Seafood Enchiladas

I took the advice of other reviewers and used fresh crab. But wow, this recipes sure calls for a lot of super rich dairy ingredients! So I cut back on the cheese cream and sour cream measurements just a bit to make myself feel better, and it still turned out great! I also put fresh cilantro green onion and chopped tomato on top. It was awesome!

Big Soft Ginger Cookies

These are the best cookies ever. I used shortening instead of butter and brown sugar instead of white sugar (same proportions). I dipped the balls into sugar and pressed them down onto a greased cookie sheet. They were a huge hit!

Caribbean Coconut Chicken

Instead of the crushed red pepper I included about 2 teaspoons of fresh grated ginger and 2 tablespoons of fresh cilantro. It gave it a wonderful fresh flavor. I also don't understand why this recipe suggests baking it for 45 minutes. I just stirred it all together on the stove top and let it cook down a bit before serving and it was great! I served it over rice and my husband loved it. He went back for seconds. Not sure if kids would like the tropical flavors but I thought it was a wonderful new way to use chicken. This one is definitely getting made again and again.

Hershey's® Red Velvet Cake

Well my cake didn't turn out that red on the inside (more food coloring next time i guess) but the pink frosting made it so festive! I think next time I will go buy those heart shaped pans. But wow, it tasted so good, and moist! thanks hershey's.

very very good. turned out great. I thought the recipe called for a few too many sun dried tomatoes so I cut that back. I don't have children but I can't imagine kids liking it very much.

Cinnamon Cookies II

These are so good my husband and I can't stop eating them! Not too sweet which is nice for a change. I added a little allspice to the mix for kicks and pressed the cookies down on the tray with a fork to make a little design. I can't say enough good things about them!

Stuffed Mushrooms II

Everyone loved these. I turned around and they were gone! I skipped the final step of coating them in breadcrumbs and just heated them up for 20 minutes on a greased cookie sheet instead. They still turned out super.

Tomato Enchilada Bake

I thought this was great. I actually skipped the tomato sauce and just used the salsa on top. It just seemed like too much tomato for me. But even without the tomato sauce I thought it was fantastic! A great thing to prepare ahead of time.

Cream Of Ginger Carrot Soup

This was fantastic! I didn't have the ginger liquer but I just used a little extra fresh ginger and white wine instead. Wow. So easy, My husband loved it and we fought over who got to bring the leftovers to work the next day!

Warm Crab Dip II

After a while we stopped putting it on crackers and just scooped it right into our mouths on spoons! It was so good we were embarassed at how much we ate. I highly highly highly recommend this recipe. You can add a bit of chopped celery to it if you like.

Chicken Piccata III

This turned out great. Adding paprika to the flour made the chicken have a great color. I substituted a bit of wine for the chicken broth which turned out well. I served it with tomato/mozzerella salad on the side. Yummm

Bananas Foster I

Wow. I served this to company and I had to go back in the kitchen and whip more up cause everyone wanted more! So easy. I didn't have the banana liquer and it still turned out fabulous. I served it over a slice of pound cake with a scoop of vanilla ice cream on the side. Soooo good.

Celery Wine Baked Chicken

It tasted great and was so easy. I actually prepared the sauce ahead of time and just added the chicken and baked it later. The sauce was a little thin so I recommend thickening it up a bit.
