Jean's Homemade Chicken Noodle Soup

I made this for my boyfriend when he was sick and took it over to his house and he and his 2 roomates had seconds (the one roomate came up from downstairs to see what smelled so good)!!! I did revise this a bit...I started by boiling a cornish hen in water w/the chopped up ginger root. While it boiled, I let the broth, water, veggies and spices simmer...I added rosemary,minced garlic, basil, alot of parsley and a touch of onion powder...it would have been REALLY bland w/o it. I took the advice of another user and proceeded to add some of the water from my boiled chicken/ginger to the mix (my boyfriend likes extra broth for his crackers)and extra noodles. I will for sure make this again...!!!

Baked Lemon-Basil Pasta

This was a hit tonight! I did double the chicken, , subbed butter for margarine, added extra garlic, and used just ground black pepper instead of lemon pepper. It came out tasting great - I subbed in multi grain pasta and no fat sour cream to feel a little less guilty. Thank you for sharing! :)

Roasted Soda Can Chicken

This chicken was super! I did not change much, just made a few alterations. I added an extra clove of garlic, let it sit in the fridge for about 2 hours after I rubbed it down so it could marinate a little & also added a little bit of cilantro to the lemon/soda can. Chicken turned out super moist & very, very tasty. Will totally make again! ***REVISION FROM 2/2009*** In response to the slightly obnoxious post below; I only had Sprite in a 2 liter, so pulled a can out of my recycle bin (which would apparently be a Diet Pepsi can), washed it out and threw the sprite in there. Sorry I didn't clarify before, but I didn't stop to think that people would 1) stare so hard and scrutinze a pic of roasted chicken and 2) actually feel the need to call someone out on a cooking website about it. Hope that clears things up for anyone who was confused!

Greek Avgolemono Chicken Soup

This was really good and just what I was looking for. The only thing that I did differently is when I bolied my chicken I added onion powder, garlic powder and some salt. I also added just a small pinch of Oregano to the soup when I added in the salt & pepper.

Raspberry Fudge Brownies

VERY good! I did make a few slight changes, but that was only because I was trying to use what I had around the house. Instead of raspberry jam I used cherry preserves & it turned out very yummy. Also, I added a little extra vanilla. The only other adjustment that I made was using milk chocolate chips instead of the mini chocolate chips (again, trying to use what I had around). Very rich! Next time I may try adding a bit more preserves/jam to the mix or omit the chocolate chips in order to have a lighter brownie that showcased the fruit flavor a little more. The suggestion for wetting your knife between slices was very useful or else I would have had a mess on my hands. Thank you Larkspur for submitting such a creative & tasty recipe!

Tangy Potato Salad

I was so excited to find a more authentic potato salad that didn't use mustard! I omitted the onions & tomatoes and only used 1 tsp of salt; the result was a very tasty dish. For the pickles I used 2 small ones that were homemade, so they were more like dilly cucumbers; tasted sooo good in this dish. The thought of using chicken stock turned me off at first, but it gave the dish a very nice flavor. I would totally recommend this recipe to anyone who loves potatoes & wants to try a different take on the potato salad!

Best One Pot Cheese and Macaroni

This was a tough recipe to rate. Would I serve this to guests for dinner? Probably not. Would I totally make this for a quick lunch for myself again? YES (especially because all of the ingredients are things I usually have sitting around the house anyways)! I reduced the recipe down to 1 serving for my lunch today & it went pretty well. I upped the noodles to 3/4 cup because I didn't use elbow noodles & so had to add more water. Once the noodles were done I just poured out the majority of the excess water. I added in a tbs of butter & melted it, then added in the milk as the recipe indicates. Once the cheeses were melted & the pepper added (skipped on the mustard) I tasted the macaroni & it seemed a little bland, so I added in a few dashes of hot sauce as well as sprinkled in just a bit of onion powder. This took the recipe from "okay" to "mmm...good". As far as easy & tasty lunches go, this one is a recipe I will make again!!

Herb Batter Bread

Very good bread!!! I agree, it does closely resemble the stuff you get at Macaroni Grill. The only changes I made to the recipe were to sub dill for thyme (I was out..oops) and also added on 1/2 tsp garlic powder. The bread was nice & crusty on the outside & chewy inside. Also, I love how there is no kneading invloved; this would be a very good recipe for someone who is just learning how to make bread. Thanks for sharing!! :)

Lime Cilantro Rice

VERY good rice & extremely easy to make. I love the rice at Qdoba & I was pleasantly suprised to find that this was *almost" just like it. There was a bit too much lime taste in it that sort of overpowered everything else at times (next time I will cut it down to 1 tsp), but all in all a very basic & easy recipe to follow that recieved rave reviews at my deck party. Thank you for sharing!! :)

Bananas Foster over Puff Pastry

This was a hit tonight at dessert!!! I did assemble mine slightly different. First, 3 of my bananas were ripe & 3 were still slightly green, so I threw the green bananas in the oven at 350 for 20 minutes and then let them cool. Once cooled I threw them into the KitchenAid mixer & beat them until smooth; then combined them into my sour cream mixture. I opted to make 4 very fat individual circles from 1 puff pastry sheet & topped each with the sour cream/banana mixture. I then sliced up only one of the ripe bananas and topped all 4 pastries with the slices (there were plenty of slices for each). Finally, once I made the rum sauce I spooned it evenly into 4 seperate bowls, placed the pastries and then dusted the tops with more cinnamon (as I wanted that flavor punched up a bit). I let them sit in the microwave until dinner was finished (to keep them warm) & then they were devoured by everyone come dessert. My only thought was that sometimes the flavor of rum was a bit strong in a few bites, so if you do not enjoy rum flavor I would probably cut back on it a little bit. All in all, it was a success & everyone loved the presentation as well as the taste! :)

Cayenne Pretzels

I have made these a few times now & found that I like them best when I use 1/2 cup evoo & 1/2 cup veggie oil, add a few dashes of worstechier sauce, use one 15 oz bag of pretzels, change out garlic salt for garlic powder & also let the pretzels sit in large bowl & just stir them every 20 minutes or so for about 2 hours and then bake at 250 for 15-20 minutes. Everyone who has tried these pretzels totally loves them!

Turkey Cranwich

YUM!!!!!!!! I made a few slight revisions to this sandwich that put it over the top. Instead of using bread, I used flour tortillas and made the sandwiches into roll ups. I also toasted the walnuts, used a spring mix instead of lettuce & used just plain jellied cranberry sauce (not with the whole berries), which I spread on over the cream cheese. I made my sister's first & she said it was good, but needed just a little oomph, so on my Mom's & mine I mixed a few drops of red wine vinegar in with the cream cheese. SOOOOO GOOD!!!!! My mother commented on how tasty lunch was & all 3 of us had no leftovers (that usually never happens).

Indiana's Finest Sweet Potato Casserole

This was insane! Okay, if you are watching you waistline, keep looking for a different recipe but if not then this is something I for sure recommend! The only change I made to the recipe was to add an extra 1/2 cup of pecans to the top. SOOO good! Everyone at dinner devoured it. I was worried it would be too sweet (and it was sugary), but it worked out really well in the end. YUM! :)

Creamy Thyme Spread

YUM! Super easy & tasty! I did cheap & used dry thyme & parsley...shameful as it is, it was more cost effective. The only other change I made was to add in a little garlic powder along with the minced garlic (hey, I am Italian). Tasted even better then next day - my 2 year old niece couldn't get enough of it! Thanks for sharing! :)

Corn N Cucumbers Salad

This is an awesome, straight forward salad that is nice, light & refreshing. The only change I made was to use a bunch of green onions instead of the white onion because I prefer the flavor. Even some of the kids at my dinner party enjoyed it, so that is a definite plus. Thank you for sharing!!! :)

Apple, Brie, and Walnut Salad

This salad was enjoyable and a nice switch up from the norm. I tossed my apples in a bit of lemon to keep them from getting brown. Next time I will probably use a little less vinegar, since my greens were sort of swimming in it. While toasting the walnuts I added a few tsps of sugar and really enjoyed the sweet taste with the tang of the vinegar and tartness of the apples. Also added a few more walnuts than the recipe called for and didn't use all of the apples, but that is just personal taste. For sure a salad that I would serve to guests.

Mushroom and Bacon Triangles

I made these for a vday party & they were really, really good but I think with a few adjustments could be great. Granted, I did not have thyme so I subbed tarragon instead. Next time I will add an extra clove of garlic, a little bit of pepper & more bacon. To get a nice, shiny gloss on the top I brushed my leftover egg over the pastries before baking. Finally, I did notice that my pastries were done about 5-7 minutes before the 20 minute time period, so make sure to keep an eye on them! :) Will make again with adjustments noted.

The Earl's Sandwich

I made the Chilled Russian Dressing from this site to put on this sandwich for lunch today & everything came out really well. The bite of the dressing,the american cheese & turkey all blended well together. Next time, I may add some lettuce just to add a refreshing crunch as well. Thanks for sharing!

Avocado Salad with Bacon and Sour Cream

SOOOO GOOD!!!!!! Ingredients wise, I followed the recipe to the "T", except used iceburg lettuce because that is what we had in the house. What a pretty presentation this salad makes & I think it would be even nicer with romaine. I mixed all of the dressing ingredients together (minus the avocados) and let it sit in the fridge for a few hours before serving. Just before dinner I then chopped up the avocados and very gently folded them into the sour cream mixture. My dad RAVED about this salad and said about 5 times how good it was; he never, ever does that! Thanks TXG for such a simple & tasty recipe!!! I plan on making this often. :)
