Best Cream Of Broccoli Soup

This soup is wonderful. I made only minor adjustments to suit my tastes. I left out the celery and added fresh garlic, more onion and red pepper flakes. I also added a bit of cream cheese when I was blending the soup. I used half milk and half evaporated milk and added a pinch of nutmeg at the end. This is definitely going into the recipe box. Thanks.

White Bean Spread With Garlic & Rosemary

Beef Stew I

This stew had a great texture but not much flavor. The meat was incredibly tender but I had to add a lot of seasonings to give it any flavor at all. OK start for a recipe but it needs work.

Tuna Salad

This is a really good salad recipe. I used mayo instead of the french dressing and I added some garlic and onion powders just out of personal preference. Nice cool summer supper.

Absolute Best Liver and Onions

This dish was fantastic. I only soaked the liver while the onions cooked as I prefer the strong liver flavor. After cooking, I added 1 cup of beef broth to the pan drippings and cooked until the liquid had reduced by a little more than half. I then added the onions and the liver back to the pan. The remaining liquid thickened nicely to make a delicious gravy. Thank you for this wonderful recipe.

Chicken Bog

This recipe was so good and so easy. The only things I changed were adding one boullion cube while the chicken was boiling and halfing the italian seasoning. Thanks Holly for this great recipe.

Salmon with Dijon Cream Sauce

The salmon was fabulous with the sour cream sauce on top. I mixed the dill and pepper, along with some red pepper and a pinch of salt, directly into the sour cream. The fish was moist and flavorful. However, the dijon cream sauce, in my opinion, was horrible. I reduced the flour to two Tbs. so the consistency was good, but it was incredibly bland. I tried adding garlic, salt, dill, lemon juice, onion powder and pepper, but nothing helped. I will definitely make the salmon again...without the sauce.

Asian Coconut Rice

I really liked this recipe but I did change a few things. I added extra sugar and made this into a dessert. I cooked the rice as directed and then chilled it while I made a coconut syrup. I topped the cold rice with coconut syrup and fresh mango. Absolutely divine.

Cranapana Bread

This bread is fantastic and deserves more than five stars. It rose beautifully and tastes delicious. You MUST USE SELF-RISING FLOUR! It's not merely a suggestion. I only had all-purpose flour so I measured it out and added 3 TBS baking powder and 3/4 tsp salt to make my own self-rising flour. The batter is thick and there is a lot of fruit, but if you mix in the banana first, it loosens up the batter a bit and makes it easier to mix in the apples and cranberries. I added the zest of one lime to brighten up the flavor and some ground flax seed for nutrition. This will be a family favorite.

German Pancake

I wish I could give this recipe more than 5 stars. The pancake was delicious by itself and the syrup is absolutely phenomenal. I did leave it in for a couple minutes longer than stated and I sprayed my Pyrex pan with cooking spray before pouring in the butter. It slid right out with no sticking. Fantastic...going into regular breakfast rotation.

Eggnog Thumbprints

I really enjoyed these cookies. The cookie itself was very tender and crumbly, which I enjoyed. Make sure to mix in the flour by hand. The dough should be rather dry and crumbly. If you have one solid ball of dough, your cookies are over-mixed. I used a melon baller to get the correct size and made the indentation with a wooden spoon handle. If the cookie starts to come apart, press it gently back together. The only reason I gave this recipe 4 stars was because I feel it needs a stronger rum flavor. Next time I will use rum extract because I can increase the flavor without significantly increasing the liquid. The icing, mixed by hand and stuffed in a piping bag, was the perfect consistency, nowhere near runny. Runny icing is an error on the part of the cook, not the recipe. I can't wait to make these again.

Oatmeal Pancakes

I wanted to like this recipe, but it turned out horribly. I started out with the batter made exactly as written and after the first two paper thin pancakes I added another 1/2 cup flour and a 1/2 tsp. baking powder to come up with something resembling pancake batter. They didn't taste bad, but they definitely looked more like crepes than pancakes. Thanks anyway.

Spicy Rapid Roast Chicken

This cooking method is fantastic. The reason I only rated this recipe four stars is I had to make some changes to season the meat of the chicken as opposed to just the skin. I mixed the olive oil and spices in a bowl (adding a few extra spices to taste). I then added two tablespoons of softened butter and mixed well. I rubbed this mixture inside and outside the chicken, but I also rubbed it under the skin. This made for an incredibly flavorful, juicy bird. Thank you for this recipe.

White Chocolate Blueberry Cheesecake

This is a fantastic cheesecake recipe. I, too, had to add ten minutes to the cooking time but it was worth the wait. I didn't make the blueberry topping; instead I made a white chocolate ganache. The only other thing I would change would be the crust. I doubled the amount of butter and it still crumbled and wouldn't hold together. Overall, great recipe...definitely a keeper.

Artichoke Salsa

Gourmet Meatloaf

This meatloaf was fantastic. My fiance who is a very picky eater said it was the best meatloaf he had ever eaten. I did add fifteen minutes to the cooking time but my oven may be a little off.

Baked Macaroni with Pepperoni

I didn't care for this recipe. I followed other reviews and cut down on the tomato paste and added canned tomatoes but it still came out rather dry. I also found it to be bland even with all the additional spices I added. This might be a good recipe for kids.
