Out-on-the-Range Cookies

These cookies were good but didn't taste very peanut buttery. I added 3 tsp. of cornstarch to the dry ingredients to keep the cookies soft.

Cream Cake

This cake is easy and delicious! I followed other reviewers' advice and omitted 1/4 tsp. salt and added 1/4 tsp. baking powder. I beat the eggs and sugar together at high speed for about 10 minutes and I think that makes quite a difference. I also used very good quality vanilla to enhance the flavour. I doubled the recipe and baked it in a bundt pan but it almost overflowed--next time I'll put some of the extra batter in a small loaf pan. I cut the cake into bite sized pieces and used it for a chocolate fondue, but it would be very good with whip cream, ice cream, or many different icings. A very versatile cake! It still tasted very good after 4 days (being kept in an airtight container).

Peanut Chocolate Cake

I made this for a friend/co-worker's birthday; it was very good, and I do quite a bit of baking. The cake was very moist and flavourful. I don't have any 9" pans so I used three 8" pans instead and didn't cut the cakes in half (so mine was only a 3-layer cake). I just cooked the cakes for a bit less time. The only thing I would do differently is add less milk to the icing; I think 1/4 cup is too much and I had to add a whole bunch of extra confectioner's sugar to compensate. So the icing was really, really sweet. I would start off with less milk and see if you need more as you mix the icing. I also had a lot of extra icing (probably more than a cup) but that is likely due to the extra sugar I had to add plus one less layer to my cake. Some people didn't like the peanuts and others suggested adding peanuts between the layers....I guess you can't win in that department!! Very yummy cake; lots of compliments!!

Very tasty with lots of different vegetables...perfect for vegetarians and vegans!! It takes a while to prepare but is well worth the effort!
