Crunchy Pumpkin Pie Granola

I may never buy store bought granola again! This is a great recipe & I love how easy it was to make. Instead of regular applesauce, I used the cinnamon stuff because that is what we had. Baked this at 300 degrees on the convection setting for 1 hour & it came out just right. LOVE the flavors!!! Yeah, it doesn't really taste like pumpkin pie, but it is still sooo good. It smells awesome while it is baking too! For my own personal preferance I think next time I will skip on the cranberries & add just up the raisins, but that is just to suite my own personal taste. Thanks bg for such a great recipe!!

Lemon Streusel Muffins

Wow, these are really, really good! I cut the servings down to 3 & got 6 petite(not bite sized, just not large) muffins out of it. I did double the amount of lemon juice the recipe called for & the flavor pops right out. Like a dunce, I forgot to add in the egg white (duh!!!) & didn't notice until too late but my muffins still came out very fluffy & moist. Next time I might add a little bit of nutmeg to the actual batter because I wanted a touch more of that flavor to compliment the lemon, but that is just a personal preferance. For the topping I used chopped walnuts because that is what we had around the house & I liked them alot. Like others, my struesel didn't really stay together well, but it was still yummy. I have a feeling the muffins are not going to last the day... ;) Thanks for the wonderful recipe!!!

Peanut Butter and Honey Sandwich

I eat this alot when I am dieting with all natural pb (or almond butter too) on multi grain bread; omitting the butter. Sometimes I add in sliced bananas as well...very tasty! :)

Marinated Pretzels

Very good & very easy recipe. I used 1/2 a bag of pretzels, a .75 ounce packet of ranch drssing mix and 1 1/2 tbs of the seasonings; everything came out tasting really good. Since my family is big on garlic, I might up that a little more next time (it's not "just right" unless you stink like it all day, lol). I used the smaller waffle pretzels & 6 minutes was PLENTY of time to bake them, I am guessing the 10 minute timing probably pertains to the larger sourdough pretzels that the author of the recipe suggests using. In any case, thanks for sharing a cheap & easy snack recipe! :)

Breaded Toasted Ravioli

These were tasty; I scaled the recipe down to make a snack for myself today. I too dredged my ravioli in flour before doing the egg wash (and I used my whole egg), then dipped in the bread mixture. Since the recipe didn't specify, I used Italian bread crumbs. Didn't have cooking spray, so I skipped that step. Maybe that was why the majority of mine puffed way up??? In any case, the ones that puffed up like that ended up being slightly tough, but tasty nonetheless. I dipped them in some leftover homeade alfredo sauce that from last night's dinner. They were good for a quick little snack... :)

Italian Dressing Mix

This was my first attempt at making my own salad dressing & it turned out pretty well. I scaled the recipe down to 2 servings (which made about 2 tbs) & that was plenty to cover an entire spinach salad. I didn't have any celery salt, but other than that made it exactly as directed. For my personal taste, I think next time I will scale back on the oil a bit & up the vinegar a tad. All in all, a good dressing and nice because I knew there were no preservatives or anything. :)

Jackie's Vodka Sauce

Pretty good sauce! My friend requested vodka sauce for her bday & I was bored with my old recipe. I doubled this recipe & only made a few minor additions. When cooking my garlic & onions I added in a few handfuls of pancetta. Also, added 2 bay leaves, some basil and extra garlic. The sauce was left to simmer for 2.5 hours & came out with a nice, tangy flavor. It tasted great, but it really didn't taste like the vodka sauce I usually make & I think some were disappointed a bit. However, it was good & worth trying... :)

Italian Spinach Salad

This was a very simple & enjoyable salad that when finished looks so pretty. I did add an extra hard boiled egg (one just wasn't cutting it) & an extra piece of bacon (I had 4 to use up, so I figured it couldn't hurt). I served this with the Italian Salad Dressing Mix from AR & it was a hit with the gals...the guys didn't really touch it, but I expected that would happed anyways. ;) Thanks for sharing...will make this one again...!!

Polvorones de Canele (Cinnamon Cookies)

These were the hit of the night at my Mexican themed deck party last night. I loved how easy they were to make & they were nice & light which was great after a VERY filling meal. I accidentally cooked one batch longer & so I would say to anyone who makes these, make sure to only bake for 15-16 minutes so that they are still super soft in the middle. Overall, loved the texture and flavor...thank you so much for sharing this delightful recipe! :)

Fresh Tomato Salsa

I could not for the life of my find seranno chile's at Krogers, so picked up a large jalapeno instead. I used 4 roma tomatoes instead of 3, since they were on the smaller side. Also, I added 2 cloves of garlic as well, just to up the taste a bit. Everyone LOVED this recipe at my Mexican themed dinner party last night; a big success! Thank you so much for sharing...

Lime Cilantro Rice

VERY good rice & extremely easy to make. I love the rice at Qdoba & I was pleasantly suprised to find that this was *almost" just like it. There was a bit too much lime taste in it that sort of overpowered everything else at times (next time I will cut it down to 1 tsp), but all in all a very basic & easy recipe to follow that recieved rave reviews at my deck party. Thank you for sharing!! :)

Beef and Bean Chimichangas

These were pretty good & everyone enjoyed them at my Mexican themed deck party last night (and it was before the tequilla started flowing, so I know it was a genuine like for the food, lol). I followed the recipe exactly as written, except that I buttered both the front & back of the chimichanga's; needed 4 tbs to do so). Since I had never made chimichanga's before, I was super nervous these could easily turn into chimi-wronga's, but it was pretty cut & dry. If I were to note anything, it would be that I would probably put a little bit more seasoning in the meat as well as a clove of garlic or two. All in all, great (and filling) recipe...thanks for sharing!

Boiled Bagels

I never knew it was this easy to make my own bagels!!! :) I followed the recipe exactly when assembling the ingredients and formed them into 8 bagels that I let rise for 30 minutes. I then boiled them in water with the sugar & a tbs of molasses and baked them for 30 minutes on a cookie sheet greased with vegetable oil. They turned out perfectly with a crunchy exterior and soft in the middle!!! I made 2 plain ones, 2 with melted asiago cheese on top (which I guess I should have put on about 1/2way through, since it got super brown...oops), 2 with garlic salt sprinkled on them and then the rest (MY FAVE) I dipped into a mixture of dill, thyme, basil, oregano, garlic powder and grated parmesan. Honestly, I am so proud of how these guys turned out and plan on making them again soon and playing with all of the fun possibilities.

Chocolate Pudding Fudge Cake

This cake is okay, but I am ticked because the cook time was waaaaayyyyy off & caused me to be very late to the event I was taking it to. Also, it started to get slightly browned on the outside & was still pratially jiggly in the middle; though I did use a bundt pan as specified and cooked it at 350. Due to this fact, I removed it from the oven (hoping it was done for the most part) and the whole thing fell apart into a huge blob. Meh. :( On a positive note, it tasted pretty good, but I am still pretty bitter over the ordeal...

Raspberry Cheesecake Stuffed French Toast

This french toast is so wrong, but sooo good! Instead of raspberry puree I just used a little less than a cup of raspberry jam & it was really good. Cut up a loaf of Italian bread I had sitting around & used that to make this for brunch today; it was VERY well recieved. I did cup the white sugar down to 1/2 a cup & also sprinkled some nutmeg into the milk/egg mixture. Loved the end result, if I were to note anything it would be that I would like a little more cream cheese flavor next time. :) Thanks for sharing such a great recipe!!!

Chunky Monkey Pancakes

I made these for breakfast today & really enjoyed them! I only had 2 small bananas around, so used both of them. Also, I didn't fold the chocolate chips into the batter, but just sprkinled them on top of half of the pancakes as they were cooking so that I had some with and some without the chips. This was my first time making pancakes from scratch & the batter was more runny than the box kind, but they turned out REALLY good and tasted great. I actually enjoyed the ones with the chocolate chips in them better, but I have a sweet tooth. I just used my 1/4 measuring cup to dole out the batter onto the skillet and was able to make 4 pancakes at a time. Thanks for sharing this superb recipe crazycatlady!!!

Grilled Chicken Kabobs

We have a winner!!!!!! I made the marinade exactly as written, except used 6 cloves of garlic because my family are the type of people that put garlic on our garlic. Made it into kabobs with mushrooms and green & red peppers and everything was DEVOURED! Thanks for making me look good in front of the family by sharing this recipe Sharon H!!! :)

Bananas Foster over Puff Pastry

This was a hit tonight at dessert!!! I did assemble mine slightly different. First, 3 of my bananas were ripe & 3 were still slightly green, so I threw the green bananas in the oven at 350 for 20 minutes and then let them cool. Once cooled I threw them into the KitchenAid mixer & beat them until smooth; then combined them into my sour cream mixture. I opted to make 4 very fat individual circles from 1 puff pastry sheet & topped each with the sour cream/banana mixture. I then sliced up only one of the ripe bananas and topped all 4 pastries with the slices (there were plenty of slices for each). Finally, once I made the rum sauce I spooned it evenly into 4 seperate bowls, placed the pastries and then dusted the tops with more cinnamon (as I wanted that flavor punched up a bit). I let them sit in the microwave until dinner was finished (to keep them warm) & then they were devoured by everyone come dessert. My only thought was that sometimes the flavor of rum was a bit strong in a few bites, so if you do not enjoy rum flavor I would probably cut back on it a little bit. All in all, it was a success & everyone loved the presentation as well as the taste! :)

Refreshing Watermelon Salad

Hmmm...this is a tough one for me to rate. I made this to accompany dinner tonight & it was not well recieved, though I thought it was decent. When throwing it together I measured out the cilantro but only used 1/2 a watermelon and one big english cucumber & decided that was good enough. I also reduced the amount of feta to 6 oz and the amount of lime juice to 2 tbs. As no one in our family is really a fan of red onions, I just omitted them altogether. My suggestion would be to anyone who makes this salad, try to assemble it as close to meal time as possible because my watermelon ran ALOT & it looked more like soup by dinner time. Not too appealing, though beforehand it was very attractive. My sister wouldn't touch it at dinner & my parents said it was "okay" and that I didn't need to make this one again. I sort of felt the same...it was good, but not great like I was hoping.

Herb Rolls

This recipe is for sure a 5 star because it was very good as well as VERY easy. I made these rolls tonight for dinner & my only complaint is that the cook time was a bit off; mine took more like 15-17 minutes to cook because (even though the top was getting brown) the sides didn't seem to want to bake through. My entire family devoured them tonight & I will be making this recipe again & again. YUM! :)
