Sweet Potato and Black Bean Chili

I've made this twice and it is our new favorite Chili. It's a lot of work to make, but it makes a lot and we have it for a few nights for dinner. I used the Jalapeno but took out the seeds. I use the Chipolte pepper as directed but I don't put in as much of the Ancho chili pepper. I also added a can of corn (drained) and that gave it a little more texture. Yes, it's a lot of cutting and chopping, but it is worth it.

Strawberry Pretzel Salad

I wish I had read the reviews before I made this. And I wish I'd made a practice salad before making this for Easter Potluck Dinner. I followed the directions and also doubled the recipe. Two problems occurred: one is that the salad sat out for over an hour before everyone ate so the topping started to melt, and two is the hostess provided a spoon to scoop up the salad and it really needed a metal spatula to pry the crust from the pan. After reading all the reviews, I can see that freezing the crust first and also spraying the Pyrex baking dish would have been a big help. This is has to be one of the best Jello salad recipes I've ever tasted and easy to make. Thanks for sharing the recipe.

J.P.'s Big Daddy Biscuits

I recently made biscuits from another recipe and they didn't rise. So I bought new Baking Powder and used this recipe and wow were they amazing. I made six really big biscuits and baked them for 15 min. at 425, and they could have baked a minute or two longer. But I served them with gravey and they were yummy!!! I also made the dough the night before and wrapped the dough in waxed paper and put in the frige. All I had to do was roll them out in the morning. I did knead the dough lightly just a few times before rolling it out. I used real butter and 2% milk. This is a great recipe and I'll be using it again.
