Grilled Halibut with Cilantro Garlic Butter

I eat a lot of fish so I am always on the hunt for a good, simple recipe. This was a keeper, even my husband who isn't really a fish guy and hates cilantro (he calls it the soap plant) liked this one. I used Albacore fillets instead but would make it for just about any fish. I also always use more garlic than called for in any recipe.

Spinach and Feta Turkey Burgers

These burgers are great for being Turkey. My son is the pickiest eater and her really liked these we did not tell him they had spinach in them. We did serve them with Tzatziki Sauce II which was to die for. They had great flavor and being 300 calories or less you can't go wrong.

Florida Strawberry Muffins

I feel like I made these wrong... the batter prior to adding the strawberries was extremely thick. I verified correct measurements, but I used a mixer and the batter came out like bread dough. This seemed to translate to the texture of the muffins which were fairly dense and hardy. Good taste but I'll try another muffin recipie for my next batch.

Sweet and Sour Pork III

This was a great recipe. It was better than most sweet and sour I have had out at restraints and sure bets the stuff in the jar. I love using the cornstarch as a flouring agent, I will try this on other items to get that extra crunchy coating. Takes a little while to prepare but worth it. The only modification I made was to stir fry the peppers and onion and add to the sauce right before serving. I also did not mix the pork with the sauce as we like it really crispy.
