Beer Pancakes

Reviewed: Jan. 13, 2014
These pancakes were amazing. I doubled the recipe, but only had one egg and it didn't seem to make a difference. The beer I used was Blue Moon and I added some orange zest. They were fluffy, tender, sweet, citrusy and delicious. I served them with some homemade orange syrup. Heaven!

Cranapana Bread

Reviewed: Dec. 12, 2012
This bread is fantastic and deserves more than five stars. It rose beautifully and tastes delicious. You MUST USE SELF-RISING FLOUR! It's not merely a suggestion. I only had all-purpose flour so I measured it out and added 3 TBS baking powder and 3/4 tsp salt to make my own self-rising flour. The batter is thick and there is a lot of fruit, but if you mix in the banana first, it loosens up the batter a bit and makes it easier to mix in the apples and cranberries. I added the zest of one lime to brighten up the flavor and some ground flax seed for nutrition. This will be a family favorite.

Butterscotch Pudding I

Reviewed: Nov. 9, 2012
I reduced the cornstarch to 2 TBS and the consistency was perfect. I loved the flavor, though it was a bit sweet for my taste. While warm, it was smooth and creamy. The next day, after being refrigerated, it was still good, but had a grainy texture. This was my first time making pudding so maybe that is normal.

German Pancake

Reviewed: Jan. 29, 2012
I wish I could give this recipe more than 5 stars. The pancake was delicious by itself and the syrup is absolutely phenomenal. I did leave it in for a couple minutes longer than stated and I sprayed my Pyrex pan with cooking spray before pouring in the butter. It slid right out with no sticking. Fantastic...going into regular breakfast rotation.

Hot Fudge Cake

Reviewed: Jan. 23, 2012
I love this cake and have been making it for years. My favorite variation is to use hot, strongly-brewed coffee instead of the hot water. Yum. Remember that you are supposed to end up with a sauce under the cake. Do not try to bake it until it is set.

Eggnog Thumbprints

Reviewed: Dec. 28, 2011
I really enjoyed these cookies. The cookie itself was very tender and crumbly, which I enjoyed. Make sure to mix in the flour by hand. The dough should be rather dry and crumbly. If you have one solid ball of dough, your cookies are over-mixed. I used a melon baller to get the correct size and made the indentation with a wooden spoon handle. If the cookie starts to come apart, press it gently back together. The only reason I gave this recipe 4 stars was because I feel it needs a stronger rum flavor. Next time I will use rum extract because I can increase the flavor without significantly increasing the liquid. The icing, mixed by hand and stuffed in a piping bag, was the perfect consistency, nowhere near runny. Runny icing is an error on the part of the cook, not the recipe. I can't wait to make these again.

This was fantastic. I made it exactly as written and it was quick and delicious. Next time I will use a touch less sugar as a personal preference. Thank you so much for this wonderful recipe.

Pumpkin Cheesecake Bars

Reviewed: Oct. 11, 2010
AMAZING! I didn't have a full cup of chopped pecans so I made up the difference with some quick oats, but otherwise I followed the recipe exactly. It was perfection. The ratio of crust to filling was perfect. I couldn't stop smiling and laughing while I was eating. Do yourself a favor and make these bars. They are great when they cool and even better after they've been refrigerated. Thank you so much for this wonderful recipe.

Maple Syrup and Banana Sauce

Reviewed: Oct. 6, 2010
This is delicious and very simple to make. I put these bananas on oatmeal pancakes. The pancakes didn't turn out well, but with this sauce, no one cared. I will be making this sauce again.

Oatmeal Pancakes

Reviewed: Oct. 6, 2010
I wanted to like this recipe, but it turned out horribly. I started out with the batter made exactly as written and after the first two paper thin pancakes I added another 1/2 cup flour and a 1/2 tsp. baking powder to come up with something resembling pancake batter. They didn't taste bad, but they definitely looked more like crepes than pancakes. Thanks anyway.

Absolute Best Liver and Onions

Reviewed: Sep. 22, 2010
This dish was fantastic. I only soaked the liver while the onions cooked as I prefer the strong liver flavor. After cooking, I added 1 cup of beef broth to the pan drippings and cooked until the liquid had reduced by a little more than half. I then added the onions and the liver back to the pan. The remaining liquid thickened nicely to make a delicious gravy. Thank you for this wonderful recipe.

Spicy Rapid Roast Chicken

Reviewed: Jan. 23, 2008
This cooking method is fantastic. The reason I only rated this recipe four stars is I had to make some changes to season the meat of the chicken as opposed to just the skin. I mixed the olive oil and spices in a bowl (adding a few extra spices to taste). I then added two tablespoons of softened butter and mixed well. I rubbed this mixture inside and outside the chicken, but I also rubbed it under the skin. This made for an incredibly flavorful, juicy bird. Thank you for this recipe.

This is such a good recipe. It is so easy to make, but you would never know by the taste. This is going to be a regular party food from now on.

Salmon with Dijon Cream Sauce

Reviewed: Feb. 26, 2007
The salmon was fabulous with the sour cream sauce on top. I mixed the dill and pepper, along with some red pepper and a pinch of salt, directly into the sour cream. The fish was moist and flavorful. However, the dijon cream sauce, in my opinion, was horrible. I reduced the flour to two Tbs. so the consistency was good, but it was incredibly bland. I tried adding garlic, salt, dill, lemon juice, onion powder and pepper, but nothing helped. I will definitely make the salmon again...without the sauce.

Best Cream Of Broccoli Soup

Reviewed: Feb. 9, 2007
This soup is wonderful. I made only minor adjustments to suit my tastes. I left out the celery and added fresh garlic, more onion and red pepper flakes. I also added a bit of cream cheese when I was blending the soup. I used half milk and half evaporated milk and added a pinch of nutmeg at the end. This is definitely going into the recipe box. Thanks.

Tuna Salad

This is a really good salad recipe. I used mayo instead of the french dressing and I added some garlic and onion powders just out of personal preference. Nice cool summer supper.

Asian Coconut Rice

Reviewed: Apr. 4, 2006
I really liked this recipe but I did change a few things. I added extra sugar and made this into a dessert. I cooked the rice as directed and then chilled it while I made a coconut syrup. I topped the cold rice with coconut syrup and fresh mango. Absolutely divine.
