I followed the recipe as advised, and my husband and I loved it. The crumb topping was crispy, the muffin was moist and the banana flavour was just right. For those who were complaining about a lack of banana flavour, they should first understand that by using almost over ripe bananas is ideal for these banana cake/muffin recipes to obtain a more stand out banana flavour. I also did not understand how some of the poor reviews stated theirs were burnt or uncooked and gooey in the middle? I have baked this recipe as directed four times and they have all turned out amazingly perfect, and I ain't no genius at cooking! They are definitely best eaten fresh, as they (like all other muffins) go soft the next day. So the crispy topping will no longer be crispy (duh!).
