Delicious Raspberry Oatmeal Cookie Bars

Made this for my coworkers and they all loved it. I think I baked them too long, they only needed about 30 mins. I used whole wheat flour and a little less jam than called for. Next time I will use the full amount of jam.

Banana Banana Bread

Very tasty! I used 1 cup whole wheat flour with 1 cup AP flour, 3 bananas and made 2 mini loaves. They baked in 45 minutes.

Great recipe to make substitutions - I've used apple sauce instead of oil, splenda instead of sugar and half whole wheat flour, they turn out good each time.

Black Bean Brownies

I guess for a brownie recipe made with beans these are pretty good. But I did not like the texture that much. I preferred them cold with icing on top - so that kinda goes against making these a healthy treat.

Quick and Easy Brownies

These were definitely quick and easy, they were a hit at work. Other reviewers were right, it is a bit too cake-like, that is probably because of the baking powder. Other than that they were tasty. I subbed about a half cup of whole wheat flour and half cup of Splenda, then I put York bites on top.

Amazing Whole Wheat Pizza Crust

Very easy to make and it baked up nice and crispy - exactly how I like it, but it seemed like it was missing something. I think next time I will add some herbs and spices or even mix crushed garlic into the dough. It made 3 small-ish pizzas, pre-baked it for a few minutes before adding the toppings.

Amish Friendship Bread I

I'm glad I found this recipe. My co-worker gave me some starter but the recipe that came with it called for instant pudding as well as sugar and I thought that was a bit much (especially since there was so much sugar in the started). For my bread I used 1 cup white flour, 1 cup whole wheat flour, 1/3 cup oil, 1/3 cup apple sauce, 1/2 cup sugar, 1/2 cup splenda and then I added about 2 cups chopped apple. I am really happy how it turned out! I had to add a little bit of milk because the batter was on the dry side, so the next time I'll use 1 cup white flour and 3/4 cup whole wheat.

Super Easy Chocolate Cupcakes

I used margarine and made mini cupcakes (they took about 15 minutes to bake and made about 69 minis). I didn't put anything on top of them and my co-workers and husband loved them!

Simple Scones

I made the following changes: used half whole wheat flour and half white, plain low fat yogourt instead on sour cream and I mixed in about 3/4 of a cup of raspberries and saskatoon berries that I had leftover in the freezer. I mixed everything in my food processor and I think it was a little to small for the whole batch, it pretty much pureed the berries into half of the batter so I took it out and kneaded it until the berries were mixed all the way through. I really liked how they turned out, a bit crusty on the outside and moist in the middle. I just realized that I put 1/2 cup of sugar instead of 1/3, must have misread the recipe, I'll definitely make sure to correct that next time since these were pretty sweet.

Whole Wheat Biscuits

I was really impressed with this recipe, they turned out great! Doubled the recipe and used skim milk and a little of lemon juice instead of buttermilk. Mixed everything in the food processor until just combined. Baked them for 15 minutes.

Easy Oatmeal Muffins

I'm glad I added blueberries, otherwise these muffins would have not been sweet enough for my taste. I used half white and half whole wheat flour,honey because I didn't have any sugar and finally apple sauce instead of oil. A very easy recipe to make all those substitutions, my favourite part was the texture of the muffins.

Beef Bourguignon II

This is my first time making something like this and I will make it again! I followed the recipe the best I could, I didn't find canned onions (I don't think they exist in my part of the world) and I had a little less than 2lbs of meat. So I added more raw onions, another can of mushrooms and one more carrot. The wine I chose was a reasonably priced real Burgundy. I also served the stew over whole wheat egg noodles. It came out so good, the meat was tender and the gravy was so yummy, I can't wait to have the leftovers.

Scallops with White Wine Sauce II

It was too lemony for my taste. Next time I'd cut the lemon juice by half and maybe add a bit more wine. Otherwise it was a nice sauce.

Asian Pork Tenderloin

I will definitely make this again. Used all the ingredients as listed and marinated the tenderloin for over 24 hours. As it was roasting I made the rest of the marinade into a sauce by adding a bit more brown sugar, a tiny bit of flour and simmering it until thickened. It was sweet, savory and just tasty!

To Die For Blueberry Muffins

I am quite impressed with this recipe. I had some leftover buttermilk and some frozen mixed berries so I browsed the muffin recipes and settled on this one. I used whole wheat flour and not all of the topping. They turned out great!

Easy Salsa Meatloaf

This recipe inspired me to make meat loaf for the first time. I made it with lean ground beef and added onions and jalapenos. I liked the flavour, but not the texture. I think next time I will only put cheese on top, instead of mixing it in. This is a great recipe for first time meatloaf makers though, easy, tasty and lots of opportunity to tweak it to satisfy personal preferences.

White Chocolate-Cranberry Biscotti

Just made this for some Christmas gifts. Making biscotti is so much simpler than it seems, I'll never buy it from a coffee shop again! Other than using dried cherries rather than cranberries, I followed the recipe exactly, and it turned out great. I'd probably add more dried fruit next time, and maybe leave out the vanilla chips, they don't seem to add much to the flavor.
