Nutty Goat Cheese Bites

These were pretty good, but probably one of the more unpopular appetizers that I served at the wine tasting event I took them to. However, that might be more because goat cheese is an acquired taste, soooo....yeah. Anyways, I did change things around a little: 1) toasted the pecans first and then just mixed them in with the cheese 2) chooped up the grapes and sprinkled them on top of the spread cheese 3) added just a little dill over the top of the bites to give it some color. Easy OREO Truffles

I want to hate these evil little things because they were a good amount of effort, but they were TOO GOOD! Made the truffles exactly as the recipe indicated (though I did chill them before dipping them in the chocolate) & took them to a wine tasting event. At least 10 people came up to me and told me they were amazing (they went reaaaallly well paired with a chanti the wine house was serving) - thanks for sharing! :)

Capicola Canapes

Easy & tasty! My deli was out of Capicola (seriously), so I had to use Pastrami, but it was still awesome. Other than that, made the recipe exactly as indicated. Took these bad boys to a wine tasting event & not only did I not come home with a single one, but I also didn't even get to try one at the winery (thankfully I snuck one beforehand, lol)!

Creamy Thyme Spread

YUM! Super easy & tasty! I did cheap & used dry thyme & parsley...shameful as it is, it was more cost effective. The only other change I made was to add in a little garlic powder along with the minced garlic (hey, I am Italian). Tasted even better then next day - my 2 year old niece couldn't get enough of it! Thanks for sharing! :)

Maple Pecan Shortbread Squares

I also doubled this recipe & just used a 9 x 13 pan to bake it in. I did cheat and used just regular lite butter flavored Aunt Jemima syrup, but it was REALLY good. The added butter flavor with just a hint of maple made it tast sort of like a gooey, chewy, really tasty butter pecan deal. They have been around for 3 days now & have just gotten softer & better tasting with age. Very easy recipe & went over well at the wine tasting I took it to. Thank you for sharing! :)

Ali's Greek Tortellini Salad

I made this salad for a wine tasting event & it was well recieved by the people who tasted it. I did make a few *small* changes: 1) doubled the recipe, but still only used 1 lb of spinach, 1/2 cup onion and about 1.5 cups of feta 2) subbed garlic salt for the regular salt 3) shredded the eggs and just mixed them into the salad. It has been sitting for 3 days now, and it is REALLY good today. Thanks for sharing! :)

Pumpkin Crunch Cake

SOOO GOOD! The only change I made was subbed the cup of margarine for 1/2 cup of butter because 1) I didn't have margarine and 2) 1 cup seemed like a little bit of overkill. This was so rich, delicious & easy to make. Everyone at the church function I took it to really enjoyed it. THANK YOU for sharing! :)

Greek Salad I

This turned out pretty good. I made the following changes: 1) added garlic powder, an extra tsp of oregano, 1 tsp of sugar(to cut the acidity from the lemon), and 2 TBS red wine vingear to the dressing. 2) Subbed chickpeas for the olives due to personal taste. 3) Only used 1/2 of the red onion because it seemed like plenty. 4) Let my dressing sit for a few hours before adding it to the salad so the ingredients could "get to know each other" a little better. I appreciate how HEALTHY the salad is, and that it was very quick & easy to make. Thanks for sharing!

Bacon Chicken and Dumplings

I give this recipe a good, solid 4.5 rating. First, it wasn't the prettiest of all soups to look at but that isn't really a big deal. I really did enjoy the flavors and it had everything I love - bacon (YES!!!!), dumplings (hooray for carbs) and taters (hooray for even more carbs). After tasting the broth though, I did add in alot more flavors to the mix because it was coming off a little bland to me, so I threw in some white pepper, alot of garlic and a bit of celery seed. This is a good, hearty stick to your ribs soup and a little goes a loooonnnnggg way. I made it for a group of friends, and they all agreed it was tasty. Thanks for sharing! :)

Simple Spinach Salad

LOVED IT! The changes I made were minimal: 1) omitted the bacon (even though I adore the best meat ever, we had a vegetarian eating with us), 2) used regular raisins instead of golden 3) added in a handful of flaxseed (it doesn't change anything taste wise, it's just standard for me when eating a salad because it's a quick & easy way to get some fiber & omega's). Next time I want to try and sub in greek yogurt for the mayo to see what it tastes like (and then I won't feel quite so guilty, lol) and might cut back the sugar just a smidge too. All 5 of the people who were eating dinner really enjoyed this salad - thanks for sharing! :)

Light Wheat Rolls

These were wonderful! I assembled the ingredients as instructed, but instead of doing the whole muffin tin fiasco I just divided the dough into 24 equal parts and rolled it out and and baked on oiled cookie sheets. Oh, and did an egg wash instead of brushing butter over the dough bals. Everyone at dinner loved them. Time consuming, yes....but totaly worth it. Thanks for sharing!!! :)

Mexican Bean and Rice Salad

This is a pretty good recipe, though next time I might add a little evoo. The changes I made were minimal: 1) used a single serano pepper insead of 2 jalapeno's because the store was out 2) Upped the cilantro to 1/2 cup because I love the stuff 3) reduced the rice to 1 cup to cut back on some of the carbs 4) only used 1/2 of a red onion 5) accidentally omitted the lime zest, 6) subbed 2 tsps of garlic powder for the minced garlic (and next time will probably actually add even more 7) omitted the salt 8) added in some cracked black pepper. This is a fiber rich meal that is great for me when I am flying because it travels well & I can eat healthier as opposed to picking up a burger during a layover. However, I still prefer the Nutty Brown Rice Salad on this site ALOT more than this recipe. Thanks though for sharing!

Garlicky Baked Butternut Squash

This is a fairly good dish. I'm trying to watch what I eat, as well as get more veggies/fruits into my diet, so this was dinner tonight. I only used 1 tbs of dried parsley as opposed to 2 tbs fresh & added an extra clove of garlic (which is standard when I cook, lol). Wasn't sure when to add the parmesan, so just added a few dashes right after I took the squash out of the oven. Thanks for sharing!

Baked Kale Chips

I am a flight attendant, and eating right on the road is NOT an easy thing to do. I love this recipe because I can just whip it up, throw it in some tupperware and take it with me when I fly, for a low calorie snack. I've found that the best way (for my taste) to make these is using dinosaur kale, following the rest of the directions as stated, and adding in a few dashes of Cayenne Pepper for some zip. THANK YOU for sharing (my waist line thanks you too)!! :)

Libby's® Famous Pumpkin Pie

I made this pie as called for, with the deviation of adding the puree, spices and salt to a pot and warming them over the stove on medium heat and then cooling in the frige prior to making the pie. It makes a world of difference! My pumpkin pie addicted friend said that this was the best one I had ever made. It turned out super moist and looked nice with no cracks (I let it cool in the oven for a bit before pulling it out). Thanks for sharing!

Jagerschnitzel

The weather is starting to cool off here and it was the perfect day for some comfort food....soooo....Jagerschnitzel it was! I did use fresh mushrooms instead of canned and subbed the beef broth for the buillion. The only other change I made was accidentally omitted the onions and subbed onion powder instead because I am a dunce and forgot to grab one at the store. It was extremely good and tasted just like the kind I get at the authentic German restaurant down the road. I made sure to pound the pork very, very thin and served it with fried potatoes and apple sauce. Thanks for sharing! :)

Fabulous Zucchini Grinders

All 3 of us were super underwhelmed by these grinders & I even added mushrooms, italian seasoning, red onion to one of them (which helped a little) and some grated parm cheese & it was still just missing something. Sorry for the low rating, but this just wasn't at all what I was expecting. :(

Nutty Brown Rice Salad

SOOOOOO good!!! I am trying to watch what I eat and this fit the bill, plus it is super tasty. The changes I made were: 1) omitted the mushrooms 2) didn't have a yellow bell pepper, so just chopped up 1 whole green pepper and 1 whole red pepper and used them 3) added in a little bit of garlic salt 4) doubled the evoo and dressing per other reviews 5) used black beans as opposed to kidney beans 6) used sliced almonds (and probably had a bit more than 2 tbs). It's easy to throw together and now I will have lunch on hand for the next few days. THANK YOU for sharing such a delicious & nutrient dense recipe!

Easy Meatloaf

For meatloaf, this was pretty good. Per other reviews I made the following changes: sauted the onions in some butter before adding to the meat mixture; used italian bread crumbs; added 1 tbs of worstechier sauce; added in some garlic powder; doubled the sauce (I did omit the mustard too, but that's because I hate the stuff, lol). Thanks for sharing! :)
