Pillow-Soft Dinner Rolls

Reviewed: Mar. 4, 2009
Halved the recipe and on the second rise followed the directions for the Garlic Bubble Ring on this site and baked in a 9 x 13 and it came out very delicious. The only change I will make next time is to use butter flavored shortening per other reviewers, to punch up the taste of the rolls a little. Love how easy these were to make.

Apple, Brie, and Walnut Salad

Reviewed: Mar. 3, 2009
This salad was enjoyable and a nice switch up from the norm. I tossed my apples in a bit of lemon to keep them from getting brown. Next time I will probably use a little less vinegar, since my greens were sort of swimming in it. While toasting the walnuts I added a few tsps of sugar and really enjoyed the sweet taste with the tang of the vinegar and tartness of the apples. Also added a few more walnuts than the recipe called for and didn't use all of the apples, but that is just personal taste. For sure a salad that I would serve to guests.

Famous Restaurant Alfredo Sauce

Reviewed: Mar. 3, 2009
I have made this a few times now and found the best way is to add 2-3 cloves of garlic, some black pepper and a few pinches of fresh nutmeg.

Cookies 'N' Cream Pie

Reviewed: Mar. 3, 2009
This recipe earned it's five stars because it was not only soooo easy but also tasted like it took effort. I was liberal with the oreo cookies and added a little more than a cup to the pudding mixture and also sprinkled crushed oreos over the top before freezing for a better presentation. Accidentally grabbed french vanilla pudding, but glad I did due to the fact that it came out nice and rich. This recipe is a keeper and I will for sure be making it again!

Easy Creamy Peppercorn Chicken

Reviewed: Mar. 3, 2009
This chicken was okay, but nothing to write home about. I cut the recipe in half, but still used the full amount of gravy and soup and glad for that choice since it completely smothered the chicken. Like others, I could not find peppercorn graxy, so had to use country gravy with tons of fresh cracked pepper mixed in. Per the advice of another user I rubbed seasoning salt over each piece of chicken before adding the rest of the ingredients and it still came out bland. Granted, for the amount of ingredients I was not expecting anything too mind blowing, but this fell short. It was not bad tasting, but probably will not make it again.

Grandma Reid's Stuffing

Reviewed: Mar. 3, 2009
This was a very good stuffing; just old fashioned with no frills. Changes made are as follows --- used sage pork sausage instead of adding in the 2 tsp of the spice at the end --- only used 1 large granny smith apple ---* the onion used was very large, so only put 1/2 of it in --* doubled the amount of poultry seasoning --- * placed in a 9 x 13 pan and poured a 14 oz. can of chicken broth over the top to keep moist ---* covered w/aluminum foil and baked at 325 degree for 30 minutes, then upped the temp to 350, removed the foil, stirred it and baked for another 30 minutes. Stuffing came out very moist with a crunchy exterior, just the way I like it. Next time I might add in a bay leaf or 2 as well.

Rosemary-Butter Sauce

Reviewed: Feb. 27, 2009
This was just "ok" to me; it mostly just tasted like white wine & I didn't get any of the rosemary taste at all. Used this over some homemade noodles & it didn't thicken up at all after 15 minutes of letting it reduce, so I added a good amount of cornstarch to it. I also added some fresh thyme & still it just didn't "work" for me. Everyone at dinner agreed it was missing something.

Parmesan Herb Bread

Reviewed: Feb. 27, 2009
This bread turned out pretty good, it looked very nice when it came out of the oven & smelled awesome while it was baking. The only alteration I made was to use an asiago/romano/parmesan cheese combo. Next time the only thing I will do differently is to maybe let it cook for just 2 or 3 minutes longer in hopes that it wil crisp up more.

Cream Puff Cake

Reviewed: Feb. 25, 2009
Pretty good! Made this for a church function & didn't have any leftover. Next time I think I would prefer a little less filling, but that is just a personal taste. The only change I made to this was that I added 1/2 tsp of vanilla to the pudding/milk mixture because I wanted to really punch up that flavor. I beat the cream cheese until it was smooth & then (per other reviews) slowly added in the milk; turned out great with no lumps.

Bread Pudding II

Reviewed: Feb. 23, 2009
Very good basic bread pudding. I used leftover rolls from the Virginia Box Bread recipe on this site. The only changes I made were to add about a tsp of cinnamon to the egg mixture & used twice the amount of brown sugar on top. Oh, I also added just a little bit of lemon zest to the egg mixture as well. Will be making again & playing with the versatility of the recipe!

Chantal's New York Cheesecake

Reviewed: Feb. 20, 2009
Very good cheesecake! The only changes I made were that I used cinnoman graham crackers & also halved the recipe & made in a smaller pan. By following the directions exactly & making sure not to overmix my cheesecake came out without a single crack (and I didn't even use a water bath). Next time the only thing I will do differently is to add more butter to the graham cracker crust so that it sets up a little sturdier.

Authentic German Potato Salad

Reviewed: Feb. 18, 2009
Sooo good! The only thing I did differently was to throw the finished product in the oven at 350 for about 10 minutes. Oh & I only used about 1/4 of an onion, but that is only because I am not a big fan. Will totally make again...

Roast Beef Stuffed Shells

Reviewed: Feb. 18, 2009
These were awesome! The only thing that I did not do was used less gravy, but that is only because I am not a huge gravy eater. Loved how easy they were. Next time I am thinking about adding a little bacon to the mix, but these are great "as is".

Pumpkin Swirl Bread

Reviewed: Feb. 17, 2009
Really enjoyed this bread! The only adjustments I made where subbed 1/2 cup of the white sugar for brown, used 1/2 tsp of nutmeg instead of 1/4 & instead of 1/3 cup of water used whole milk. I wish I would have swirled the cream cheese mixture more because even after a few slices through it came out as more of a layer than swirls (my own fault).

BUSH'S® Spicy Black Bean Fritters with Cilantro Ranch Dip

Reviewed: Feb. 16, 2009
These weren't bad, but they were not good either. Deep fried them & then baked them as the recipe specified & they were just greasy on the outside (even though I did drain them on the paper towel) & the inside was too dry. For the amount of work that went into making these fritters they were nothing special. Of the 3 people eating them, everyone agreed that they were sort of "blah".

Roasted Soda Can Chicken

Reviewed: Feb. 16, 2009
This chicken was super! I did not change much, just made a few alterations. I added an extra clove of garlic, let it sit in the fridge for about 2 hours after I rubbed it down so it could marinate a little & also added a little bit of cilantro to the lemon/soda can. Chicken turned out super moist & very, very tasty. Will totally make again! ***REVISION FROM 2/2009*** In response to the slightly obnoxious post below; I only had Sprite in a 2 liter, so pulled a can out of my recycle bin (which would apparently be a Diet Pepsi can), washed it out and threw the sprite in there. Sorry I didn't clarify before, but I didn't stop to think that people would 1) stare so hard and scrutinze a pic of roasted chicken and 2) actually feel the need to call someone out on a cooking website about it. Hope that clears things up for anyone who was confused!

Raspberry-Walnut Shortbread

Reviewed: Feb. 16, 2009
I actually really enjoyed these bars & am really looking forward to what they will taste like after they have had a day or 2 to sit & the flavors to marry a little more. Made the recipe exactly as stated & loved how simple & easy it was; 20 minutes in the oven for both stages & they came out perfect. Would be great for a brunch or to accompany a heavy dinner since they are not heavy.

Virginia Box Bread

Reviewed: Feb. 15, 2009
I thought that these were pretty good, but like Rae thought cutting the dough was sort of a pain & next time will just form into rolls. My mother & I both commented that this dough would be excellent as pizza crust.
