Chef John's Blueberry Muffins

Fabulous! I used blueberry & blackberry yogurt + lemon juice in place of the sour cream, and cut back on the sugar. I used ½ whole wheat flour and made a lemon glaze for them. Simple, light, fluffy and delicious. Cupcake like in texture. Thank you!!!

Hillbilly Punch

Awesome! I had to sub Bacardi Razz for the rum & peach schnapps as they didn't have any peach liquor or liquer here. I used a bit less juice and pop, and threw in frozen raspberries, strawberries and cherries. Was a big hit and we'll definately make it again! Thanks!!

Mocha Bundt Cake

Delicious!!! I cut the sugar down to about 1½ cup which was plenty. Definately not too strong of a liquer flavour, my friends went crazy for this cake and asked to take some home. A perfect cake to go with a cup of coffee in the afternoon. Thanks!!

Balsamic Tortellini

Pretty good. I added tomatoes and fresh basil. It's only 2 servings, not 4. Not an outstanding dish but a good standby on those nights when you have very little time.

Buster Bar Ice Cream Dessert

Amazing!!! I couldn't find evaporated milk so I used sweetened condensed, and skipped the sugar. Next time I'll cut WAY back on the butter in the sauce, as it cooled a ton of fat leaked out so I was pouring it down the sink. I'm not sure the point of butter in a chocolate sauce anyway? Maybe I'll try a tbsp or two instead of 1/2 cup. I poured a peanut butter sauce (heated PB, added icing sugar and a little vanilla) over some of the crust. I poured a homemade caramel sauce on the other half. Both were equally as delicious. I can't wait to make this again and again.

Irish Cream Truffle Fudge

The flavour was good but the texture was gritty from the icing sugar. Everyone else loved it but I wish it'd been more 'traditional' in texture. Will probably make again since the flavour was so yummy.

Quinoa Black Bean Burgers

These were pretty good! Our can sizes are smaller so I added some kidney beans. I froze them before frying them so they'd keep their shape but I think they woulda fried just as well if I'd thrown em directly into a hot frying pan. I added spices and next time will add quite a few more but these were a great 'base' recipe. Next time we'll try with cilantro and guacamole.

Oatmeal Chocolate Coconut Chewy

These were good! I left out the walnuts because I didn't have any at home. Next time I'll add a bit more vanilla. For those who are ending up with flat cookies, put the batter in the fridge before baking. It hardens the butter and leaves you with fantastic high cookies :)

Granny Kat's Pumpkin Roll

This was good, really easy to make. I spread it out in a large pan and had no problems with cracking. I had the icing in the fridge but it was still too runny so next time I'll do the icing first, get it in the fridge to solidify while I make the cake part. The flavours were good, might add more spices to the cake next time and more vanilla to to icing. Great texture, nice and moist. Thanks!

Roasted Butternut Squash and Garlic Lasagna

This was pretty good. I added more garlic, mozza and a layer of red peppers, spinach and fresh basil. Next time I'll add some chili, more black peppar, and my hubby wants to try it with tomatos in it. A good vegetarian dish and a great way to use butternut squash.

Pumpkin Apple Streusel Muffins

These were great muffins, although I made some changes to make them healthier. I cut the sugar by half and they were plenty sweet! Used half whole-wheat flour and added some wheat germ to lighten them. I also skipped the strussel because I knew we wouldn't eat most of them the same day. They were really yummy and relatively healthy after the changes.
