Tortellini Salad

Loved that it was so good and super easy to throw together. I did double to cheese, omit the olives (hate them) & onions (the store was out of green onions...seriously...) and add in some garlic powder to the dressing. It was a hit at the BBQ I took it to, thank you for sharing! :)

Baked Lemon-Basil Pasta

This was a hit tonight! I did double the chicken, , subbed butter for margarine, added extra garlic, and used just ground black pepper instead of lemon pepper. It came out tasting great - I subbed in multi grain pasta and no fat sour cream to feel a little less guilty. Thank you for sharing! :)

Spinach with Apples and Pine Nuts

Very good & I love that it is a simple, tasty way to eat healthy foods. I followed the recipe exactly, but wish I would have gone with my gut to toast the pine nuts first. Oh well, next time! Thank you for sharing! :)

Sweet and Spicy Sweet Potatoes

I admit that I am already partial to sweet potatoes, so that might be part of the 5 star rating. ;) The only alteration I made to this recipe was to omit the paprika because I didn't have any (oops). Next time I will make sure to make my cubes a bit smaller so that I get a bit more of the crunch I like with oven potatoes. I also might omit the brown sugar too since I don't think they really need it all that much and I am trying to watch what I eat. I like the addition of poultry seasoning, it gives the taters a little extra "something". Thanks for sharing this extremely easy & pretty healthy recipe!

Grilled Marinated Shrimp

Made this along with chicken kabobs for Mother's Day tonight & it was soooo good. I made a few slight changes due to what I had around the house: only used 10 oz of shrimp, used dried parsley, only used about 1/2 tbs of tobasco sauce (sensitive tummies, so I was worried about putting in too much), and subbed in ketchup for tomato paste (accidentally put in an extra tbs as well because I got distracted, oops). These shrimp were VERY GOOD, I had seconds and I am a big shell fish eater...thank you very much for sharing!! :)

Yummy Honey Chicken Kabobs

I made this for Mother's Day tonight and she commented that it is some of the best chicken I have thrown together. I did make a few slight revisions: used 4 chicken breasts but kept the measurements the same for everything else, subbed evoo for veggie oil, added an extra 3 cloves of garlic (that's standard in my fam) and didn't add in the veggies to the marinade. Poked holes in the chicken breasts, cut them into chunks, mixed into the marinade, and then let sit for 5.5 hours before grilling. Loved that the soy/honey mixture almost left a sort of glaze on the chicken. Thank you for sharing!! :)

Cayenne Pretzels

I have made these a few times now & found that I like them best when I use 1/2 cup evoo & 1/2 cup veggie oil, add a few dashes of worstechier sauce, use one 15 oz bag of pretzels, change out garlic salt for garlic powder & also let the pretzels sit in large bowl & just stir them every 20 minutes or so for about 2 hours and then bake at 250 for 15-20 minutes. Everyone who has tried these pretzels totally loves them!

Cornbread Salad

Sorry for the really low rating, but I had to because not one person out of 20 liked this salad at the bbq I threw. Usually, I use the Cornbread Salad I from this site and it always gets rave reviews, but this recipe fell way short. I did omit the green chilies (kids) & sage (didn't have any), but otherwise followed the recipe as stated - assembled the night before & let sit until the bbq the next afternoon. The flavors weren't cohesive & it was "just ok". :(

Ham and Pineapple Pinwheels

I dug these, they were different & really tasty. As most of the other reviewers, I could not find pineapple cream cheese. I just purchased plain cream cheese & whipped it up with my KitchenAid. I strained my can of crushed pineapple really, really well & then actually threw it all in the KitcheAid with the cream cheese & blended it all together. Then I rolled them up tightly in saran wrap and threw them in the fridge & didn't cut them up until right before the party. Very cheap, super easy & went over well at the bday party I took them to. Next time I might add in a bit more ham, but that is all a personal preferance. Thanks for sharing! :)

Yogurt Spinach Dip

Honestly, I would have given this 2 stars, but some of my guy friends liked it (but they think frozen pizza is a gourmet dinner, soooo....). The only changes I made were to omit the mustard, used garlic powder instead of garlic salt, and used frozen spinach. The recipe was so runny & mostly tasted like seasoning salt. :(

Perfect Pumpkin Pie

Ok, I did mess up the recipe a little bit. Instead of sc milk, I accidentally threw in 12 oz of evaporated milk. Oops. So, to compensate I tossed in 3/4 cup white sugar. Other than that, followed the recipe exactly. I took this to a friend and he & another guy devoured the whole pie before anyone else could even call dibs on a piece. Apparently, it was pretty darn good. ;)

Spicy Party Pretzels

A-MAZ-ING! I made these to take to a party last night & they were gone in a heartbeat. EVERYONE loved them and kept looking for the "crack in pretzel form". Yeah, they were seriously addicting. The changes I made were very minimal. First, I didn't realize my stock of veggie oil was low, so I used 1/2 a cup of that and 1/2 a cup of evoo. I mixed together all of the ingredients in a large bowl and let sit for 2.5 hours (stirring occassionally). After that time period the oils had soaked in, so I put the pretzels in the oven at 250 for 35 minutes & they came out PERFECT (I did stir them once or twice while they were in there). Honestly, you can't get much easier or cost friendly than this recipe. Next time the only thing I will do differently is to make sure I make a double batch. :)

Apricot Danish Coffee Cake

I took this to Easter breakfast this morning and it was well recieved. It did look very pretty when it was done. Per other suggestions I did add in some nutmeg, cinnamon & vanilla to the batter. Also, I used 4 tsp as opposed to 2 for the glaze and subbed in the apricot juice instead of water for more of an apricot "pop". THANK YOU for sharing! :)

Make Ahead Breakfast Casserole

AWE-SOME! I took this to a church breakfast this morning and it was gone in a flash. I had multiple people come up to me and ask for the recipe. The spicy pork sausage and addition of mushroom soup are what I really think put it over the top. The slight changes I made are as follows: * Added an extra egg. * Omitted the mustard (hate the stuff) and subbed in some onion powder, white pepper and crushed black pepper. * Skipped on the canned mushrooms and instead used some thawed chopped broc. * Used low fat mozzarella in place of the monterey because the grocer was all out (go figure). The Best Lemon Bars

I made these bars exactly as the recipe stated & they were pretty darn good. Next time I might take some of the advice and add in more lemon. As with most bars, these tasted the best about 2 days after I actually made them. My only complaint is that I had a hard time with cutting them because the topping kept trying to seperate from the shortbread. Thanks for sharing! :)

French Vanilla Cream Puffs

These were pretty good. I made them using banana cream pudding instead of vanilla & also halved the amount of chips. My only complaint really is that I made them the night before the engagement party I was hosting and they did get a bit soggy. My bad. Thanks for sharing!! :)

Roasted Garlic Bread

YUM! I made this exactly as written (opted out on the parm cheese...oh & I used just dried parsley) and it came out wonderful. The only thing I would complain about is that the top browned up before the rest of my bread was anywhere near toasted, so next time I will probably toast my bread a little before broiling. Thank you for sharing!!! Loved how easy, elegant looking & tasty this bread was! :)

Pasta with Asparagus

This is a great meal for something quick, easy & on the healthier side. I did double the chicken broth, add in a zucchini, some garlic powder, salt, pepper & Italian seasoning and also added in the red pepper flakes while everything was sauteing. Thanks for sharing a ver simple & tasty meal! :)

Sugar Cream Pie I

There's not much to say about this pie; followed the recipe exactly as written & took it to a church potluck tonight. It was gone in a flash & I recieved numerous compliments on it! My only complaint is that a portion of the crust did get burned when I broiled it...wish I would have read the reviews first. :( MAKE SURE TO COVER YOUR PIE CRUST!!! Thanks for sharing such a SUPER EASY recipe! :)
