Creamy Chicken Lasagna

Reviewed: Jul. 12, 2004
i add 2-3 cloves of garlic, a small onion, basil, ½ cup spinach, parmesan, and pepper to the chicken mixture, as well as using ½ ricotta and ½ cream cheese. I put it in a 5 x 9 pan, and put a layer of noodles between the sauce and chicken. It is absolutely amazing! My boyfriend always asks for this when there's a special occasion.

American Potato Salad

Reviewed: Jul. 12, 2004
Amazing! I add 2-3 tsp dill, parsley, 2-3 tsp of spicy mustard and an extra egg and paprika for the top. i also mix all the spices and mayo in a small bowl, minimizing the mixing of the potatoes. Great recipe. The inlaws (in sweden) are in love with this and have asked for the recipe! thanks a bunch!!

Upside Down Caramel Apple Pie

Reviewed: Jul. 12, 2004
I tried this pie again and inverting it (after Greasing!!) made it look horribly ugly. I added more caramel also. The taste was excellent, but it is too ugly. I am going to try this again by cooking the caramel in a pot and drizzling over the pie afterwards, I think it will look much better, and be easier to handle. Thanks for the idea though! oh, and I didnt use pecans

Apple Pie Filling

Reviewed: Jul. 12, 2004
I only used 3\5 of the water and had to add a little more starch, but that may have been because I used Granny Smith apples. It was pretty good and easy, although seemed to be missing something. I will keep looking for other recipe, but would definately fall back on this one.

Pie Crust III

Reviewed: Jul. 12, 2004
I was very skeptical because of the oil, but it worked very well, it didnt burn and was pretty flaky. Definately a keeper, although a little oily and harder to put into the pan than normal.

Aunt Dee Dee's Apple Coffee Cake

Reviewed: Jul. 26, 2004
Living in Sweden, I couldn't buy pie filling, so I made homemade stuff. The cake itself was very boring, it definately needs an extra kick of something. maybe cinnamon, vanilla or both. It looked very appealing though, although my friends decided that it needed Vanilla Sauce. I'm not sure if I will try altering this recipe, or look for a new one...

Blueberry Coffee Cake II

Reviewed: Jul. 26, 2004
I added extra blueberries (still could've used some more) and it still came out very very dry, although the taste was good.

Spinach Quiche

Reviewed: Jul. 26, 2004
The flavour was great although my boyfriend and I both missed the crust. Next time we will make it in a crust, or maybe double (or triple) the crutons. Tasty!

Scallop Scampi

Reviewed: Jul. 27, 2004
We made the recipe with 1 1\4 cubes of fish buillion disolved in 10.75 oz of water. The taste was good, very rich, but the appearance was definately lacking something. My boyfriend suggested next time to use cream and buillion instead of the chicken broth. We will definately use this recipe again. Very fast, easy and light. Perfect for those warm evenings.

Chicken and Rice Casserole II

Reviewed: Jul. 30, 2004
We added some peppers, extra fresh mushrooms, diced up 1\2 an onion and used leftover chicken instead of a whole one. The flavour was good, add some corn or brocolli and use white and wild rice instead. Also we were unsure of whether it should be 1 cup rice before or after cooking. Definately 1 cup (or a little more) before cooking. This recipe has a ton of potential. We are looking forward to making it again.

Apple Crisp II

Reviewed: Jul. 30, 2004
Following other suggestions, I only used 1\2 cup of brown sugar and put all the crumble on top. I also used some extra vanilla and put 1\4 tsp of nutmeg in the sauce. It was really good but overly sweet. Next time I will use only about 1\4 of the sauce, if any at all. The crumble part was perfect though!

Honey Carrot Cake

Reviewed: Aug. 4, 2004
I have no idea where I went wrong in this recipe (i did drain the pineapple), but after 50 mins, the cake was very dark on the outside and like pudding on the inside. I turned the oven back on for about 20 mins, then shut it off and left the cake in over night. The flavour was pretty good, despite the strange consistency of it. I dont think i will try this one again though, the taste definately wasn't anything special...

Ricotta Fettuccine Alfredo with Broccoli

Reviewed: Aug. 7, 2004
I'm not sure what I did, but I curdled the sauce. Despite that, we added quite a bit of Chicken Kassla (tastes almost like a ham chunk). Despite the chicken and broccoli, it still didnt have much flavour, although this definately could have been due to the curdling. I'm not sure if the lower fat was worth the result.

Maple Salmon

Reviewed: Aug. 9, 2004
I used Pollock and marinated overnight. It tasted much more like a teriyaki sauce than maple. If I was going to try this again, I would halve the soy sauce. I doubt we will try this again, although I was really excited about finding a maple fish recipe. :-(

Spinach Chicken Parmesan

Reviewed: Aug. 10, 2004
I added a few things and it turned out quite well. We don't have weight in ounces here so I used just over 2 cups of frozen spinach. Next time I make this (and that will be soon) I will double all the sauce, use 1 red and 1 yellow pepper, 3 cloves of garlic, 1\2 large onion, salt, pepper, and twice as much cheese. We didn't have italian seasoning here either, so I just put 1\4 tsp each basil and oregano in the cheese mixture, and another 1\4 tsp each sprinkled on top of the chicken before adding the spinach. Quick and easy dish and quite alot of flavour despite the low fat part. We're looking forward to trying it again with these new additions. Thanks!

Cinnamon Bun Scones

Reviewed: Aug. 21, 2004
It was a very easy recipe! I used raisins instead of nuts. And only used about 1\2 of the icing. next time i will probably add a little more cinnamon mixture because a fair amount stuck to the raisins and there wasnt much left to swirl. Overall a very good, easy recipe i will be making again. Thanks Quakor!

Fresh Southern Peach Cobbler

Reviewed: Aug. 29, 2004
This recipe wasn't anything special. I have never had a cobbler before, and didn't really know what to expect. I will stick to Crisps. I found that there was almost a bitterness to it, but my boyfriend thought it was too sweet. Sorry, I won't be using this recipe again.
