Ranch Dressing II

Finding myself suddenly out of bottled ranch, I came across this recipe. I did not have the dill or chives available. I don't care for dill anyway but the chives definitely would have added to this! I thought it was REALLY mayonnaise-y and so I added 1/4 C more sour cream and more herbs/spices and it helped but I could still not get over the overpowering mayonnaise taste. I read some of the reviews and added a tsp. of white vinegar which helped. I will make this again but I will halve the mayo.

Delicious Gluten-Free Pancakes

I changed a few things to suit my ingredients on hand. I didn't have all of the flours so I just used Bob's Red Mill pre mixed all purpose gluten free flour instead with the same measurement as if you mixed all of them in the recipe above. I also didn't have powdered buttermilk so I skipped water and substituted the same volume of water for a mix of 1 part milk to 2 parts cream and 2 tsps of white vinegar. I also subbed out the canola oil for cinnamon apple sauce and added extra cinnamon. These take longer to cook than wheat flour ones, keep that in mind. My dad didn't notice and really liked them and when I told him they were GF he said, "what is this, witch craft?" Ha ha they were a win in my house.

Perfect Turkey

This was my first year making Thanksgiving dinner and I'd never even touched a turkey. So glad I tried this recipe. It was the best turkey I have ever tried. So must, even the left overs are most and it's Monday after Thanksgiving. Don't be afraid to use the amount of salt listed. I used a 8.75 lb. Turkey.

Eggplant Pizzas

Having never been one to like vegetables, I am trying new recipes and this was my first eggplant. I figured pizza would be a good start. I didn't use flour but I used panko bread crumbs which I mixed as indicated and also added garlic. I used tomato sauce with garlic and a bit of sugar and basil and used Monterrey jack cheese since I was out of mozzarella. It wasn't bad. Keep in mind, I hate vegetables.I will make and eat this again. It was a tiny bit bland though, nothing a little salt and more tomato can't fix.
