Sometimes its the easiest recipes that are the most tasty! Potatoes, ham, and a CrockPot means less time cooking and more time for...homework.
A couple of weeks ago I bought the Betty Crocker CrockPot recipe book and began perusing the recipes. I work full-time, go to school full-time, and every once in a while play Endless Ocean on the Wii (very relaxing!). With the temperature being so cold
I thought I lived on an iceberg, I needed to find something that would be warm and ready when I walked in the door. Insert CrockPot!
While recipes are only guidelines, I used the Backroads Ham and Potato Casserole as a template and made my alterations.
4 potatoes, cut into 1-inch cubes
1 package cubed ham
1/2 sweet onion, diced
1 can cream of chicken soup
8 oz cream cheese, softened
1 bunch of green onions, chopped
Put the potatoes in the CrockPot first, then the onions, then the ham. Spread the cream of chicken soup on top of everything and cook on high for 3 to 5 hours. When the potatoes are done, add the cream cheese and onions, stir to mix and wait for the cream
cheese to melt (about 5 minutes). Wah-lah! For added flavor, I put in some bacon bits which permeated throughout the casserole.
