Ruth's Grandma's Pie Crust

the best way to make four whole crusts with this one is to roll it into a log and cut and weight the pieces with a kitchen scale, that way you know they are perfectly separated. i rolled one portion out with plenty of flour and managed an even layer for perfect pumpkin pie. flaky, but not crumbly. the remaining portions i placed in ziplock bags and froze them, as i rarely make pie with two crusts i can make three more good pies with this batch. Mixes well in stand mixer.

Perfect Pumpkin Pie

only four starts so far, because it didn't seem to have enough spice flavouring to it. i baked it for much longer than listed because a knife or toothpick never came out of the centre cleanly, after a while i took it out anyway and the centre was creamy but not raw. will try this one again with more spices. used Ruth's Grandma's pie crust recipe found here. nice and flaky but not crumbly

Shortbread Cookies II

Wow! these are great!! perrect for cookie presses! I added 2tbs molasses instead of extract and added a 1/4 tsp each of nutmeg and cinnamon. very good!!

Banana Coconut Loaf

i made this using fruit puree's instead of butter, and the first loaf didn't make it the day. I am now making our second loaf in two days and am using fruit puree's again and maple extract instead of almond as i used the last of my supply in the previous loaf. Even my dog loves this! no nuts, not dried fruit or whole fruits. Fantastic base recipe to play with!

Jacky's Fruit and Yogurt Muffins

Even though my DH hates muffins...i had frozen blueberries that i wanted to use. i reduced the amount of sugar by half, as the blueberry yogurt and the berries themselves are very sweet already. i added a splash of milk to make blending the berries easier, but the batter still turned completely purple! I also added a tbsp of maple syrup of a bit of difference. when reduceing the sugar i read that it is prudent to increase the vanilla so i did to 3 tsp. then i turned the batter out into a well buttered loaf pan and baked for about an hour...it was a hit!! serve warm, sliced with butter! i like to partially thaw the frozen berries in the hoped that they won't shrink up too much and causee the batter around it to become mushy, but still no luck in figuring that out. maybe next time i need to try dried blueberries that are reconsitituted partly...will let you know as i will make this again!!

Extreme Chocolate Cake

I decided to try this one because of all the great reviews. I reduced the sugar to 1 1/2 cups because others had said it was too sweet, substituted applesauce for the oil and added two medium sized bananas for variety. Because the bananas were previously frozen and become more liquid-y when thawed, I added 1/3 cup of flour....I will add a tasting review when they are finished baking!

Baba Ghanoush

Help!! i hate the seeds...what do i do to get them out of this otherwise fantastic recipe??? also what is recommended to cut down on the watery-ness of this recipe....i thought this was a think and creamy dish? i am sure though that it was something that i did wrong.... will come back to see if there are any posts to answer my plight!! i hate to have kitchen failures....and when an eggplant and a few tblsp's of tahineh are cheaper than a whole container of premade baba i will keep trying to make it myself!

Carrot Spice Muffins

these were great...i made these to personal tastes by changing little things without changing the essential recipe and they were a hit even with my pickiest eater. wrap these up individually in plastic wrap and throw em into the freezer! microwave them until thawed or put in the fridge the night before for a quick breakfast on the run!

Peanut Butter Banana Muffins

My DH hates muffins with a passion, so what i did with this fantastic recipe is this: add 1 cup extra flour, 1 cup of chocolate chips and turned these into cookies, soft chewie cookies! drop by tablespoon full and bake for 10 minutes! absolute perfection! and full of protein!

Piggies (Sugar and Cinnamon Pie Dough Cookies)

These are originally a french canadain recipe...generally filled with brown sugar for the classic sugar pie. these rolls are called "pette de soeur" which means "nun's farts" little sweet bursts from heaven. everything french canadian was religiously associated. enjoy!

Erin's Canadian Fried Dough

EH! As an Ottawa native these are the best homemade i have ever had! i like these better than rightt on the Canal because they don't freeze up as fast! a great variation for this shape is the make balls and gently drop them into the oil then roll in the cinn~sugar mix before cooling. as a beaver tail you can be creative with the toppings as well, i have seen pretty much everything for sweet to savoury (and sometimes gross!) be inventive and have fun! enjoy these around a campfire or around a local rink!

Corrigan's Minestrone

i did make this into a smaller batch, but wow this was fantastic! i used a sweet potato instead of white potato and the starchiness was much less noticable...i ran out of stock when the water level boiled off a bit and instead of adding water, which loses the flvours i added a puch of french onion soup mix and then added some water. it adds a beefy flavour. haven't eaten it yet but it smells amazing! even though it is 35 degrees celcius i am cooking it anyway!

Swedish Rye Bread I

i made a large round out of this....at first i was worried that it wasn't going to turn out because it took a long time to rise, but all good things are made for us to wait! i used whole wheat flour and made it 12 servings and threw it into my bread machine....fantastic results! loved the very slight sweetness to the crust. will make again!

Extra Extra Rich Brownies

this was not to my liking. i switched the sugar and cocoa like previous users have recommended and watched it closely so it didn't overbake. well the center was a goopy mess that wouldn't come out of the pan, and the edges were perfect. it tasted awful though. i couldn't rate it less than one star even though i would have. i will not use this again and will remove it from my recipe box.
