I simply love to cook. I grew up in a Polish family and married into an Italian family. I've taken our traditional family recipes and tweaked them into my own. Never be afraid to experiment in a kitchen.
My favorite things to cook
I've smoked just about everything from meats to fish to cheeses. I love to cook during the cooler weather when all you want to do is sit down to some good old fashioned comfort foods such as meat loaf with mashed potatoes or a glorious shepard's pie.
My favorite family cooking traditions
Now that my children have grown and live their own lives, they both have decided that it would be a great idea to have a sit down family dinner every Sunday. (Amazing, they wouldn't do this growing up!!!) I let them pick the dish and the ethnicity and they relax in the living room with my wife while I relax in the kitchen cooking. Yes, I said relax while I cook. Cooking should not be a chore but a passion.
My cooking triumphs
The pinnacle of my cooking triumphs was when I was selected to be featured on The Cooking Channel. The interview was amazing and the whole crew was most gracious. They are truly a part of our extended family and I stay in touch with most of them. It is an eye opener as to what transpires behind the scenes in order to make a successful episode.
My cooking tragedies
I've ruined my fair share of dishes just like everyone else. It is a learning experience. I think the biggest thing that sticks out in my mind is never, ever smoke beef short ribs!!! Ugh, way to tough.
