Make-Ahead Mashed Potatoes

I made this the night before Thanksgiving and used russet potatoes instead of Yukon Gold. Otherwise, I made it exactly as described. I hesitated a bit because some people felt the sour cream was overwhelming and I had never made mashed potatoes with cream cheese and no milk. Also, though I like fluffy mashed potatoes, some people had felt they were much too stiff. I decided to I could always add milk before serving so I followed the recipe. Yes, the next morning, the sour cream taste was a bit overwhelming and they seemed too stiff but I decided to give it a chance and I was glad I did. After two hours on low in the crockpot. I checked them. I gave them a good stir and took a taste. Yes, they were a bit less "stiff" and the sour cream taste had mellowed quite a bit. Noting the condensation on the lid, I decided to just give them a good stir about every 30 minutes of the remaining time and sure enough, when the four hours was up, they were absolutely perfect! I had 13 people and these were devoured and raved about by everyone. Sometimes you simply have to uh... trust the directions and follow them exactly. I'm glad I did for if I would have cooked it for a shorter time or added more liquid, it would have been a mess I'm afraid.

Cheeseburger Soup I

This was a very good soup for a cold and wet Minnesota day. I did double the ground beef and increased the carrots and celery just a bit. I also added some salt to the ground beef before browning it. I sliced the potatoes in my food processor rather than cube them. I also shredded the sharp cheddar cheese as well. One thing I did do was add the cheese and sour cream to the milk mixture once it was smooth and I took it off the heat. The cheese melted beautifully almost immediately and then I mixed in the sour cream. The sauce turned out smooth and creamy. I then added the mixture to the simmering soup.

Best Baked French Fries

This is how I have made fries for a number of years, however I have never used sugar. If you like them your fries really crispy, use the sugar but if you like them softer (like I do), leaving out the sugar is fine.

Grandma VanDoren's White Bread

I made one loaf of this recipe and one loaf from the recipe I usually use from this site. The loaf from my usual recipe rose nicely and came out perfect. This bread did not rice nicely at all and though my husband thought it tasted okay, I did not care for it. It also took an hour longer than my usual recipe so I think I will stick with what has worked well for me.

One Bowl Chocolate Cake I

I made this up yesterday to serve at a birthday party today and it was absolutely wonderful. Yes, the batter will get very runny once you add the boiling water to it but that is how it is supposed to be. It turned out very nice and everyone raved about it. It's my new favorite chocolate cake recipe and was delicious with butter cream frosting.

Roast Sticky Chicken-Rotisserie Style

I love this recipe! I only do one chicken as there are only two of us. I make up a jar of the seasoning so I always have it on hand like one reviewer mentioned. I like to prep it the night before and then I put it in my electric roaster on Sunday morning. By the time we get home, it's ready to go.
