Lentil Soup III
I made this today after scouring through several recipe and am glad I chose it. The only thing I did differently was that I used tomato sauce instead of paste (all I had on hand) and I used 2 tsp cumin instead of 1 T. I also added some salt and a little pepper and it was marvelous. I kept enough water on it to keep it from burning, but cooked it thick to make it more like a stew and added a can of sliced carrots (drained) at the end like the picture showed. Great!

Peanut Butter Frosting
I needed to make a cake to auction for a benefit and I am so glad I chose this frosting recipe! (I did follow another reviewer's recommendations and used 1 stick butter, 1 cup peanut butter, 2 cups confectioners sugar and 2 to 3 T milk and I wouldn't deviate from that.) I put it on a chocolate fudge cake and the people who bought it called me today and raved about it. I made a double batch of the icing and using 2/3 of it on the 10x13 cake. We put the leftovers in the fridge and ate some of it with a spoon. It is smooth and tastes like peanut butter fudge or peanut butter roll. I will definitely make it again.

Easy Guacamole
Great recipe, but I did tweak it a bit. Instead of putting in the onion and tomato like recommended, I bought some fresh pico de gallo from the store produce section that has onion, tomato, jalapeno and cilantro in it and I put in two heaping Tablespoons. I added a little more lime juice and it was astounding. I will make this from now on.
