Peanut Butter Pie XVIII

Reviewed: May 20, 2009
This was very good, but extremely rich. I made a few adjustments; first of all I forgot to pick up fudge topping, so just subbed chocolate sauce & a few pieces of melted milk chocolate. In addition, I only used 16 Snickers fun size bars. Once I folded in the whipped topping, I also added in a few chuncks of Reese's pb cups that I had chopped up, just for texture. I used a deep dish graham cracker pie crust and had waaaayyyy too much filling; probably could have made 2 regular sized pies. Put the pie in the freezer for 5 hours and then swirled with chocolate sauce & topped with more chopped peanut butter cups. Everyone at dinner said it was really, really good (even my picky mother) & that is what I was hoping for! Just make sure to remember that a little slice of this pie goes a looonnnggg way. :)

Double-Peanut Double-Chocolate Chip Cookies

Reviewed: May 11, 2009
These cookies were decent, though the 20 minute cooking time is WAAAYYYY too long. I reduced the time to 15 minutes & after my cookies cooled thought that 10 minutes would have been better to achieve that crusty on the outside and chewy in the middle texture. The only other change I made to the recipe was to use milk chocolate chips instead of semi sweet. The taste was good, but I think next time I will use 2 cups of just peanut butter chips as I was hoping that flavor would pop just a bit more. I might make these again with these few slight adjustments... :)

Priceless Pecan Pie

Reviewed: May 10, 2009
This recipe is a great example that sometimes different is good. The flavor is a creamy twist on an old classic and once I wrapped my mind around that idea, found that I really enjoyed the dessert. The only change I made to the recipe was to use 1/3 cup brown sugar instead of white in the cream cheese mixture. I used a store bought deep dish pie crust & like other users ended up having an overflow. The only other observation I made was that it took closer to an hour for my pie to bake. Thanks for sharing such an awesome pecan pie recipe!!

Pumpkin Pie I

Reviewed: May 8, 2009
This is a VERY good pumpkin pie recipe! Not only was it simple, but it produced an extremely tasty & smooth filling. Didn't change one thing about the recipe; if I were to note anything it would be that my pie took closer to 45 minutes to bake through.

Pumpkin Butter I

Reviewed: May 8, 2009
WOW...that is about all I can say about this recipe. I made a batch to give to a friend because he is obsessed with pumpkin & just tried some on toast. It is soooooo good. I followed the directions exactly as stated; a very simple recipe that I will keep for future use come the fall. Next time I may half the recipe though, as it does make ALOT of it.

The Earl's Sandwich

Reviewed: May 7, 2009
I made the Chilled Russian Dressing from this site to put on this sandwich for lunch today & everything came out really well. The bite of the dressing, the american cheese & turkey all blended well together. Next time, I may add some lettuce just to add a refreshing crunch as well. Thanks for sharing!

Chilled Russian Salad Dressing

Reviewed: May 7, 2009
I made this dressing today to go on the Earls Sandwich from this sight. This dressing was actually really good! I am not sure if I would enjoy it on a salad or anything because it was a bit heavy, but what I did use it for turned out great. As I didn't have chili sauce I just subbed in some hot sauce. Also, I didn't have onions, so I just subbed onion powder instead. The taste of everything blended very well together & I enjoyed the bite of this dressing. If I make another recipe that calls for Russian Dressing, this will be my "go to".

Lime Chicken Soft Tacos

Reviewed: May 6, 2009
Honestly, this recipe "as written" is not all that spectacular. 20 minutes to saute the chicken was waaaayyyy too long & I had very dried out chicken. I doubled the amount of lime & added an extra clove of garlic, but it was still just "ok" to me. If I make this in the future I will make sure to follow the advice of throwing it all in a crock pot & shredding the chicken instead.

Strawberry Trifle

Reviewed: May 5, 2009
I made this for my Neice/God daughter's baptism party last weekend & it went over well. The slight variations I made were to omit the bananas & also used french vanilla pudding. I doubled the strawberries to accomodate the loss of the bananas & before adding them to the mix sprinkled a small amount of sugar over them after they were sliced up since they were a little tart. Loved how this turned out & also recieved alot of compliments on how pretty it looked. :)

Peanut Butter Cup Grilled Sandwich

Reviewed: Apr. 23, 2009
I was naughty today & tried this (with 2 other pb sandwich recipes for lunch...I just made small ones or each); it was VERY good! I made it on sourdough bread with milk chocolate chips, which was decent, but on the other half I added some cinnamon & it was great.

Grilled Cheese and Peanut Butter Sandwich

I went on a "weird pb sandwich" escapade today & tried this one. Made it on sourdough bread with sharp cheddar cheese & you know what...it was actually good! Hooray for trying new things! :)

Poor Man's Sandwich

Reviewed: Apr. 23, 2009
I don't know what got into me today (I am not pregnant, so cannot blame the weird craving on that), but I decided to try this recipe. Would you believe it is NOT gross like I thought it would be and that I actually really liked it??? I did use sourdough bread because that was what we had sitting around & omitted the onions because we didn't have any sitting around. I will make this again, even when I am not hurting to go grocery shopping. Who would have guessed...! :P

Tangy Cucumber and Avocado Salad

Reviewed: Apr. 22, 2009
I made this last night for my boyfriends family & everyone raved about it. It really is soooo good!!! This salad was easy to make, looks so pretty when it is done, is much better for you than a regular salad & tastes nice & refreshing. I put the salad together about 4 hours before guests arrived, but waited until about 30 minutes before serving to slice up the avocado & add it in because I didn't want it to brown up at all. To prevent it from getting mushy I just lightly tossed the salad with my hands. Other than that, made it just as the recipe specified & will continue to do so again & again & again...

Janet's Rich Banana Bread

Reviewed: Apr. 21, 2009
This was a decent bread recipe, but nothing too special. I wish it would have been a little more dense and had just a bit more banana flavor (I used 2 medium-large overripe bananas). I made 2 loaves & topped the 2nd with the banana crumb muffin topping (found on this site)& it helped out the bread. However, I think I will still stick with my mom's bread recipe.

Best One Pot Cheese and Macaroni

Reviewed: Apr. 20, 2009
This was a tough recipe to rate. Would I serve this to guests for dinner? Probably not. Would I totally make this for a quick lunch for myself again? YES (especially because all of the ingredients are things I usually have sitting around the house anyways)! I reduced the recipe down to 1 serving for my lunch today & it went pretty well. I upped the noodles to 3/4 cup because I didn't use elbow noodles & so had to add more water. Once the noodles were done I just poured out the majority of the excess water. I added in a tbs of butter & melted it, then added in the milk as the recipe indicates. Once the cheeses were melted & the pepper added (skipped on the mustard) I tasted the macaroni & it seemed a little bland, so I added in a few dashes of hot sauce as well as sprinkled in just a bit of onion powder. This took the recipe from "okay" to "mmm...good". As far as easy & tasty lunches go, this one is a recipe I will make again!!

Corn Dip

Reviewed: Apr. 20, 2009
This dip received all 5 stars because it tasted great, was sooo easy to make, was done in 10 minutes & garnered lots of compliments at the backyard bbqI took it to. My boyfriend accidentally purchased the Southwest style corn (bless his heart, he tried), so there were black beans in it but they actually worked really well. Other than that, I made the recipe exactly as written & served it with tortilla scoops. Thanks for sharing - will be making again!

Green Grape Salad

Reviewed: Apr. 15, 2009
Love this recipe! Since red grapes were on sale, I used them instead of green grapes. Originally I had intended on halving the recipe & did so with all of the ingredients except for the vanilla & cream cheese (just used one whole package of 1/3 less fat) on accident (oops). To make up for the overflow of cream cheese I made sure to add in a bit more pecans & the result came out soooo good. I have had versions of this salad before, but this is for sure my favorite. :)

Real Welsh Rarebit

Reviewed: Apr. 15, 2009
I had never had rarebit before, but found it to be very tasty! For us, the use of beer (Dos Equis) is what really made it for us because of the great bite it added. Since I am not a fan of mustard, I omitted it, but other than that made the recipe exactly as specified. I scaled down the recipe to 4 servings and that was PLENTY for cover 4 english muffin halves. Oddly enough, my favorite way to use the rarebit was over my scrambled eggs that we served along with the toasted english muffins smothered in the sauce. Thanks for sharing...I will for sure be adding this one to the rotation for a simple & filling breakfast!!!

Lemon Thyme Rice

Reviewed: Apr. 15, 2009
This rice was very good & everyone at the table enjoyed it. The only modification made to the recipe was that I added in an extra tbs of butter when browning the rice. Enjoyed the nice subtle taste of lemon in with the rice...thanks for sharing! :)
