Bacon-y Bok Choy
I used turkey bacon, garlic powder and salt, onion powder and salt, and left out the onion because that is what I had on hand. I used regular bok choy and also added some chopped green sweet pepper and some paprika a for a bit of kick. I sauteed the sweet pepper and the bacon for about 5 mins, and then added the bok choy stalks. I covered the pan for 3-4 mins to soften the stalks and then I uncovered the pan and added the bok choy leaves. I stirred the mixture for about 8-10 mins to allow the leaves to cook down to my desired doneness and for some of the liquid to evaporate a bit. Turned out very tasty. Going to serve it over rice and baked pork chops.

Irish Soda Bread I
Took this out of the oven about an hour ago and already I have eaten a third of a loaf. This bread is moist, not too sweet and taste great. The only adjusments I made were to add an additional egg and half cup of milk. PERFECT!

Quick and Easy Alfredo Sauce
Made this today with a few changes. I added 1tbsp of minced garlic and some garlic salt. Used only 2 ozs of butter, 10 ozs of evaporated milk and about 2-3ozs of parmesan cheese.Like another reviewer I softened the cream cheese before using and slowly whisked everything together. This sauce came together very quickly, was smooth and just the right consistency. ***Delicious***
