Italian Herb Bread I

I made this with my KA dough hook. I did have to add about 1/4 c more water as it was even too stiff for the KA to handle. So easy! Formed 2 big Italian style loaves. Lovely slicing texture when cooled. This is a keeper. Did bake it for 40 minutes until the loaves sounded hollow when tapped. Thank you for a wonderful bread!

Cool Chicken 'n' Pasta Salad

Good as is but better when: Stuff whole chicken with 2 celery ribs cut in half, springs of fresh thyme, rosemary and 8 sage leaves, seasoned with Riley's seasoning salt (or s&p). Roast bird til done.(2 hrs or so) Cool and bone chicken. I used it all in the salad as my family prefers lots of meat. I boiled carcass and skin for a soup broth base and froze it. I used 3 c. dry tri-color rotini cooked to al dente, but would use 4 c. next time. Otherwise I didn't change the basics. However, I think black olives and a sprinkle of Parmesan would be good additions.

Slow Cooker Enchiladas

Only change I made was to double the meat for my carnivore family. Nice fast meal! I served it with sour cream and chopped tomatoes on the side.

Extra-Yummy Fluffy Pancakes

I loved the strong cinnamon flavor. They smelled amazing while frying. Even my picky hubby enjoyed them. We serve them with home canned peach, blueberry and strawberry jam. I think our grape butter would be good, too.

Honey-Spiced Peaches

Used 10 lbs of peaches from our neighbor's tree. It made 8 pints, and still have enough liquid for another pint. They look gorgeous. One pint didn't seal so, I'm putting it in the fridge for a few days before tasting, as I want the flavors to run through. Too bad the spices weren't cooked in the liquid, as I love the smell of canning spices. I am excited to taste these. However, I packed the peaches tightly and they are still floating in the jar. Curious.

Lime Spareribs

I've made this 3 times this summer and my family loves it. I use the ketchup-like commercial chili sauce so there is no heat. I put in a minimum of 8 garlic cloves, as we can never get enough. Otherwise I leave this scrumptious recipe as written. Mushrooms don't add much flavor, but I serve the juices over rice and the mushrooms are great for that! Thanks for such a nice alternative to barbecue sauce (which hubby won't touch). Great ribs.

Dave's Georgia Black Eyed Peas

Wonderful! I served it with rice. The only tiny change I made was the fact that I substituted 1/2 black beans as I didn't have enough peas on hand. It made its own nice thick gravy that was the best with rice! Great cold day meal.

Mom's Stovetop Pork Ribs

Fantastic! Had to cook them for 2 hrs on simmer, but worth the wait! Good thing I used low sodium soy sauce, as it was a bit salty. However, I don't normally cook with lots of salt, so I'm not a good judge of saltiness. The lime gave it a tiny zip! Yum!!

Slow Cooker Au Jus Pot Roast

I will try anything and needed a new pot roast idea. This sounded good. Followed the recipe to the letter. It was just ok. I had made some nice Czech style dumplings to go with the au jus. A waste of the dumplings. The roast looked and smelled great while searing... But my family was unimpressed, as was I. Something was missing in the flavor, and I am at a loss as to what.

Carrots in Dill Butter

I used a freshly opened bottle of dill seed. Because I couldn't taste it I tripled dill seed. It was very bland and my family asked that it not be made again. Too bad as I love dilled carrots. Disappointed in the extreme.

Round Steak Sauerbraten

I upped the brown sugar to 3 T and vinegar to 6 T. I changed the onion powder to 1 lg diced onion, 2 bay leaves, 3 pcts brown gravy, up to 1 T worchetershire. It was an ok basic recipe, just too bland for my family without the adjustments. I might change the wine vinegar to cider vinegar for more pop!
