Chocolate Crinkle Cookies

Reviewed: May 16, 2006
Wow! Okay, I know what needs to be done to make this recipe perfect. After reading the disappointing reviews, I made the following changes. In addition to the 1 ounce of semi sweet chocolate, I added 1/3 cup of cocoa powder. I also reduced the chocolate chips to 1/2 cup. I refrigerated about 4 hours & baked at 350 for 12 minutes. I also did not grease the pan and the cookies came off great. These turned out perfect! Great sweetness, nice and chocolately, chewy and moist, yet crispy.

Black Beans with Bacon

Reviewed: Jun. 2, 2006
This was way good. I simplified the recipe by using canned beans and I precooked my bacon in the microwave, reserving the drippings to add to the mix. I served it over rice and served along side the Jamaican Jerk Chicken from this site and couldn't get enough. It is very good the next day too, but the bacon goes soggy. Next time I will not stir the bacon in, but sprinkle on individual servings. Thank you! Will make again.

Mexican Salmon

Reviewed: Jun. 9, 2006
This marinade is way good. I didn't use the peppers or the garlic. I used powder for both instead. I highly recommend making salmon tacos with this, topped with the mango salsa from this site. Way good!

Baked Teriyaki Chicken

Reviewed: Jun. 12, 2006
This is a very yummy dish. I used chicken breasts (partially frozen) intead of thighs. And to cut the time even more, I cut the breasts into large pieces. The cooking time was only 30 mins and I basted every 5, and turned the pieces over at 15 minutes. Turned out great. I will for sure make again. Thanks!

Southwestern Grilled Chicken with Lime Butter

Reviewed: Jul. 16, 2006
This is sooo yummy! You must make the butter too. It really compliments the chicken. I too used a jalepeno instead of a serrano. I also used chicken breasts and pounded them flat to about 1/2 inch. They cooked up really quick on the grill and were so tender too. Thanks for the unique & tasty recipe!

Hashbrown Casserole

Reviewed: Aug. 7, 2006
This is sooooo yummy. I accidently bought hashbrowns with peppers and onions and really feel that's what made the dish. I took this dish to a birthday potluck. It was gone so fast and everybody commented on the zing. Will definately make again. Thanks.

Cheese and Broccoli Chicken Soup

Reviewed: Aug. 7, 2006
This turned out really good. I added a half of a large, white onion when the broccoli was added. And also used canned chicken. When it was time to add the paste, I mixed some of the watery soup to the paste to smooth it out. I think that was the key for no lumps. I had tons of leftovers too and they were great the next day. Everybody who I shared with, raved!

Zucchini Soup III

Reviewed: Aug. 24, 2006
Mmmmmm...This is so good. I halved everything in the recipe except the spices. I also didn't have celery, so in its place, just used a bit of celery salt and added more zucchini. The only liquid is in the stewed tomatos, so I found I had to add water or else I'd be left with not much 'soup' just veggies. Way good though. I will surely make again!

English Toffee

Reviewed: Nov. 12, 2006
If you've made this and it didn't turn out, you need to read the review from 12/20/03 LCDOYLE. I did, and it turned out perfectly. Also, when the recipe says bring to a boil, that means to crank the heat up. Don't leave it on Med Low. You'll not get anywhere. Good luck! This is a great recipe.

Cola Pot Roast I

Reviewed: Dec. 3, 2006
Mmmmmm. Today will be my 3rd time making this within a month! My only suggestion is to do it in the crockpot. It's sooo much better that way. I've done it both that way and in the oven. Also, I've subsituted the onion for dried and the celery for celery salt (I just used celery salt instead of regular salt.) It's a must try!

Peanut Butter Kiss Cookies

Reviewed: Jan. 16, 2007
These are way good and the calories show it! I rolled my first batch into 1 inch balls, but realized if I kept that up, I'd be making a lot more than the recipes says. So, I made the 2nd batch of balls a little bigger. I do like the smaller balls though. They are more in porportion.

The Best Meatballs

Reviewed: Jun. 13, 2007
These are super. I did make some changes...I cut the recipe in half and just used 1 lb ground beef. I didn't use french bread, but used 1/4 cup of Italian bread crumbs. I cut the water down to 1/2 cup instead of 3/4. Oh, I didn't have fresh romano cheese, so I used the dried Parmesan/Romano blend and I only used 1/4 cup. I didn't have fresh parsley either, so I used fresh basil. Honestly, I kind of made my own meatball, but they were super good. Thanks for the base!

Chocolate Chip Orange Zucchini Bread

Reviewed: Jul. 17, 2007
Holly moley! My sister-in-law made this and it is the best. It smells sooo good and even better is its taste. She made it with the orange glaze and didn't add as many chocolate chips. It was perfect & now I'll be making it. :-)

Zucchini Coconut Loaf

Reviewed: Jul. 25, 2007
Wow, this is super yummy. I loved the coconut idea, but thought my fam would not go for the currants & walnuts. As another reviewer did, I subsituted chocolate chips for the currants. I took the walnuts out all together. I made the recipe slightly healthier by using egg beaters & replaced half of the oil with applesauce. I doubled the batch and used 1 packed cup of brown sugar and a half cup of white sugar...So, I probably cut out a half cup and it turned out sweet as can be. This recipe was so moist and delicious. I will surely make often. Thanks!

Curried Coconut Chicken

Reviewed: Jul. 31, 2007
This was really good. I did make a change & that was I used regular milk and then added about 1 tsp of coconut extract. The flavor was great that way. I also recommend a tsp or so of salt & next time I won't add tomatoes or at least a full can. That many tomatoes was too much and it made the curry more orange than the traditional yellow color.

Old Fashioned Apple Dumplings

Reviewed: Oct. 7, 2007
I think this was one of the best desserts I've ever had. Seriously, and I make a lot of good desserts. I used small gala apples & store bought, pillsbury pie dough. I just cut each pie crust into 6 strips, wrapping 2 strips up & around opposite of each other on each apple. It worked out great. I think I'm going to make this a lot now. My family couldn't believe how good these were. Thanks for the wonderful recipe.

Buttermilk Syrup

Reviewed: Dec. 24, 2007
After sampling a buttermilk syrup at a local farmer's market, I thought I'd try and track down a recipe I could make at home. I am soooo happy I found this recipe. It's very similar and doesn't cost nearly as much to make as they were charging at the market ($7 for a little tub!) I am going to make & bottle this up for my neighbor's for Christmas present, along with pancake mix. Thank you so much for the fabulous recipe!!!----2nd Review: K, I made this a 2nd time & purposely omitted the baking soda. It's sooo much better. It doesn't have a bitter, baking soda taste like the first batch & it's a pretty, white color. It does have to cook a little longer & thickens up upon sitting on a heating pad off the stove. I like it even better the 2nd way.

Banana Banana Bread

Reviewed: Jun. 6, 2008
This was super good. Moist, just the way it should be! I didn't have enough bananas for 2 1/3 cups, so I did as another reviewer & added applesauce for the remaining. I made a loaf with chocolate chips & another loaf with cinnamon-sugar sprinkled on the top. Both turned very yummy.
