Sometimes its the easiest recipes that are the most tasty! Potatoes, ham, and a CrockPot means less time cooking and more time for...homework.

A couple of weeks ago I bought the Betty Crocker CrockPot recipe book and began perusing the recipes. I work full-time, go to school full-time, and every once in a while play Endless Ocean on the Wii (very relaxing!). With the temperature being so cold I thought I lived on an iceberg, I needed to find something that would be warm and ready when I walked in the door. Insert CrockPot!

While recipes are only guidelines, I used the Backroads Ham and Potato Casserole as a template and made my alterations.

4 potatoes, cut into 1-inch cubes
1 package cubed ham
1/2 sweet onion, diced
1 can cream of chicken soup
8 oz cream cheese, softened
1 bunch of green onions, chopped

Put the potatoes in the CrockPot first, then the onions, then the ham. Spread the cream of chicken soup on top of everything and cook on high for 3 to 5 hours. When the potatoes are done, add the cream cheese and onions, stir to mix and wait for the cream cheese to melt (about 5 minutes). Wah-lah! For added flavor, I put in some bacon bits which permeated throughout the casserole.

Delish!

I have had little time for the internet as of late. Glad I found your blog and ideas from your recipe box. I like collecting slow cooker ideas. CJ

About Me
I'm a look cook. If the ingredient looks about the right quantity, I cook it. Unless I am baking, the recipe is only a suggestion.
My favorite things to cook
Meat and vegetables (but don't ask me to eat the vegetables). After watching Julie and Julia I fell in love with cooking with wine. My kids ask me to fix Julia's hamburgers with a tarragon wine sauce -- that's my absolute favorite, too!
My favorite family cooking traditions
Saturday and Sunday I cook all day. The rest of the week gets leftovers or quick meals but the fancy things are on the weekend when I'm not working and have more time to experiment. I will make food for the troops even when there are only three of us at home for the night.
My cooking triumphs
My best feat is making yummy food for the family get together and have people ask for the recipe.
My cooking tragedies
Curry and tofu. I don't even want to remember the two nights in the past 11 years of marriage that my husband was disgusted with the food I made. Statistically, he said I have a good average.
