni & it seemed a little bland, so I added in a few dashes of hot sauce as well as sprinkled in just a bit of onion powder. This took the recipe from "okay" to "mmm...good". As far as easy & tasty lunches go, this one is a recipe I will make again!!

Asparagus Beef Roll-Ups

These are very, very good & very simple to make! Per another users suggestion, I did sub in cream cheese for the whipping cream (more cost effective). Next time I think I will add in just a little more horseradish, but that is just a personal preferance. There wasn't a single rollup left at the end of my New Year's party, and I even doubled the recipe. Thank you for sharing! :)

Peanut Butter Cup Grilled Sandwich

I was naughty today & tried this (with 2 other pb sandwich recipes for lunch...I just made small ones or each); it was VERY good! I made it on sourdough bread with milk chocolate chips, which was decent, but on the other half I added some cinnamon & it was great.

Strawberry Trifle

I made this for my Neice/God daughter's baptism party last weekend & it went over well. The slight variations I made were to omit the bananas & also used french vanilla pudding. I doubled the strawberries to accomodate the loss of the bananas & before adding them to the mix sprinkled a small amount of sugar over them after they were sliced up since they were a little tart. Loved how this turned out & also recieved alot of compliments on how pretty it looked. :)

Tater Tot Casserole I

YUM! I made this for New Year's breakfast this morning & it was well recieved. I did add in 3 extra eggs, a pinch of chili powder, some black pepper and and extra cup of mozzarella cheese. Per other users suggestions, I baked this for an hour at 375 and it came out with the perfect crunchy top consistency that I was hoping for. Next time I might add in some mushrooms or some other type of veggie, just for some added texture and flavor but it is very good as written too. Thank you for sharing! :)

French Dip Sandwiches

SO GOOD!!!! Made this using 2 lbs instead of 4 lbs, but still kept the rest of the measurements the same. Followed the recipe exactly except that all I had on hand was fresh thyme, so that is what I used instead. Didn't have 10 hours, so put everything in the slow cooker and cooked on high for 6 hours & the meat was falling apart and super tender. Threw it on some buns with plenty of swiss cheese and popped the sandwiches into the oven at 400 for a few minutes (just enough to melt the cheese).

Mexican Pizza

This was a HUGE hit at my New Year's party last night! I made it the evening before, omitted the black olives & added some green onion. Very tasty! My only suggestion would be to cut up the pizza first and then add the lettuce, as mine kept dragging with the knife and getting messed up and I had to redisburse it. Thank you for sharing such an excellent recipe! :)
