Blueberry Coffee Cake III

This recipe was fantastic! I added 2 tsp vanilla and 1/2 tsp almond extracts and 1/4 c milk. I also had to use frozen berries, took the tip of another reviewer and shook them with a little flour. The only problem I had was it took about 55 mins to bake and even though I waited 15 mins to add the topping it had started to burn by the time the cake was done. Next time I'll wait about 30 mins before adding the topping. So good, I can't stop eating it!! Thank you!

Whipped Cream Cream Cheese Frosting

I made this last night to ice the outside of a lemon filled lemon cake. I added a few handfuls of raspberries to the cream cheese mixture and used a cup of icing sugar instead of regular. It was plenty sweet and iced the cake beautifully! Will Definately use this recipe often! Thank you!

Crumb-Topped Rhubarb

Delicious!! I added vanilla to the pie and cinnamon in the topping as well. Served with homemade raspberry ice cream, oh so good!! Not too sweet either, it was perfect!

Asian Cucumber Thai Salad

This recipe was SO good! The only things I changed was using Apple cider vinager instead of regular and a fresh spanish chili instead of chili flakes. Absolutely fantastic! Next time we'll use 3 cucumbers and a bit more veggies, it was a lot of leftover liquid. Thanks alot!

Whole Wheat Bread II

I cut the recipe to do 3 loaves, used about 1/2 cup brown sugar and skipped the white. I also used a cup of rye flour. It was absolutely delicious bread! After the first rise, I took one third of the dough, stretched it out and sprinkled a tbsp of cinnamon and a bunch of raisins on it, rolled it up tight and let it rise another 2 hours in the bread pan. So so good!! Thank you!

Grilled Salmon with Habanero-Lime Butter

Wow!!! It was actually as good as it smelled! I used homegrown chillies instead of habanero, but was this really good! I will definately make this for guests! Thank you!!

Caramelized Salmon with Cherry Salsa

So simple and Really good!! I only had 1 hour to marinate and it would have been so much better with more time. My only complain was that the sugar made it more difficult to get the salmon off the barbeque. But the flavours were soooo good! I made the salsa with canned cherries, mango and mint. Mmmmmm. Thanks for a healthy and very tasty dish!

Country Seed Bread

Delicious! I used sunflower seeds instead of the poppy seeds and ground the flax. Doubled the recipe and did it all by hand. Really good!

Maple Oat Bread

Delicious bread! We couldn't stop eating it last night. I only used 1/3 c water to proof the yeast, cut the maple syrup to 1/3c and used 1 cup of whole wheat flour. I also didn't need the last cup of white flour, probably because I cut back on the water. It was super light, fluffy and with a delicious maple finish. Thank you!!!

Nanaimo Bars I

This was pretty good! I cut the walnuts and coconut in half, and did 50% more vanilla filling. Next time we'll add a bit more butter, milk and some vanilla extract to the filling. It was quite dry and icing sugar-y the way the recipe states. Otherwise it was perfect! We'll definately make this again, thanks!! The second amount of butter should be just under 1/3 cup, not 1/4, 4 tbs milk, not 5

Pumpkin Pancakes

These were great! Perfect amount of spices. The batter was really thick but they cooked perfectly, do not add more milk to thin them!! Definately will be making these again when we have leftover pumpkin puree. Thanks!

Pan-Seared Duck Breast with Blueberry Sauce

This was really spectacular! We had to change some ingredients to what was available but it was still amazing! DH said it's one of the best meals I've ever cooked! We halved the sauce and still had enough for 4 more servings. This was so great, we can't wait to invite people over just so we can make it again!!!

Whiskey Marinade

I would've given this a 4 but all my guests gave it a 5! Used it on an ostrich steak and it was so tender and juicy. I really like that there's no oil so there were no flareups on the bbq. Will definately use this again! Thanks!!

Caramel Macchiato Cheesecake

Made this tonight for a housefull of swedes. It was a great cheesecake and I will definately use the base cake and change the extra flavours. Next time I'll serve with more caramel as I didn't wanna overdo it this time. The only thing I changed was adding a heaping tablespoon of instant coffee at the very end to the batter. The ones inside melted in but the ones on the top made a really pretty display. Thank you!

Baked Pork Spring Rolls

These were really good! I used shredded turkey (like an imitation ham), and added extra carrots and cabbage. I made 18 rolls, using about 3 tablespoons per roll. Served them at the New Years Eve party and they were a huge hit! I've made these many times since, playing with different amounts of spices and veggies... and we're always looking for an excuse to make them again. Thanks alot Rayna!
