We have made this tree times and using other chef's suggestions and some thoughts of our own, I think we have found our perfect combo. Ingredient substitutions first: used salt and pepper instead of season salt. add 1/2lb sliced baby portobello mushrooms. Increased wine by 50%. Preparation changes: mixed salt, pepper, and garlic powder into the dredging flour. Used a little more oil in the frying pan for a more even brown (if done hot enough, the breading seals out excess oil). Cooking changes: first bake without sauce for 30 min. Cook the portobellos in the frying oil with a dash of salt, garlic, and parsely before adding to the dish. Then add portobellos, pour sauce on top, cover and bake an addl 15 min. Perfection!
