Quinoa and Black Beans
Yummy! I took an excellent recipe (thanks 3LIONCUBS) and bent it to my needs. After softening the onions, I added the spices to toast, adding an extra 1/2 tsp of cumin since I'm a fan. I then added 1lb of very lean ground beef. Once browned, I added the rinsed (and patted dry) quinoa to the skilled to toast. Due to the extra volume and since I don't like my quinoa too crunchy, I added 1 1/2 cups of beef broth and 1/2 cups of water. I exchanged 1 can of pinto beans for 1 of the cans of black beans since that is what I has on hand. A very delicious dinner! Next time I may add 2 tsp of cumin and use cooked chicken. This is such a simple recipe with so much potential for change. It has been added to my monthly rotation, a high honor indeed considering the sheer number of highly rated recipes at Allrecipes.

Sour Cream Cornbread
Greatest corn bread recipe I've ever tried. Have already made it 3 times this week. The measurements are so easy I've already memorized them. One step I do slightly differently. I add all wet ingredients in a separate bowl, whisk gently to combine, then add to the whisked dry ingredients. This makes it easier to mix wet and dry requiring less mixing thereby making the bread more tender and what is one more dish to wash. Have used fine ground corn meal and looking forward to more course grind. Thanks for the post.

Delicious Ham and Potato Soup
I have been an absolute fan of Allrecipes for over a year, it is my go to site. I haven't commented on a recipe before but felt this one had to include a thank you to Ellie11 for posting this delicious soup. The moment I read it I could see the potential for so many different soups using this recipe as a base. As always the comments were helpful. Thanks you Kabryn for the idea of celery seed as I was out of celery. Thanks too for Mainemom for suggesting freezing ham in cubes. I've always frozen ham slices and when thawed cut them up. Freezing the cubes will same a step. Made soup with canned milk with an equal amount of water, heating it before adding it to the roux. Cleaned out the veggies in my fridge and added them all. Added frozen, rinsed then thawed peas and corn. Marvelous! Shared with a friend and neighbor so I could make it again with different add ons. Excellent recipe!
