World's Best Lasagna
WOWSA This is one hell of a lasagna. A few tweaks to suit our taste and one amazing dinner. I cooked and then ground the sweet Italian sausage, used 1 roll Jimmy Dean hot and spicy sausage (instead of hamburger) added 1/2 cup cottage cheese to the ricotta, skipped the fennel seeds and added 1tsp of cayenne pepper, increased egg to 1 and a half, used 2 packages of sliced mozzarella cheese, added 4 TB of fresh parsley to meat mixture and 2 TB to ricotta mixture. Honestly this was the best lasagna our family has ever tasted. Highly recommend. Even my daughter who is not a fan of lasagna asked for seconds. Oh I cut the salt in half and may totally eliminate as my canned tomatoes had added salt.

Slow Cooker Stuffing
This stuffing was to die for. We fried our turkey this year so there was no drippings and no stuffing the bird. It was so moist and tasted better than my mom's stuffing. I did add a pound of sage sausage and then cut the sage in half. I still found that the stuffing had a little too much sage for my taste. Next time I won't add the sage. I only added a little chicken broth and then as needed. I used 6.5 cups torn french bread, 6.5 cups of seasoned croutons and then because I thought the sage was a tad over powering, I used a bag of Stove Top. This is a keeper for sure. I'll make it again for Christmas. We had no left-overs. Thank you thank you for a wonderful Thanksgiving. Everyone raved about the stuffing.

Shredded Beef Enchiladas
These enchiladas were amazing! I used a beef chuck tender roast to reduce the fat. I only used 1.5 cups cheese. I only used a little bit of coconut oil to soften the tortillas and did not top with extra cheese. My kids LOVED these. The sour cream mixture totally makes the dish. I brought one for lunch today. Yum, thank you.
