4-Bean Baked Beans

Maybe I did something wrong, but the beans were still pretty hard. I used pinto, white, and navy beans. The flavor was great, but I'll have to simmer the beans a little longer to get the tenderness even close to that of a can of baked beans. Will make again, but try in a crockpot.

Chicken Pot Pie IX

This was delicious. I did listen to others and double the liquid (broth, celery seed, flour, and milk). I used 2 large chicken breast and cooked them in a little bit of olive oil and diced them up. Then I cooked the veges (a 16oz frozen bag of mixed veges and 2 potatoes diced up) in enough water to cover them and get them tender. Once veges were done, i added the cooked chicken to the them and the sauce. We had plenty of left over filling and the family enjoyed it with crackers as a soup. We did make mini pies in muffin tins (only did 9 pies with 2 9 inch pie crust shells). I did use the full 1/3 butter to saute only about a 3rd cup of onions (my family doesn't really care for them). I did season my chicken breast while cooking them and the entire dish was very flavorful. Will definitely make this dish again. Since it was so filling, we didn't serve anything on the side.

Holly's Chicken Cordon Bleu Casserole

I thought this recipe was delicious! My husband prefers the variation with the stove top stuffing on top, by my 6-yr old son and I loved it. I did half the recipe and it still filled up my 9 x 13 pyrex dish. I only used 1.5lbs of chicken since I am a little conservative on the meat in our house and used a high quality ham (really yummuy). I did cook my chicken breast most of the way through before adding to the dish as others suggested and the dish still took the entire time for the flavors to meld. I used 8oz of muenster cheese slices in the middle and 8oz of mozzerella in the top layer because that's what I had at home. I did omit the mushrooms, green onions and additional 2tb of butter on top as my family doesn't like these veges and I didn't want to open a new stick of butter. Overall... yummy dish and will make again. Maybe the veges will help blend some of the salty taste from the ham and cream of chicken soup.

Baked Pork Chops II

I loved this recipe! My picky family of 2 small kiddos and my hubby thought it was just okay. Then again, they are pretty basic eaters...To save on dishes, I cooked the chops in a cast iron skillet and just put the skillet in the oven to bake. Since I used a bit more oil (about an inch high in the skillet), I didn't drain and omitted the water. Also, the chops only took about 45min to bake (maybe I cooked them too long in the skillet on top of the stove). At any rate... they were fabulous. Not dry at all (dry meat is an absolute PET PEAVE of mine!!!!). Served with brocolli rice au gratin and sweet green peas. Definately a repeat for us! Next I'm trying crockpot chops to see if they turn out just as tender and juicy as these.

Potato Chips

Wonderful chips! I used parchment paper right in the microwave and it only took 4 minutes. Will try with other seasonings like garlic powder and popcorn ranch seasonings. The possibilities are endless!

Creamy Pumpkin Pie

Was okay. Seemed like it was missing something. I did double the spices and baked 2 pies, but even my hubby said that it needed butter or sugar. Wasn't sure which. Maybe next time, i'll add it and update my comment.

Chicken with Peas and Quinoa

Alright. Was first time cooking quinoa and I think it went well. Didn't have chicken broth, so subbed beef broth. Omitted peas (family doesn't like them) and used some basic spaghetti sauce from the cabinet. Didn't take long at all to cook. Accidently cooked my chicken all the way through in the first step, but did allow a little time for the chicken to simmer with the quinoa.

Corn Tortilla Chips

Based on the feedback, I decided to give baking a try. Yummy and healthy! I baked some old corn tortillas (cut in to chip size wedgest) at 400 degrees for 10 minutes. Prior to baking, I sprayed olive oil spray on them and seasoned them liberally with salt, pepper, onion powder, chili powder. Surprisingly, they were crispy like chips. To reheat, just pop into a paper bag in the microwave for 15 minute increments until heated to your liking.

Cheesy Baked Eggs

Very Yummy for my family! I used triple cheddar and mozzarella cheese in place of the pepper-jack and just sprayed the dish with olive oil instead of melted butter. Really cheesy. Didn't quite take the full hour, more like 40 minutes and it was perfectly browned. I will try other variation in the future like added spinach and bacon to the dish to make it a one dish meal.

Simple Maple Syrup

This was pretty good. I did use 1/2 brown and 1/2 white sugar and used vanilla instead of maple flavoring. My husband thought it wasn't as sweet as maple, so he liked it. I make some fried sweet potatoes around the holidays and the syrup was exactly the same as what the sweet potatoes are cooked in.

Fluffy Pancakes

I've been searching for a great pancake recipe for a long time and this one is definitely a winner in my house! First couple of cakes were thinner than the rest. But after that batch, they were great. My 5 year old ate 3 by himself! Fluffy, but will the crispy edges like we like. Wonderful flavor. I ate mine without anything on them.

Asian Orange Chicken

Good food! I agree with the comment about the cornstratch and water ratio being off as the sauce thickened fairly quickly and was too thick to be a sauce over our rice. However, it was tasty. Even my ultra picky 2 year old had a 3rd helping.

Jerk Grilled Chicken Wings

We made these for New Years to go with our Caribbean themed meal. They turned out okay. Not too spicy. More like a very seasoned chicken wing. We also baked them in the oven due to the extreme temperatures in WI this time of year. I thought the wings would be dry in the oven, but the marinade bakes off and they were perfected moist with a slightly crisp skin. The sauce left in the pan went WONDERFULLY with the cilantro lime rice from this website. To get more of a kick, i may add a little more jalepeno next time (i must admit that we only used 2 jalepeno peppers without the seeds due to us have small kids around). Overall, very tasty.

Lasagna Toss

Was ok. Maybe next time I'll add garlic to the skillet before cooking the meat. Once it was done, it missed the garlic flavoring per my husband. Quick and easy dish though. Served with salad and toasted bread with butter.

Squash-Apple Bake

Really sweet. My husband said that it tasted like the inside of a peach cobbler. I did double the sauce ingredients to ensure vege/fruit coverage. Will definitely make this dish again. It was served with salmon and rice. It was more like a sauce/ chutney. It was terrific over the salmon and actually made the entire meal taste much better. It was also an added bonus to scent the house.

Cheddar Chicken Spaghetti

Great meal. Sort of tastes like chicken noodle soup in a casserole style. Everyone ate it and very little leftovers. I did omit the pimentos and substituted 1c of mozzerella and 1c of cheddar because that's what i had on hand. Served it with dinner rolls and a side salad.
