Grandpop's Special Chocolate Cake

I have mixed feelings about this cake. The first time I made it I baked it in a 13x9 inch pan. It overflowed all over my oven. In spite of that, it was delicious in the end. Today I made it in 2 8 inch layers, but put it on a cookie sheet, just in case. It is currently in the oven and has overflowed the pans again. What am I doing wrong? I can only hope that the cake ends up cooked and edible. I followed the recipe as it was written.

Jesse and Steve's Fresh Strawberry Cake

I don't know why I waited so long to make this cake - it's delicious! I think my pan was larger than 13x9 because the cake was rather thin, but not heavy - lovely texture. Not too sweet and the lemon glaze is just the right finishing touch.

Guinness® Corned Beef

I braised the corned beef in the oven for ~3 hrs, refrigerated it overnight, skimmed the fat and put it in the Crock Pot the next day with carrots and cabbage (and enough additional liquid to cover all) for 4-5 hrs. All were perfect! Wonderful recipe!

Beef, Green Chili and Tomato Stew

This was outstanding! I used frozen, roasted New Mexico chiles instead of canned and simmered closer to 3 1/2 hours. The meat was tender and the flavor was wonderful.

Pasta e Fagioli a la Chez Ivano

I think that the only problem with this soup is the lack of salt. On the second day when I reheated it, I added a fair (1 tsp.) of salt and topped with grated parm. I served with a salad and Italian bread. Very good!

Fabulous Pesto Pasta Salad

Beaumont Ranch Potato Salad

I did two things not in line with the original recipe - I halved the recipe and used half Mayo and half salad dressing. Absolutely wonderful potato salad!! I was leary about the dill pickles, but they add so much to the flavor. I highly recommend this potato salad. Thank you for the recipe.

Bread Machine Pizza Dough

I usually buy frozen dough balls at the grocery store, but decided to try this recipe instead. What a flavorful, easy way to make pizza dough in the same amount of time it takes to defrost store-bought! Hubby even remarked how much better it is. Thanks for the recipe.

Jalapeno Bread I

This would have been 5 stars if I had used the amount of Jalapeno called for, but I chickened out. I also cubed the Monterrey jack cheese with good results. This is a delicious, easy bread machine recipe.

New York Cheesecake II

This cheesecake is amazing!! So rich and creamy, not pasty. I used all neufchatel cheese to cut down on fat and baked it at 400 degrees for 10 min. and 200 for 45 min. as previously suggested. I removed it when my oven was cool and refrigerated a few hours before serving. Definitely a keeper!!

Lime Chicken and Mushroom Pasta

I, too, felt more sauce and zing were needed in this recipe, so I added 2-3 cloves chopped garlic with the vegetables, 1 cup chicken broth and half a cup of Half-n-Half for the sauce, and 2 tsp (could have used more) green chili paste to make it more of a Thai flavored dish. It was quite good.

Hungarian Pork Chops

This recipe was very tasty with changes from others (less cooking time, adding onions, more worcestershire and more regular plus hot paprika, and adding the sour cream at the end). My change was to use concentrated tomato paste half and half with the ketchup. Maybe a little thyme would be good, too.

Peasant Bread

The dough for this bread was quite loose while it was mixing so I added about another 1/2 cup of flour. I also used the French bread cycle as suggested. It turned out light and delicious. I will defintely make this again.

Moroccan-Style Stuffed Acorn Squash

This was a marvelous recipe! I did make two additions to the stuffing - a little cayenne pepper for kick and chopped mushrooms. I omitted the brown sugar for the squash as it was sweet enough without it. The stuffing alone would be a great side dish.

Raspberry Cheesecake

I used lowfat cream cheese (neufchatel) and chocolate raspberry Milano cookies to make this luscious dessert. I took it to a surprise party and had to hurry to get a piece for myself! Delicious!! A keeper.

Southwestern Turkey Soup

This soup is fabulous! I used 2-14 oz. cans of diced tomatoes with green chilies instead of peeled tomatoes and I only had cheddar cheese on hand to shred. I also added a dollop of sour cream to finish. My husband loved this and so did I!
