Pumpkin Dump Cake

Reviewed: Jul. 21, 2012
Very good! The only thing I added to the pumpkin mix was 1/4 tsp nutmeg. The cake on top was a little thick, I had to use about 1/2 stick butter more than called for to cover the dry spots. The filling was good, but could have used a little more flavor. the Topping was AMAZING and made the dump cake. Took this to a party and got alot of compliments on it, thank you for sharing!

Pumpkin Pie

Reviewed: Jul. 21, 2012
Actually, think this might be my fave pumpkin pie recipe from this site. I assembled it just as directed and used a deep dish pie crust. I did have to bake the pie for about 15 minutes more than the called time. Turned out perfectly!!! Thanks for sharing!

Avocado Salad

Reviewed: Jun. 25, 2012
VERY good salad! I did double the amount of avocado, only used 1/2 a red onion (which was plenty in my opinion), used 1 green pepper & 1 red pepper, a whole lime, added minced garlic & just eyeballed the cilantro. Additionally, I placed some crumbled queso fresco on the side for people to sprinkle on top & it was pretty much an amaaaazzing addition. THANK YOU for sharing!

Easy Corn Salsa

Reviewed: Feb. 10, 2012
I made this with (ok, more like I did the work and he stirred the ingredients) my bf for a potluck at his work. I just got a text that said "everyone loved it, you did good!" (lol) I just made a few tiny changes: 1) subbed red pepper for orange 2) added half a can of black beans 3) used closer to two tbs lime juice 4) subbed a chili pepper for jalapeno (what we had) 5) subbed garlic salt for regular salt. THANKS FOR SHARING! :)

Amy's Barbecue Chicken Salad

Reviewed: Feb. 8, 2012
LOVED IT! I did change things just a little: 1) used leftover shredded chicken from chicken tacos last night 2) subbed a red bell pepper for the tomato 3) warmed the black beans & corn on the stove 4) switched out red onion for the fried onions 5) added some shredded cheddar cheese & avocado. Thanks for sharing such a versatile recipe!!!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 10, 2011
Very good! I made a few slight changes: 1) used sage pork sausage 2) subbed in a tsp of poultry seasoning for the sage 3) used chicken stock instead of turkey 4) put everything in a 9x13 and baked at 350 for an hour (30 min with foil on top), so I added in about a cup more chicken stock, 5) omitted the turkey liver since I didn't have one. Came out really good & my picky Dad even commented that he liked it. Maybe next time though I would omit the butter, as it was overpowering in a few bites. All in all, VERY good - thanks for sharing!

Pumpkin Fluff Dip

Reviewed: Oct. 28, 2011
There's really not much to report on this recipe. I followed it exactly as stated & let sit in the fridge for a few hours prior to party time. It was simple to make, the lesser of evils on the table (I used light whipped topping) & tasted great. Thank you for sharing! :)

Cheesy Poppy Seed Bread

Reviewed: Oct. 28, 2011
This was super good! I also liked that it was a little different from all of the other appetizers. I made a few changes to go with what I had & what not: 1) couldn't find sourdough, so used an Italian loaf. 2) Added in some garlic powder to the butter mix 3) used a little less than 1 lb of cheese. A little of this for sure goes a long way, and I don't even want to know how many calories I consumed but it recieved good reviews at the Halloween party I made it for tonight. THANKS FOR SHARING! :)

Broccoli Buffet Salad

Reviewed: Sep. 25, 2011
I took this to a church picnic & didn't bring any leftovers home, so that's always a good sign. :) The changes I made were minimal: used low fat greek yogurt and used a bit more lemon juice than called for. Next time I might cut back on the onions a little, but that is just a personal preferance. Thanks for sharing such an easy & tasty recipe!

Mike's Mushroom Bread

REALLY good! I assembled everything as stated (which was super easy), only adding in some cracked black pepper and grated parmesan cheese on top. Made this for a deck party with my friends & everyone really, really liked it. It got ALOT of compliments, which is always nice. ;)

Spicy Pretzels

Reviewed: Jul. 17, 2011
Pretty good pretzel recipe! Love how easy it was. The only alteration I made was to use garlic powder instead of garlic salt because I was worried about it being toooooo salty. Not really sure how I feel about the addition of lemon pepper, so I think I will stick with the Cayenne Pretzels from this site instead. Thanks for sharing! :)

Italian Chicken and Chickpeas

Reviewed: Jul. 5, 2011
I liked this one, and it was pretty easy to throw together too. I used 3 chicken breasts, flattened them out (they were huuuge) and cut them in half for a total of 6 thin, smaller sized breats (which was a good portion size for me & also helped them cook through evenly). I used only like 2 shakes of red peppers, after reading other reviews and worrying it might be too spicy for me. It was just right, and I am not super tolerant of spicy stuff. Other than that, made the recipe directly as stated and served it over whole wheat pasta with a side of sauteed zucchini & onions. Thanks for sharing! :)

Italian Leafy Green Salad

Reviewed: Jun. 28, 2011
Pretty good salad! The only change I made was to just use a bag of mixed spring greens instead of buying all of the greens separately. When making the dressing, I really had to stop myself from adding in some garlic. It was good as written, but next time I might go with my gut and throw some in, but that is just a personal preference. Thank you for sharing!

Oatmeal Pancakes

Reviewed: Jun. 7, 2011
These were alright. The only changes I made were 1) used whole wheat and 2) instead of using buttermilk I added 1 tbs vinegar to about 1 C. skim milk. The batter was reaaallly runny (maybe my fault for using skim) & the pancakes just sort of tasted eggy & bland. However, I appreciate the healthy alternative.

Pumpkin Pancakes

Reviewed: May 16, 2011
Just made these for my 2 year old niece & I (not the syrup though, as I didn't have all of the ingredients). She devoured hers! I made minimal changes: 1) subbed whole wheat flour 2) used pumpkin pie spice for the cinnamon 3) seperated the eggs & was beating the whites but I had a little Miss Impatient who was hungry, so added them in before they got stiff. Though there was a light pumpkin flavor, next time I would add more pumpkin puree (but I admit I LOVE pumpkin). Same goes with the spice, would probably add another 1/2 tsp. All in all, glad I tried the recipe, it turned out to be a fairly tasty bfast! :)

Eastern Rice Salad

Reviewed: May 8, 2011
I am totally going to make this again! The changes I made were very minimal: 1) omitted the red pepper and just used an entire green pepper 2) only used about 1/2 cup green onions 3) subbed brown for white rice & upped the amount to 1 cup 4) added in some white pepper and extra garlic powder to the dressing. I made the salad the day before our deck party and mixed up the dressing in a seperate bowl & let it sit overnight so everything could get to know each other - added it in about an hour before serving it. Went over very well and alot of people liked that it was "different". Thanks for sharing! :)

Ravioli Casserole

Reviewed: Apr. 26, 2011
5 stars for an easy, cheap, fairly healthy meal that the kids even liked! I did make a few slight changes: 1) added in some thawed chopped spinach to the sauce to increase the veggie intake 2) used a whole can of pumpkin puree 3) used 25 ounces of ravioli 4) used a whole 20 oz package of hot turkey sausage. Very easy to assemble & dinner was ready to go in an hour. I like that it's a really good way to "sneak" in veggies by using the pumpkin and of course the marinara sauce. THANKS FOR SHARING! :)

Tortilla Rollups II

Reviewed: Apr. 9, 2011
These were one of the less popular appetizers that I took to a charity wine event. They aren't bad, they just weren't out of this world awesome either. Basically, I chose the recipe because it was easy & I could make ALOT of them for very little cost. The only thing I changed was to add in a few dashes of cumin (after I read other readers reviews). Like I said, these are pretty good but just not a homerun. However, if you are looking for something fairly quick and very affordable that makes a good quantity to feed a crowd then totally try it. Oh, and I had more than plenty of filling for 10 shells (make sure to get the taco sized shells as opposed to burrito sized, that might be why some people had issues). Thanks for sharing!
