My first healthy dinner attempt

My husband loves meatloaf! I promised to make him meatloaf then the whole healthy eating thing came around but I still wanted to make it for him. 

I found some recipes that I liked on Allrecipes and other sites and tweaked them a bit. Unfortunately I don't have all the recipes on hand, as I just added a dash of this and a touch of that in the process.

Meatloaf  with Salsa
I used this recipe and added Itaian seasoning and some homemade salsa that I had leftover for some extra flavor<

Spicy Cauliflower Bites
I wanted an alternative to mashed potatos and a friend told me about mashed celery or mashed cauliflower. I gave my husband the choice and he felt safer trying mashed cauliflower. 
Here is the recipe I used:< . Once the process was over, it did not quite turn out as creamy as I expected, so I scooped them into little muffin cups, sprinkled with shredded marble cheese and red chilies for a spicy kick! Oh my husband couldn't have enough of these little bites! See recipe here:<

Sweet & Spicy Thai Chili Cucumber/Carrot Salad
Unfortunately I don't have the recipe on my computer, but I promise to provide as soon as I have the chance. The Chili sauce dressing was made from scratch, and it still wasn't the longest part of the process, but it did require constant attention while boiling. This was so refreshing we literally ate it by the bowlful and it still lasted 3 days!

Arent't you doing good.I make meatloaf with ground turkey,and ground chicken,and sometimes I add ground beef.I like the combination,of these meats.Thanks for posting,looking forward to reading more of your posts.

Hello ladanams,me again.If you want go into my recipe box,i have a recipe for Roast Beef cooked in Pasta Sauce,and Asparagus Risotto.They are my personal ones,and very good.Blowing my own horn here.:O)

Like what you did with the cauliflower-when recipes don't work out for me I never think of a good way to save it!

Your meal looks so good! Here are a couple of ideas for meatloaf: the turkey meatloaf with quinoa is very good! I personally don't care for the texture of ground turkey, but when you add the quinoa, it really changes the texture. You can follow the recipe 100%, or follow the main ingredients and use your own seasoning. I have also made meatloaf with 25% TVP (textured vegetable protein) to cut down on the fat and cholesterol. I could not tell the difference!

I think your cauliflower "muffins" was inspired. First, kids would love the different presentation and second it sounds so tasty. I love cauliflower and am always looking for new ways to prepare it. Thanks for sharing.

Chicken surprise. The intention was chicken and vegetables baked into dumplings, however, it should have been called Chicken rocks hahahahaha! As a beginner cook, hm didn't add baking soda/powder to the dough. I plan to try this again!
