Easy Corn Salsa

I made this with (ok, more like I did the work and he stirred the ingredients) my bf for a potluck at his work. I just got a text that said "everyone loved it, you did good!" (lol) I just made a few tiny changes: 1) subbed red pepper for orange 2) added half a can of black beans 3) used closer to two tbs lime juice 4) subbed a chili pepper for jalapeno (what we had) 5) subbed garlic salt for regular salt. Capicola Canapes

Easy & tasty! My deli was out of Capicola (seriously), so I had to use Pastrami, but it was still awesome. Other than that, made the recipe exactly as indicated. Took these bad boys to a wine tasting event & not only did I not come home with a single one, but I also didn't even get to try one at the winery (thankfully I snuck one beforehand, lol)!

Ravioli Casserole

5 stars for an easy, cheap, fairly healthy meal that the kids even liked! I did make a few slight changes: 1) added in some thawed chopped spinach to the sauce to increase the veggie intake 2) used a whole can of pumpkin puree 3) used 25 ounces of ravioli 4) used a whole 20 oz package of hot turkey sausage. Very easy to assemble & dinner was ready to go in an hour. I like that it's a really good way to "sneak" in veggies by using the pumpkin and of course the marinara sauce. THANKS FOR SHARING! :)

Apple Enchilada Dessert

I made this for my "fiesta" themed dinner party...it was a huge hit and it was light enough to eat after a big mexican dinner. This also tasted really good warmed up the next day too...

Taco Pies

I really liked this entree for it's simplicity as well as taste. Alot of people said that they did not care for the pie crust, but I thought it was a fun change to enjoying Mexican based cuisine. Per the recommendation of other readers I added a bit of taco seasoning to my meat. Instead of baking the onions in the pie, I actually left them until adding the toppings because I enjoy the crunch & taste better of uncooked white onions. In addition, I omitted the black olives (just not a fan) and subbed red peppers (because there were some sitting around). I made it for my parents & my dad chose to add jalapenos to his as well. They are pretty picky people, but we devoured this meal & they even commented that they liked it. :)

Alfredo Potatoes

LOVED this recipe! However, after I restuffed my skins I just baked them for about 7 minutes in a 350 degree preheated oven so that they would firm up better & get that crispy texture on the edges.

Greek Avgolemono Chicken Soup

This was really good and just what I was looking for. The only thing that I did differently is when I bolied my chicken I added onion powder, garlic powder and some salt. I also added just a small pinch of Oregano to the soup when I added in the salt & pepper.

Penne and Vodka Sauce

Chicken Valdostano

LOVED this recipe & made just as specified. Alot of reviewers said they did not care for the fontina/proscuitto & it is for sure an acquired taste; my suggestion would be to taste both before going forward with the dish. If you are a fan of the 2 though, this is the perfect recipe. Might just be my favorite I have used from the site!

Sugar Cookie Icing

Awesome icing! I only added one extra tsp of corn syrup & my cookies came out great with a nice sheen when they dried. Oh & I didn't have any almond extract around, so used vanilla & it tasted great.

Raspberry-Walnut Shortbread

I actually really enjoyed these bars & am really looking forward to what they will taste like after they have had a day or 2 to sit & the flavors to marry a little more. Made the recipe exactly as stated & loved how simple & easy it was; 20 minutes in the oven for both stages & they came out perfect. Would be great for a brunch or to accompany a heavy dinner since they are not heavy.

Cheesy Poppy Seed Bread

This was super good! I also liked that it was a little different from all of the other appetizers. I made a few changes to go with what I had & what not: 1) couldn't find sourdough, so used an Italian loaf. 2) Added in some garlic powder to the butter mix 3) used a little less than 1 lb of cheese. A little of this for sure goes a long way, and I don't even want to know how many calories I consumed but it recieved good reviews at the Halloween party I made it for tonight. THANKS FOR SHARING! :)

Frosty Freezer Pie

Really enjoyed this recipe and it was very popular at the function I took it to. Next time I will make sure to add a few raspberries on top for presentation as well as texture. This recipe is also a great way to do a lower fat dessert by using fat free sorbet, low fat cream cheese and low fat whipped topping. Used raspberry sorbet this time, but cannot wait to play around with the versatility of this recipe and try different flavors!

Key Lime Cheesecake II

I made this for V-day and my boyfriend LOVED it...so did not family and co workers when I brought in the leftovers the next day. Like others, i did not add the FULL amount of key lime since I am not too keen on very tart stuff and it turned out great...!!!

Banana Coffee Cake

This is a great coffee cake!!! I made this for an Easter brunch & it was extremely popular. I was sure to beat the cream cheese until very, very smooth so that there were no lumps & this helped produce a very light & moist cake. I added in 3 ripe bananas; the taste was sooo good and stood out well (which is what I was hoping for). Will for sure make again...

Green Grape Salad

Love this recipe! Since red grapes were on sale, I used them instead of green grapes. Originally I had intended on halving the recipe & did so with all of the ingredients except for the vanilla & cream cheese (just used one whole package of 1/3 less fat) on accident (oops). To make up for the overflow of cream cheese I made sure to add in a bit more pecans & the result came out soooo good. I have had versions of this salad before, but this is for sure my favorite. :)

Grilled Marinated Shrimp

Made this along with chicken kabobs for Mother's Day tonight & it was soooo good. I made a few slight changes due to what I had around the house: only used 10 oz of shrimp, used dried parsley, only used about 1/2 tbs of tobasco sauce (sensitive tummies, so I was worried about putting in too much), and subbed in ketchup for tomato paste (accidentally put in an extra tbs as well because I got distracted, oops). These shrimp were VERY GOOD, I had seconds and I am a big shell fish eater...thank you very much for sharing!! :)

Best One Pot Cheese and Macaroni

This was a tough recipe to rate. Would I serve this to guests for dinner? Probably not. Would I totally make this for a quick lunch for myself again? YES (especially because all of the ingredients are things I usually have sitting around the house anyways)! I reduced the recipe down to 1 serving for my lunch today & it went pretty well. I upped the noodles to 3/4 cup because I didn't use elbow noodles & so had to add more water. Once the noodles were done I just poured out the majority of the excess water. I added in a tbs of butter & melted it, then added in the milk as the recipe indicates. Once the cheeses were melted & the pepper added (skipped on the mustard) I tasted the macaroni & it seemed a little bland, so I added in a few dashes of hot sauce as well as sprinkled in just a bit of onion powder. This took the recipe from "okay" to "mmm...good". As far as easy & tasty lunches go, this one is a recipe I will make again!!
