Bacon-y Bok Choy

I used turkey bacon, garlic powder and salt, onion powder and salt, and left out the onion because that is what I had on hand. I used regular bok choy and also added some chopped green sweet pepper and some paprika a for a bit of kick. I sauteed the sweet pepper and the bacon for about 5 mins, and then added the bok choy stalks. I covered the pan for 3-4 mins to soften the stalks and then I uncovered the pan and added the bok choy leaves. I stirred the mixture for about 8-10 mins to allow the leaves to cook down to my desired doneness and for some of the liquid to evaporate a bit. Turned out very tasty. Going to serve it over rice and baked pork chops.

Irish Soda Bread I

Took this out of the oven about an hour ago and already I have eaten a third of a loaf. This bread is moist, not too sweet and taste great. The only adjusments I made were to add an additional egg and half cup of milk. PERFECT!

Quick and Easy Alfredo Sauce

Made this today with a few changes. I added 1tbsp of minced garlic and some garlic salt. Used only 2 ozs of butter, 10 ozs of evaporated milk and about 2-3ozs of parmesan cheese.Like another reviewer I softened the cream cheese before using and slowly whisked everything together. This sauce came together very quickly, was smooth and just the right consistency. ***Delicious***

Best-Ever Chocolate Cake

Speedy Brownies

Made this today substituting apple sauce for the oil. Not sure if this is what caused it, but the texture was somewhat rubbery to my taste. Won't be making these again.

Shrimp with Mustard Sauce

I also made more sauce than called for, and added 1 tbsp. of honey to reduce the acidity of the mustard and the tomato.Served it over Zatarain's Caribbean Rice..Very,Very Good!!

Key West Chicken

I added an extra half teaspoon of lime juice to the marinade and marinated two whole chicken legs in it for 5 hours.I found that the flavour of the soy sauce overpowered the dish and the taste of lime was very mild. Next time I would probably double the amount of lime juice and decrease the soy sauce to about 2 tablespoons or less.

Citrus Garlic Shrimp

I omitted the lemon and orange peel, and used lemon juice from a bottle since I did not have any fresh lemons on hand. Did not miss the peel as the recipe was citrusy enough with out it. Next time I would reduce the olive oil to about 1/4 cup as there was leftover oil on plates after the meal. All in all this was a pretty good dish, very nice flavour.

Joel's Jerk Chicken Pineapple Pasta

Cranberry Pumpkin Muffins

This recipe was very good. I cut the amt of sugar to 1 3/4 cups and since I did not have pumpkin spice,used 2tbsps of cinnamon and 1tsp of nutmeg. I also used a 15oz can of pumpkin. The muffins were very moist but still too sweet for my liking although everyone else found it just right. Will definitely make again with even less sugar.

Honey Ginger Shrimp

I made it three times and on each occasion,made ajustments to some of the ingredients. It was good all the time. My favourite though was when I added 2tbsps of the red pepper flakes. This recipe has since been on my rotation menu..it is one of my favourites.
