Lamb Chops with Balsamic Reduction

Great recipe - especially when our grill was snowed in this winter. Simple, easy, delicious, foolproof way to cook lamb chops on the stove top.

Merritt Family Two Hour Turkey

This is a fabulous recipe. I had a 13-lb turkey and it was done in about 2 hours. The white meat was extremely moist and the drippings made a very flavorful gravy. After the first hour, when I removed the foil, I did have to add more broth to the pan. And I am allergic to tomatoes so I skipped adding the tomato juice. Otherwise, I followed the recipe and was very, very pleased. I will definitely use this recipe again.

Blueberry Banana Bread

I don't like to change recipes but in this case I made a substitution and a mistake. The recipes was very forgiving. I did not have shortening and decied to use butter as someone else had suggested. It was frozen and in my haste to soften it in the microwave, the butter totally melted. I used the melted butter anyway -even though I knew it would not 'cream' with the sugar properly. The bread was absolutely wonderful. My husband loved it, too. I will definitely make it again - the right way - just to see if there is a difference in taste. I also used a regular sized loaf pan and baked it for 70 minutes. Fabulous bread.

Spinach Rice Casserole

I was looking for a quick, easy recipe to use a whole mess of fresh spinach from a neighbor's garden. This recipe did the trick. I probably added more spinach than was called for since I had a lot on hand. I also used brown rice since that's what I have in my pantry. I did not find it bland at all but I don't usually measure salt and pepper when cooking - I just go according to taste. My husband loved it, I was able to whip it up for dinner in no time, I had all the ingredients on hand - a clear winner in my book. I will use this over and over again.

Chili Vegetarian Style

I have been eating this chili for lunch all week - it is great on top of rice, baked potato, even butternut squash, spicy but not too hot. I only added 1/4 c splenda - still thought it was too sweet but let it sit overnight as recommended and the sweeetness went away. Love that a serving has 10 grams of fiber.
