About this Cook
I am a married mother of two. I am also an RN in a cardiology office. I like to sew. I used to collect all these magazines and cook books for recipies that I might use, but now I have stopped because I find what I need here!
My favorite things to cook
I like to cook main dishes. I enjoy trying to make things healthier without scarificing taste. I tend to get more stressed when I try cookies or cakes.
My favorite family cooking traditions
I love the family gatherings we have at about every holiday. They are covered dish and usually a way of getting people to try new things. We have had to rethink some our our "traditional" dishes because of dietary needs, but it seems to work out ok.
My cooking triumphs
I consider anything my family requests a 2nd time a triumph, LOL.
My cooking tragedies
Hm........cookies, anytime I try to make them.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette
I doubled the dressing like one person suggested and it was a bit too much. The flavor was fantastic! My husband and I have just started a gluten-free diet, this was a great introduction to this amazing grain. Definitely a keeper.

Chocolate Cavity Maker Cake
I wish I could give this one 6 stars! This has to be the easiest and best cake I have ever made, and I have made some that took hours to make. I made the chocolate as described the 1st time. I did drizzle it with choc icing and decorated it with some mini choc chips. 2 days later, I made it again using French Vanilla cake mix, white choc pudding, white choc chips and used irish cream instead of the coffee liquer, and drizzled it with cream cheese icing sprinkled with white choc chips; it was even better. All the kids in my family love it. Thanks to others who suggested trying other flavors.
