Pan Fried Swiss Chard

Do not discard the stems according to our farm co-op!!! Just trim them at the end and chop them into one inch pieces. This has a lot of flavor. I didn't use garlic paste-just pressed garlic right in the pan and sautéed it. I also didn't add the lemon because I didn't have one. Still turned out to be a fabulous side dish! This was our first time tasting Swiss chard and it won't be our last!

Tex-Mex Beef and Rice Casserole

I made this tonight for dinner. It was a SMASH hit! I couldn't find the Santa Fe blend, so I substituted a packet of taco seasoning and a block of cream cheese and just topped it with cheese-no chips or cilantro(we don't like cilantro). I have teen boys, so they ate this up fast! I served it with sour cream, salsa, and chips on the side along with green beans and a tossed salad. Husband even liked it and he normally doesn't like Mexican food. This will def go into my recipe box!!
