Best Tuna Melt (New Jersey Diner Style)

This tuna melt was AMAZING!!! The tuna salad had perfect flavor. I was nervous about onion in tuna but it was delicious. We used both Swiss and cheddar cheese and it tasted just like the sandwiches served right here at diners in the Garden State (I am from NJ)! Serve it up with chips and a dill pickle for a super-tasty meal. The tuna salad is delicious enough to be eaten by itself!

Libby's® Famous Pumpkin Pie

My two year-old daughter and I made this pie together and she had only one thing to say--"Mmm Mmm Pie"! She ate two pieces herself and the family polished off the rest. Perfectly spiced, light, and creamy. A definite favorite, my daughter cannot wait to make our next pie! We used a crust from the dairy section of the grocery store in a deep-dish pie plate which held all of the filling quite easily. My crust was browning too quickly, so I draped a piece of aluminum foil over the pie halfway through baking and it turned out great.

Jewish Apple Cake II

I have been looking for an apple cake recipe and this one is definitely a keeper! I did not change a thing--made it exactly as stated and it was awesome. I used Golden Delicious and Cortland apples. The cake was definitely sweet, but a nice compliment to the apples and cinnamon. I would not change a thing and will definitely make this again and again!

Self-Filled Cupcakes I

These were soooo good, and chocolatey enough to satisfy even the worst chocolate craving! I used mini chocolate chips instead of regular ones and the cupcakes came out great. I also got 18 huge cupcakes out of this recipe instead of the 12 called for in the serving amount listed. There is no need for frosting--these treasures are good enough to eat unfrosted! These will definitely be made again!

Applesauce Bread I

This bread is just delicious! I make it often in the fall and winter and it is always a big hit. I do make some changes, however. Instead of raisins, I add a diced apple or two for texture and more apple flavor. I reduced the amount of sugar used to 1 1/2 cups. Also, I cut the oil back to just 1/2 cup--with all of the applsauce no one even misses it and it still comes out super moist! Lastly, I bake the bread for only 60-70 minutes--80 minutes is too much time and the bread is overdone and tough. My one year old daughter absolutely loves it.

Apple Bread

This bread was delicious! I made the recipe this morning and there is only one slice left. I did add 1/2 cup of applesauce to the batter in addition to the oil and I omitted the nuts (family does not like them). I also baked the loaves in a 9x5 pan for only 40 minutes instead of the 8x4 pan called for in the recipe. It was outstanding--definitely will make again!

French Toast I

Absolutely delicious--tastes just like our favorite local breakfast spot's French Toast. My husband said it was the best I've ever made, and he's picky! Definitely a regular in our house on the weekends now.

Glazed Chicken Wings

These wings are unbelievably good and so easy to make. I did't even bother to measure the ingredients--I just eyeballed it and they came out amazingly tasty. I also cooked them at 375 (to speed up the cooking time a bit in time for the game) and they came out great. Not quite barbecue, not all sweet, and not salty, but a perfect combination of all three. I will also try this sauce on drumsticks--I beth that they will be super good. This recipe will definitely become a regular in our house.

Banana Sour Cream Bread

I made this for Sunday morning breakfast for my husband and myself and I am embarrassed to say that an entire loaf was finished by Monday morning! It is the best banana bread recipe that I have ever made. The sour cream made it super moist. I DID make a few changes, though--no nuts, used two 9x4 loaf pans instead of four 7x3 (made two large loaves) and I omitted the cinnamon in the batter (I am a banana purist, what can I say). Next time I will probably try the cinnamon in the batter, as per my husband's request! I also baked them at 350, as other bakers have mentioned here. The loaves turned out great--this one is definitely a keeper!

Italian Sausage Soup

This soup was delicious! I added an extra can of broth, some Italian seasoning, and a handful of cheese tortellini and it was great. We enjoyed it with some garlic bread. Even my husband loved it--and he's picky!

E-Z Drop Biscuits

These bisciuts were excellent! They were light and flaky just like a rolled biscuit but so much easier--I onmitted the tartar like others did and they turned out great. I made them to go with soup for dinner, but they would be just as delicious with butter and jam for breakfast. They will be made (and eaten!) regularly in our house.

Marie's Easy Slow Cooker Pot Roast

Excellent!! Moist, tender, flavorful, and juicy, but best of all, EASY! I used a bottom round roast instead of a chuck roast and it was delicious. Next time I will take others' suggestions and use beef broth and worcestershire sauce while cooking to maximize the flavor. My husband and I loved it--will definitely make regularly.

Coconut Ambrosia Salad

This was delicious! Just like I remember it at all of my family picnics when I was little. I did leave out the coconut and served it on the side (my husband hates coconut) and I also added 1/2 cup of sour cream for extra creaminess and tang. It was perfect!

Fruit Pizza I

I did a "trial run" last night of this recipe in preparation for the Fourth of July with strawberries and blueberries. A really yummy idea but the cream cheese topping is much too sweet. The next time I make this I will use half the amount of sugar called for. Also, I will try using lemon juice in place of the vanilla. My husband (who's not a big dessert fan) did go back for seconds, though!
