Oatmeal Raisin Cookies IV

Okay, after reading the previous reviews, I think I have a few pointers. Anyone who is having flat cookies is probably not letting the butter soften naturally. This is definitely important - if you use the microwave to soften the butter your cookies will certainly flatten. If you are still having flat cookies you can try and use baking powder instead of baking soda. The next suggestion is to add at least 2 tsp. cinnamon (and possibly some allspice and cloves if you like those flavors - 1/2 tsp. of each). This recipe calls for rolled oats - but this does not mean traditional cooking oats - they are rolled oats also, but so are quick 1-minute oats and they will soften in the oven whereas the traditional oats will not. And whatever reviewer suggested mixing the dough with your hands was a genius. My hands worked so much better than a spoon. And make sure to use 3 jumbo eggs or 4 large eggs to give it enough to keep it together. These cookies when prepared correctly are wonderful. By far the best oatmeal raisin cookie I have ever made!

Cinnamon Coffee Frosting

Okay, this was a WONDERFUL icing with just a few tweaks. I omitted the milk and instant coffee and used about 1/3 cup of strong brewed coffee (dark roast). Once I added the sugar, it was way too sweet, so I added a little bit (tablespoon or two) of butter flavored shortening to cut the sweetness and it turned out perfect. Make sure to add the coffee in slowly so you can stop before the frosting gets runny. And I find it helps using a high quality cinnamon or specialty cinnamon. And of course, the stronger the coffee the better. This recipe on a chocolate cake is pure heaven. Thanks so much!

Chocolate Fudge Buttercream Frosting

I have been searching for a chocolate frosting recipe for over 4 years now. Every recipe I have tried ends up tasting like the store bought kind. I hate the store bought kind. This recipe is wonderful! I used it on my son's birthday cake and everyone loved it (me too for once). I can't wait to try it on my deep dish brownies. I used butter shortening instead of regular, cream instead of milk, and double the vanilla - voila! The perfect chocolate frosting recipe...

Creamy Shrimp and Corn Soup

This is a very good base recipe - which leaves alot of room for tweaking - I doubled the recipe and added a package of cream cheese and some pepperjack cheese. I used shrimp stock instead of chicken broth - I also added green and red bell peppers in with the onions and it gave the soup a pretty presentation with all of the colors - you can also add celery if you like - if you aren't interested in saving calories, you can substitute butter for the margarine and heavy cream for the skim milk - they make a terrific creamy soup - all in all a good recipe to start off with :)

Broiled Tilapia Parmesan

Whoever said this was restaurant quality was wrong! This is better than any restaurant could ever make - use fresh parmesan and fresh basil and this is even better :)

Eclairs II

I have tried many of the eclairs on this site, and this is the best one yet! I would cut the filling in half, it always makes way too much - or if you make all of it, add some bananas and vanilla wafers to the rest and serve in individual dishes as banana pudding :)

Chicken Barbeque Sauce

This is absolutely the most divine marinade for chicken. Marinade overnight and it will melt in your mouth. I was so wary when I started it because of the color and smell (all that vinegar), but it is so scrumptious. 2 thumbs up :)

Honey Mustard Dressing II

Perfect dressing! Be sure not to eye ingredients, if you are a little off on one thing it tastes funny - but measure exactly and it is wonderful! Try this on a fried chicken salad with mushrooms, cheese, and avocado - nothing better than that :)

Margaret's Southern Chocolate Pie

Very good and extremely easy! I like the meringue topping, but my kids prefer a whipped topping. Beat 1 c. heavy cream until soft peaks form then add 1/4-1/2 c. confectioners' sugar and vanilla if you like - top with this and it is a sweeter treat - great with coffee :)

Carrot Cake

This carrot cake is by far the best I have ever made! It is so moist and flavorful! Most of the recipes on here I find I have to tweak slightly to perfect them, but not with this one - it is delightful as is :)

Soft, Moist and Gooey Cinnamon Buns

This is by far the BEST recipe for cinnamon rolls I have ever tried (and I have tried many) - the only thing I would change is to let your dough rest for 10-20 minutes before rolling it out - that way the ends won't be so elastic - TERRIFIC recipe :)

Cream Cheese Pound Cake II

Sour Cream Poundcakes have been the only kind my family has eaten for generations. After making this recipe I think I will have to convince my family to switch. It is wonderful! **I used vanilla extract instead of butter and it was perfect. Recipe can also be cut in half and baked in a loaf pan (I used 9x4).

Blueberry Buckle

After reading previous reviews, I used only 1 1/2 c. flour, substituted half butter for the shortening, and added some vanilla (1-2 tsp.) It was wonderful! My husband always eats my treats with a big glass of milk - but he said he didn't even need it with this buckle because it was so moist and light. I also cooked it on 350 instead of 375 for about 40 minutes - remove it when a toothpick inserted in the middle comes out completely clean! Great recipe :)

Deep Dish Brownies

I added 1/2 cup chocolate chips and 1/2 cup pecans and they were wonderful! This is absolutely the best brownie I have ever eaten in my life (actually those were my husband's EXACT words). Someone below compared them to another recipe on this site, The Best Brownies, but I think they are 100 times better than those!
