Mexican Potato Sausage Casserole

Excellent with some simple changes. Breakfast sausage works very well but make sure to drain it well. Instead of green peppers use 4 oz diced green chilis. Omit tomato from the top and serve with salsa on the side. Before pouring over the egg mixture press down on the potatoes to compact them. Use a mexican blend or sharp cheddar cheese on top. Make sure to use nonstick foil or when you remove it most of the cheese you wanted to brown will be on your foil.

Stuffed Leg of Lamb

Outstanding with some tweaking. To up the flavor I lightly wilted the baby spinach in some olive oil which had been heated with crushed garlic. I also toasted the pine nuts before putting them on. I used creole seasoning instead of the other seasoning around the roast but next time I might omit the flour crust entirely as it really didn't enhance the dish. Everyone enjoyed the flavors and no one said it was bland.

Old Fashioned Chicken Pot Pie

Cooking time waaaayyy off. Really needs to cook about 50 minutes so plan accordingly. Otherwise, my family really enjoyed. We tend to like spicier dishes so I used creole seasoning instead of the thyme, salt and pepper. Next time I would add more spices to it.
