Lentil Soup III

I made this today after scouring through several recipe and am glad I chose it. The only thing I did differently was that I used tomato sauce instead of paste (all I had on hand) and I used 2 tsp cumin instead of 1 T. I also added some salt and a little pepper and it was marvelous. I kept enough water on it to keep it from burning, but cooked it thick to make it more like a stew and added a can of sliced carrots (drained) at the end like the picture showed. Great!

Peanut Butter Frosting

I needed to make a cake to auction for a benefit and I am so glad I chose this frosting recipe! (I did follow another reviewer's recommendations and used 1 stick butter, 1 cup peanut butter, 2 cups confectioners sugar and 2 to 3 T milk and I wouldn't deviate from that.) I put it on a chocolate fudge cake and the people who bought it called me today and raved about it. I made a double batch of the icing and using 2/3 of it on the 10x13 cake. We put the leftovers in the fridge and ate some of it with a spoon. It is smooth and tastes like peanut butter fudge or peanut butter roll. I will definitely make it again.

Easy Guacamole

Great recipe, but I did tweak it a bit. Instead of putting in the onion and tomato like recommended, I bought some fresh pico de gallo from the store produce section that has onion, tomato, jalapeno and cilantro in it and I put in two heaping Tablespoons. I added a little more lime juice and it was astounding. I will make this from now on.

Dutch Apple Pie with Oatmeal Streusel

Made two of these pies and followed the tip to put a rounded 1/4 cup of flour in the pie and to leave out the lemon zest. Instead of using nutmeg and allspice, I used the same measurements for apple pie spice since that is what I had on hand. I also used butter in the pie and margarine in the streusel topping. The pies turned out wonderful! This recipe has been added to my personal collection with recipes I have gotten from my mom and two grandmothers. You won't regret making a pie following this recipe.

Easy Biscuits

These are the best homemade biscuits I have ever had. They taste just like my moms. When they were done baking, I brushed on some melted butter. A definite winner!

Brown Butter Cookies

I have always loved toffee and pecan sandies and this is hands down the best cookie I have ever eaten. If you don't care much for really sweet things, I would leave the icing off because the cookies are scrumptious with or without it. I love them with a big glass of ice cold milk. Even my finicky sons loved these. They are a definite keeper!

Chocolate Chip Banana Bread II

I was very sceptical of this recipe because of the banana/chocolate combination. Man, was I wrong! This is absolutely delicious! I'm going to make another batch and roll it into 1-inch balls while still warm, chill them and then dip them in melted chocolate like the cake bites/balls are done. Scrumptious!!!

Mom's Zucchini Bread

I got zucchini from my garden yesterday and searched for a recipe and found this one. Man, am I glad I did! I followed several readers' suggestions of using 1c white sugar and 1c brown sugar and I made the oat nut topping another reader suggested. I made them into cupcakes and while they were in the oven, my family was crawling out of the woodwork wondering what smelled so good. My husband snurled his nose up when he saw me grating the zucchini to put in it, but the first muffins out of the oven weren't even cooled yet and he's already had two! This recipe is a definite keeper. Tell your mom I send my compliments.
